duck duck duck duck ducky lay a little egg for me a visit to our ducks is in order welcome to the Garden girls took in a few weeks ago Steve released them into the garden to Hoover up the Slugs the problem was they hoovered up the entire lettuce crop as well but since moving to their new home they've been egg laying for England and these wonderfully Rich eggs are just what I want for my dish thanks ducks there are some hungry Tums out there and I'm planning to fill them up with a flavor packed working brunch these lovely duck eggs are going to be the final flourish for that but underneath there's going to be all sorts of delicious things going on and the main flavors are coming from the fruits of the poly tunnel lovely tomatoes and glorious glossy Peppers it's a vegetable stew that just oozes Sunshine first my tomatoes a dunked in scalding water about six big ones should do for four people you can easily make this dish with tin Tomatoes but it's particularly lovely to be doing it with real ripe ones from the poly tunnel and after being in boiling water for just a minute it should be pretty easy to get the skins off the Flesh of the skinless Toms is roughly chopped when it comes to Peppers I've got these lovely sweet Romeros red ones yellow ones and orange ones but I've also got these poblanos and they pack a bit of a punch they've actually got some mild heat so what's it going to be I think um three Romeros and a poblano that should do me and maybe a little bell pepper as well look at that almost chocy you can smell that heat I'm slicing these Peppers fairly finely because I want them to cook down quickly into a rich Saucy stew as with so many dishes a couple of sliced onions sizzling in a frying pan gets the ball rolling and these have got a pinch of cumin too you can go all around the Mediterranean and you'll find all sorts of delicious recipes where onions tomatoes and peppers are being stewed together with various other things but this one is one of my absolute favorites it's North African it's called chauka once the onions are sweating nicely it's time to add a couple of cloves of finely chopped garlic and then get the peppers frying and then some more spice a couple of good pinches of saffron crumbled in which in many dishes is a really dominant flavor but in a spicy old thing like this it's just a subtle undercurrent cuz there's so much else going on and this is paprika not just any old paprika but smoked hot paprika and it's going to give real warmth to the [Music] dish now that all the spices are mingling and the peppers are starting to reduce and soften it's time to whack in the tomatoes this Tangy spicy combination bubbles for about 10 minutes and Kate and Ally will soon be at Boiling Point too I'm just going to give it a little taste to see how those seasonings are oh it's so sweet and warm m and I think absolutely ready to be topped off by those gorgeous duck eggs make little dimples in the sauce for each egg to pour snuggly into I don't want any broken yolks so I'm just taking the precaution of transferring into a little sorer then popping it in I've never made this dish with duck eggs before but I think they can only make it richer and even more delicious oh there's a bit of shell in there ow ow ow damn out you come there we do there we go disaster reverted time to season the eggs and pop the pan in a hot oven for about 10 minutes oh yes that's the moment this is one of those dishes that's really easy to put together but is actually quite theatrical and I want to get it out to the guys while those yolks are still just a little bit runny so it's all aboard for Hughes chauka chow chow oh look at that that is delicious oh so good isn't it that is brilliant with plenty of crusty bread or rice or couscous Chuka can be brunch lunch or a hearty supper so I know you've been working really hard today it's it's going to keep you going for the rest of the afternoon I reckon doubt I reckon [Music]
