[Music] hello there and welcome to the precious blood renewal center my name is lucia ferrara and i am going to make a fancy grilled cheese today so i know a lot of kids are going back to school and we want to make snacks and you know when they come home they're always starving and sometimes the old fashioned you know cheddar cheese grilled cheese gets a little old so we're gonna take a little new step into making a more sophisticated grilled cheese today so i call it my ricotta spinach grilled cheese and it uses several different cheeses so let me start by showing you what ingredients we need to make the sandwich you can also prep this ahead of time so when your kids come home all you have to do is grill it um but these are not only good things for snacks but it's a good maybe it's a makes a nice little meal with a bowl of soup on a nice cold day you know for for lunch or whatever so let me start by saying um or telling you the ingredients so what we have here is we're gonna have about a fourth of a cup of sliced cloves of garlic and what we're going to do with those is we're going to saute them until they're fragrant in some olive oil about a tablespoon or two of olive oil so we'll get to that in a minute then i've got about a cup um maybe a little bit more than a cup i don't really measure a whole lot but about a cup or so of frozen spinach okay and you want to make sure it's thawed now you can use regular spinach if you like like baby spinach or whatever and you're gonna have to though saute that with your garlic when you do that because you want it you don't want it to be real crunchy you know how when you put um spinach in a bowl or in a salad it's kind of just all fluffed in there you don't want that you want it to be chopped and small and very tenderized the next thing i have here is parmesan cheese you can use any cheese grated um really i have an italian twist to this so i use parmesan you can use any type of grated or shredded sheets okay but i i wanted to use parmesan today so i grated um one of my blocks of parmesan cheese so here here's that and that's probably about a half a cup okay and then my other cheese that i've got is the ricotta cheese and please do not replace the ricotta cheese with cottage cheese it doesn't have the same texture and it does not have the same taste so it's ricotta cheese and i have about a half a cup here okay so we're gonna have that then um i've got fresh mozzarella cheese which i went ahead and sliced so here's some fresh mozzarella cheese and i went ahead and sliced that and then i went to the deli and i got some slices of provolone okay so there's the provolone and last but not least you're going to need some softened butter because we're going to use that to spread on our sourdough bread and then we're going to warm it up into on the on our fryer okay so i i went ahead and sliced a loaf of sourdough bread i like its ch texture and the taste with all these cheeses and it really holds up well when we grill it okay so let's go ahead and begin our cooking of our spinach ricotta grilled cheese so as you can see the garlic is getting [Music] browned and it smells wonderful all right so we have our garlic here and i'm going to set this to the side to just kind of cool off a bit so what we're going to do next is we're going to put our thawed spinach in our bowl here okay and kind of get that like that and then we're going to put our parmesan grated cheese or whatever cheese you would like to have in your sandwich [Music] and then i'm going to put my ricotta cheese in here okay and then just to add a little spice to it you can put a little salt and pepper i'm going to use some italian seasoning so probably just about a teaspoon to a tablespoon depending on what your taste buds are okay so we are going oh and don't forget the garlic i almost did so we've got all this and this is going to be our spread so to speak and you see how that's all coming together so lovely i'm gonna put it on our bread oh it's it smells wonderful okay so i've got this this is our spread all right there we go so now i'm going to take my slices of bread aren't these beautiful slices so i'm going to spread my my mixture here on my bread you can be as generous as you like on your bread here and i don't know i like a nice thick bread or sandwich okay so there's that and then we're going to put our slices of provolone and then we're going to put our slices of the fresh mozzarella and voila so here's your sandwich now we're going to take it to the pan and we're going to grill it all right so we are back now i've buttered the one side of my sourdough bread and i'm going to flip it over onto the frying pan and on kind of low to medium heat and then i'm going to butter this side of my bread and don't worry about butter butter is good for you it's better than the margarine so go ahead and smother on the butter it gives it a wonderful taste and we're just gonna let this brown on one side for about four minutes and then i'm going to flip it well we are back now and i have got two beautiful paninis here so and what i also have is um is some sauce pasta sauce or spaghetti sauce or marinara sauce whatever you like whether it's homemade or store bought we just use this to dip our sandwiches with so it's kind of like when you have a regular old-fashioned grilled cheese sandwich and you're dipping it into your tomato soup well this is kind of the same concept and if you really want you like i said earlier you can make these and you know have it with a bowl of soup whether that's your tomato basil soup whether it's chicken noodle soup whether it's whatever soup you like so anyway i'm gonna slice these up and i think what i'm gonna do is go ahead and slice them in three and you can tell that the uh the cheese has melted so and that's what we want okay so so there you go it kind of all blends together okay so this is a great snack for kids when they come home it's a great snack or even a meal you know it's a meal and it's fairly inexpensive and it's great for college students too who are going off and you know they don't have much time to make a huge meal but um it's really great for them too because they can get it ready maybe the night before and then when they come home from one of their classes they can just stick it in the panini machine or like they did in the frying pan so it's really really great and simple and but before we dive in and taste i just want to say a little prayer for i think it's important as we um in the month of august and september when we send our kids off to school whether it be college or grade school middle school high school whatever school you're going to home school virtual school i think it's very important that we pray for god's protection over them and i found a prayer that i really thought was appropriate father satish joseph is the one that i owe credit to for this prayer and he titled it a prayer for educators parents and students all holy loving and compassionate god we thank you for your loving care of all creation in your protection and guidance overall we come to you today with all the faith and trust we can muster in this time please come to our aid we bring the administrators professors teachers school secretaries the support staff the maintenance staff of our schools and universities before you in their vocation as educators they continue the teaching ministry of christ we pray for your blessings over their lives their work their livelihood and their families guide them with your wisdom may they be empowered by your spirit to see the needs of their students and to inspire those under their care we bring our parents guardians caregivers of our students before you they are faced with unprecedented challenges they have to make decisions that require your wisdom understanding and insight when they feel overwhelmed be present in their lives may they never feel alone or abandoned strengthen them from within so that they might be a source of strength confidence and hope for their children most of all we bring you our students who will either be educated online at home or in person in our schools as they pursue their education in the midst of this world enlighten their minds may they grow in grace and wisdom in areas where there is a lack provide them knowledge understanding counsel and fortitude keep them safe from all illnesses and protect them from all harm we ask all these things through the intercession of our blessed mother mary and through christ our teacher amen i just love that prayer and i just i my heart and my prayers go out to all of our kids and all of our youth all over the world um so let's dig in i'm going to take one and i'm going to dip it in to the sauce it's really good guys you've got to try it i hope you enjoy it as much as i do now i'm going to call my friends over and we're going to eat so you do the same until next time
