hello everybody Bret banky here welcome back to the channel today we're smoking or seasoning a oklahoma joe BBQ slash smoker offset smoker grill that's the Highland series I believe I just picked it up and as you can see there's some coals kind of getting ready I've got the inside all down go ahead and later today we're gonna be making up some chicken on here so as we talk about the direction of the channel now that kayak fishing is pretty much done for me for the year we'll be doing more some more hunting videos as a season wraps up but then we're gonna be putting this smoker to use as well as some cast iron cooking us and wild game recipes and then hopefully a little bit of hiking and some overnights in the winter time so why this particular smoker one it was affordable I think I paid $2.99 for this smoker and I do love the taste of grill using charcoal briquettes and this does have the option of cooking directly charcoal briquettes down there like any other girl would it also has a small rack for in here so if I wanted to just make up a burger I could just make it up in here and not even cook up the whole thing but also as a smoker so the plan is to not have to spend the ridiculous amount of money that they charge for proper wood for smoking whether it's apple or cherry or Hickory or Mesquite as I can get my hands on some of that I'm going to and I actually have some cherry wood in back so that's gonna be nice but just let me get all warmed up in the smoke dope very thick construction sturdy heavy metal compared to others that we are looking at and very good reviews online with the smoker as well smoker grill cooker the only thing I've heard is that on this box may have paint peeling and that's the only negative I've ever seen on it and if that does happen we'll take care of it at the time not too worried about it there's a lot of modifications that can be done to this which I plan on doing some of them I'm sure as I research some more but this is uh excuse me all brand new just got it yesterday I could seal it off really good there and then you can see we're got more smoke leaks but I did hear that the door would be one of the main areas but the other plane is a little bit later here after we get it all seasoned up I'm gonna be putting on a couple whole chickens and grilling or smoking slowly smoking a couple of chickens and seeing how those come out just get a nice sturdy bracket and then another below which is where I've seen a lot of the other owners putting their wood it's on that bottom rack so yeah okay looking forward to this ditch the propane and on with a straight charcoal from here on out all right well I will check back in a little bit later everybody welcome back so it's been a while since we've started seasoning I was looking at how much time I had and I needed to get to cook in here so I could have an early lunch ready for my son before he takes off back to college so dialed everything back now were just kind of sitting right in the smoke zone smoke coming out of the stack here one of my favorite chicken rubs we've got some briquettes done with some charred Hickory a little smoked flavor going and I just got done putting on a couple of chickens so as it says if you are looking you ain't cooking we lost a little bit of temp there so we're gonna leave it sit and start slow cooking those turkey those chickens up everybody welcome back I've added a chunk of cherry wood to the smoke box and then definitely increase the smoking going on which is a good thing the temperature seems to be staying steady where it should be it we still got 10 and lots of time I also added alright flip the chickens we a little squash going on in here too so let's leave it smoked see what happens all right everybody just coming back out and checking on it just how we're looking so far looking great we're gonna be at about another hour I suspect I added a few more holes some more blocks get some more heat going to finish it up but again Desson we did two hours of break-in and it's been on for about two hours at the smoke level and actually kind of right between the smoke and the barbeque is where this hanging we're gonna try to finish it off on on the barbecue side for the last hour to get it all set up everybody take that piece of cherry what I had did the trick we're looking amazing I'm gonna go in and try it out narrate everybody I'm left on there there's a piece from the other one it is juicy juicy an incredible hole I'm gonna be taking this one off in a second - but amazing highly recommend very impressed with the quality Oklahoma Joe's you done didn't this good thanks everybody for watching see ya in the next video
