My mother has a gluten intolerance and people like this are twice as annoying to her because now she feels like people think she is some self righteous fad dieter for not eating gluten

This is a very American trend. My mother owns a vacation rental in Germany. She has a lot of American guests. After one or two days, many American tourists (about 50%) ask what "gluten" means in German and how they can check if something is gluten free.

I looked it up because of this. Only about 0.5% get a bad stomach if they eat gluten.

What's even an acceptable answer to this? If someone memorizes that's it's a "protein composite" but has no clue what a protein composite is does that make them any better? Does someone need a graduate degree is biochem to satisfactorily answer this question?

To be honest, I saw this video, and I found its premise to be cringeworthy. Pretty much anyone in the population would stumble for other similar questions:

  • What is sugar?
  • What is cholesterol?
  • What is MSG?
  • What are transfats?

etc. etc.

Keep in mind I'm not defending gluten or its removal. I'm just saying that the question is stupid. People can even properly avoid substances (like white sugar) without knowing what it "is" (what does that even mean? Is this a metaphysics course?). A more proper question would be, "What does gluten do to you or others that makes you avoid it?".

Further, it's a bit unfair to criticize people on their ignorance when it comes to necessary decisions. The fact is, despite how much you research it, you have to eat food. You also have to go to work. The fact is you have to take in all of the reality around you, all that you know, and infer what is best for you. You have to judge how food interacts with you rather than using cruder population statistics (i.e. how it tends to interact with groups of people.). It'd be like criticizing someone for taking their best guess at the fastest and most enjoyable path to work, so they have to drive there - it doesn't mean they have studied the roads and all alternatives to transportation. In other words, they have to work. Similarly, they have to eat. People must make a decision. Stop blaming for it.
