look what I got that's right wasn't sure what to smoke neck and I've always wanted to smoke bacon so this is a big huge piece of pork belly and we're going to smoke well we're really going to cure this first I was going to be lazy and just smoke the pork belly but no we're gonna do it right it's going to take a long time if you think about seven to ten days so we're gonna have to get this started right now now I don't know if you remember the show a year year and a half ago when I cured bacon I did it in a wet blind with curing salt okay this is the key to curing its curing salt this is pink salt I got it from my butcher you can get it from a butcher shop be especially ordered on Amazon you got to get the pink salt kind okay so I got a pack in a pink salt recipes down below for this cure today thanks to my friends over at G meats and Moore who provided me well they didn't provide me I paid for this but gave me a beautiful especially ordered this for me cut of pork belly and so that's my new shop I'm going to I there's one beautiful butcher shop G meat some more thanks you guys for this recipe idea they said to do a dry then they prefer doing a dry cure so I'm going to do a dry rub cure just with a little bit of liquid involved but basically it's kind of a dry you're going to coat it in and rub it in so let's get together with the recipe let me show you what we got here we've got the sugar we've got kosher salt we then we've got the pink salt which is different this does the curing okay this does the flavoring got some maple syrup some ground cayenne pepper for a little bit of heat crush black pepper and this is the secret key ingredient that I'm putting in some people put bourbon in but I'm a big fan of flavoring things when I cook with this the Jack Daniels Tennessee honey whiskey I'm doubling the recipe that's down below in this video so this just realize this is probably more than you will need if you do this recipe okay so we start off with sugar then we do our maple syrup Tennessee honey Jack whiskey there we go then we're going to do I'm using kosher salt any coarse salt to do ground cayenne pepper then we're going to do our curing salt then we're going to mix this all together it's all mixed I know what you're asking where is my black pepper put that at the end get that mixed into alright so the first thing I want to do is grab some of this get it rubbed in real good just going to take a paring knife and score the fat side sort of penetrates better and take a little bit more and it rubbed into the little cracks there all right I covered my whole Island here with this plastic press and seal you can use regular plastic wrap whatever you want this stuff's a little sticky so I'm going to lay the meat on it let's pick this up right now and lay it right in the middle there we go then I'm gonna take the rest of my rub and just place it on there okay so let's wrap this up right now okay all nice and tight I'm going to lay this flat in the fridge I'm going to check it every day rub it move the juices around the form to keep the cure going okay and put a towel underneath this in the fridge in case juices leak out of the plastic you're gonna be okay all right before I bring the bacon out because it's been curing for seven days I want to talk to you about something that arrived in the mail I got a sample of the iDevices kitchen thermometer and let me show you what exactly this is I'm really excited about this I knew there were devices like this I just didn't know it was called AI devices so look at this and that's what it looks like right there they have one for the grill it's a little bit more money but guess what this has two thermometers and I think the grill has four probes I only need this one so you don't have to use the barbecue one but if you want to get barbecue one you can let's open this up see we got here's a little welcome to the kitchen thermometer Oh like I'm awesome that looks here's the best part check this out magnetic back here so I can just take it and go clink and stick it right to the side of my smoker here's your two probes they communicate to this to tell you when your chicken is a certain temperature or your brisket or whatever you're cooking or your bacon is ready and then this communicates to my smartphone right there so I have the app on my phone it's going to tell me I'm going to tell get it all set up and tell it what temperature I wanted to be at it's going to call me or ring me or Buzz me or whatever it does I have no idea yet but lets get this all set up so I can get the bacon out here oh I think we have some bacon going on here feels firm there we go that's what it looks like okay so go through your checkpoints all right I already got the little drip little drip pail coated with foil I already got my drip pan covered in in foil the grill is the grill it's all good and then your pellets I vacuumed this out with the bucket head got rid of the mesquite I'm going to fill it right now with the maple you can always check it for more and later I filled it about half way I'm only going to 150 I'm not doing like 195 bacon smokes after it's been cured till 150 degrees so I'm not going to need a full one of my hoppers okay okay so let's see if this is real metal oh yeah that's real metal look at that look at the iDevice pink sticks they're there you can put it here you can put the iDevice anywhere you want right there get my probe get in the thickest part of the bacon there we go bring that down let's fire it up okay we'll just cook a lot quicker than I thought went a little over I'm about 158 right now ready here we go oh my goodness oh my goodness that looks great look at that I'm almost I'm almost surprised slide this under now we're gonna flip it I'm gonna flip this show you what it looks like hold on a minute ah look at that can you see that that beautiful that's gorgeous let's bring it inside let's not waste another minute okay there it is maple smoked bacon and I'm not done maple in it so give me a second here all right so I'm going to take a little bit of maple syrup real maple syrup there we go I'm going to put a little crack black pepper in it and just a drop a some cayenne pepper maybe a little bit maybe two drops there we go I'm going to mix it up there we go sweet and spicy and I'm going to brush this up right now spread it all around and just let the heat do its thing now while this is resting I just want to thank iDevices for giving me this great device that alerts me via my smart phone I have only one probe I used today but it comes with two probes check them out I devices look them up on the internet and see they also have one for specifically for grilling okay I'm just going to slice just a little sliver right off the end and then one more look at that smoke really nice Wow see that oh it's beautiful goodness I like my bacon crispy okay so I'm crisping up this one piece of bacon let me get that out put that piece right there look at that I browned it up nice you sit there okay so I crisped up and cook this piece of bacon right here it's still hot oh man my bad it's all gooey too from the who what am i doing I could smoke meat every Friday I may have one or two more smoking videos coming this season and then I'll be smoking a turkey for Thanksgiving that's right be looking for me on Jack in the ghost show I'm gonna hunt Turkey and I'm going hunting for the first time in my life I got a brand new gun and I'm gonna go hunt a turkey and bring it back here and cook it for Thanksgiving we're gonna smoke it in the meantime my mouth watering I got to try this mmm oh my god mmm oh wow so maple 8 oh my god all right if you have any ability to do this there's some of the best bacon I've ever put in my mouth and guys you know how much we love bacon women are bacon too they just don't go gaga like we do alright that's it there you go I'll see you on the next
