there are two questions that I hear more than any others from Texans the first Bob we're in Texas can I get the best chicken-fried steak and the second is who makes the best barbecue now I've done my best to steer clear of those answers because the way I see it it's all a matter of well taste but our friends over at Texas Monthly Magazine recently proclaimed snows barbecue in Lexington Texas to be the Lone Star best so naturally I had to sample for myself it was on a Saturday morning when I dropped by snows kind of empty for the best barbecue in the span Saturday because that's a the only time snows is open oh and get there early I heard so while the Morning Sun was still drying the dew on the ground I stopped by for the best in true Texas cuisine this era can we help you yes sir how about some brisket pork ribs maybe see chicken I want it all [ __ ] in the morning good stuff goes bad [Music] you heard right at 10 o'clock and after only a couple of hours of business snows is sold out brisket sausage chicken pork and ribs it seems folks come from across the country and around the world to try what is said to be the state's best it's something that has left owner Carey Bexley scratching his head I think barbecue is barbecue there's something a little different that stands out I guess but that would be one of them I don't think I would drive to Dallas for barbecue I mean the people that drove from everywhere I've had a guy visit on second trip from Hong Kong I mean he actually swears up and down he come back for this barbecue from Hong Kong and you don't get it you don't want to I can't understand it there's really no secrets to nothing we do well truth is that's not necessarily so but to find the secret you have to travel down the road apiece to getting's Texas to the getting's middle school where we found Tutsi Tommen as the school custodian the hardest working woman we know I'm the head custodian I take on all the floor work the lights the tiles of lockers the commodes the you name it grounds outside if we have any trash I'm out there picking that up I help the ladies in the kitchen get rid of their boxes I use a lot of common sense horse since there's always a way to straighten something out now what you might ask does this tough-as-nails 73 year old self-proclaimed country gal have to do with the purported desk barbecue in the state well pretty much everything Friday nights are very short for me if I go to bed at 9 o'clock 11 o'clock 11:30 I'm awake thinking it will the alarm go off will we get there on time how much meat is it has a bullet gonna burn what's our situation today my parents were farmers and all we knew was work my children fight often tell me I'm a workaholic which I guess I am because I've got three jobs that I keep going work don't killed anybody on Saturday mornings long before customers the Sun or television program hosts show up at snows Tootsie tama Nez is hard at work you see Tootsie is the pitmaster it's Mo's barbecue and she puts her 40-plus years of barbecue expertise to work every Saturday morning just after midnight this was I was asleep I started to call you she's the secret weapon that makes snow's barbecue something special you have to learn how the pit works how it heats how much wood to put it on how to cut back and now I would have never thought that a barbecue pit was such a technical thing or that you would have to have a preference of this pit over that pit well they're not all the same I don't know they're made out of heavy iron different things in 20 years that I had cooked on that that I like this or I like that about it and you say you don't have a secret yet right there well that's no secret that's just what you a preference you have and you realize that Joe Blow out there never thinks about things like that they just they just throw some you throw something on fire Pia well that's true when the word got out fit miss Tootsie was gonna be back in the barbecue business yes it started off pretty well with a bang race is there any more pork order appeal so we're out of pork brisket sausage chicken pork and ribs in all more than a thousand pounds of meat is slow-cooked to perfection by a lady who really can't explain what she does she just does it to me barbecue is barbecue and someone said well it's either good barbecue or it's bad barbecue like you had some bad barbecue I guess I have I've never complained about anybody's because I know it's a lot of work went into it and if I end up with a tough piece well it was either the cows fault or somebody else besides the cook because a cook can mess up a piece of meat is true there's always something to learn and learn something new there really is a secret to cooking good barbecue then right I guess so I mean I just cook it [Music] good barbecue doesn't just happen it's carefully cooked by someone with experience someone who knows their way around the pit it's an unlikely pairing this full-time custodian from the middle school and a restaurateur who only opens his doors on Saturday and just can't understand what all the fuss is about but Kari Bexley and Bootsie Tama Nez have picked up something special at snows BBQ in Lexington tootsie has even become somewhat of a celebrity but when the final cut of brisket gets served up and the pits are cleaned and the doors are shut for another week tootsie goes back to her duty of just being Tootsie the hard-working custodian at getting's middle school I'm just Tootsie I'm just no picture yes teacher [Music] [Music] you
