let's make perfect crispy roast potatoes start this off by peeling 1.2 kilos or 2.6 pounds of high starch potatoes saving the peels from my previous video go check it out slice the potatoes in half half again then into quarters filled with cold water one inch above then place over a high heat give it a stir bring to a boil and cook for 9 minutes or until very soft pour 120 grams or 4.2 ounces of duck fat into a baking pan give it a swell then heat in a preheated oven set on 190c or 375f for 20 minutes carefully drain the potatoes through a colander place on a lid and gently shake them to rough them up and this is what is needed to achieve a nice crisp shell gently place the potatoes into the hot fat and spread them out please do not pour them all in at once this is very dangerous then place them into the oven and roast for one hour mixing every 15 minutes once that's achieved let's then remove these to leave us with the most incredible golden and crisp potatoes pour them into a mixing bowl bring along all of those crispy bits then season to taste and i'll be posting my rosemary salt recipe next give them a quick mix to season them all over then pour them into a serving bowl which is now ready to be used for christmas or really any day of the year
