welcome back to Savita everything guys today we're gonna make a brining experiment this brining work for Sufi I know it works for every other type of method of cooking but Sylvie I've never tested and we're gonna run that test let's do it to make a brine it's pretty simple all you need is a scale and a container and what you want to do is measure one percent of the water content and what I mean by that is if you put 4,000 grams of water your salt content should be 40 grams once the salt has been added to the water it is important to let it dissolve as much as possible before you add your protein talking about protein today I'm using this chicken I'm gonna show you how to take it apart I started off by finding the wishbone if you put your finger here you will fill it it's pretty straightforward to take it out just make an incision as you can see it here and with your fingers you are able to just pull it out just like that it is not a big deal since my wishbone broke you can do the same thing to the other side and there you have it I'm going to be using the same chicken so I can have accurate results and to split the chicken in half here's how I do it I started off with the breasts and just follow the bone line to make things easier I like to use a kitchen scissors and it's pretty straightforward everybody just comes out like nothing once the front is done I turn it around as you can see this part here is only fat and you know what this part is so I like to remove it and then I just follow the backbone and if you're using a kitchen scissor it cuts like nothing not a big deal once that's done I have to perfectly chicken halves now that I have both half chickens ready one will be in the brine for 24 hours and the other one is not I really want to find out if brining does anything at all for CV I'm curious to see if it's going to be any juicier than the other one after 24 hours I removed it from the brine and to keep this is an easy phone I'm only seasoning with googas rub nothing else [Music] [Music] to have a nice crispy skin with Suvi I always like to baste it with butter and my basting brother is pretty simple I use one stick of butter 1 tablespoon of garlic paste and another one of googas rub mix it well and my basting butter is done but now that I have both chickens half ready I am cooking both of them at a hundred and sixty-seven degrees Fahrenheit for three hours and we're gonna find out if there's a difference on brining or not [Music] we got our beautiful chickens ready it is time to eat are you ready for chicken mama mama is so excited let's do it hi guys as you can see here this is the one that was not brined and this was the one that was brined so from right now I don't know if it's coming through the camera this chicken here has lost more juice than this chicken here but the end result is the taste let's do it we have our butter ready we have our beautiful chicken ready now I'm gonna give you a few tips on searing chicken with a torch now you compare it dry but you know when you're petting the chicken dry you're going to be removing a lot of the rub and you don't want to remove it too much so a very light petting on the chicken as you see you'll come out so you don't want to go too crazy on petting it really really hard of the enemy getting all your rub out but most importantly when you are searing some type of chicken or duck with the torch it is important that you do not go so hot at it because if you go so hot at it you're just going to burn it and it's gonna have a bitter taste the basting of the butter is extremely important if not you won't get a nice crispy skin you're just like a dry rubbery skin that it's not very good and if you are using any of these torch we have the flamethrower here we also have my second-favorite torch right here which is this home torch it will work just fine and obviously can't live without my searzall pretty much the best torch there is flamethrower is not considered a torch if you're wondering okay so what you want to do and you're going to see this very very fast nup right now is we want to torch it far away so that we get a nice even heat you got to close you were burned up the skin that's not what you want you want it to be nice golden-brown so you're going to be see that very shortly and at the same time we're going to be basting it every single time take a look at these chickens I know they don't look that good right now for watch this [Music] alright everybody we got our beautiful chickens ready I don't know if you came through the camera because it's kind of quick but what you want to do is put in the torch take it out put it in the torch take it out you give you a nice crispy skin but enough talking it's time good-looking breasts right here does it taste like chicken you look very excited bro for chicken yeah how's the juiciness it's really easy mm-hmm really tender spongy chicken breast very good my turn it is chicken I say is expected as chicken oh my you look pumped for chicken oh yeah I'm excited so excited can you can't contain myself whoo this is one of the better chickens that he D oh that's good it's not like crazy juicy or crazy flavorful but I'm like that's good Masek is bad he doesn't suck it is a shark it doesn't suck ready this or rabbit rabbit rabbit takes a lot of flavor inside yeah yeah are you ready for the second one yeah all right let's go first it's nice different this one is different okay this is different thing here go friend my friend bought it on this baby they both have butter same thing same thing no difference for you whatsoever on juiciness and juiciness the second one is a little bit more you see is it is it so more juicy that you can tell the difference or you have to really pay attention you have to pay attention you have to pay attention mmm alright my train it's good this chicken let me it's chicken we're not doing an experiment here of an amazing taste so we're trying to fill that out if it's juice in there if it's juice in there if it's juicier if it's worth doing what I actually did which you don't know what it is yeah I'm the same as ninja I really cannot tell the difference it's very similar to each other if this one is a little bit juicier there's not that much difference it's a good chicken but it's chicken chicken in a brine solution that is supposedly to give you a little more juiciness on your chicken why are you looking that way always your brine of this thing man come on man well guys that's the experiment
