Today I will be preparing "chicken escabeche". However it is not going to be a traditional escabeche. It will be a little different and it will make this chicken extraordinary! It is also very easy to make. Okay, first thing... Pour just a little extra virgin olive oil in a pan. Flame on. Put the chicken in the pan to let it brown. Use chicken thighs and remove the skin if you want. I leave the skin on as I like it. Purely for this reason! It is not a requirement for the recipe. If you leave the skin on, let this brown first. Take all the time you need as the chicken has to brown well. It needs to brown really well. So we now have the time to take the vegetables and chop them without any rush. Carrots. Try to slice them this size. We do so in order to keep them quite firm through the cooking. We are not cooking them for too long however if you cut them too thin they will mush. I now slice the onion. This one too, not too thin. We just need to wait for the chicken to brown well. And this recipe is basically done! Easy, right? Don't you worry if some bits get stuck, ok? This is due to the kind of pan. I now deglaze the pan with some wine. I now add the vegetables right away. I add the garlic cloves too. At least 2 or 3, ok? In this case I add 6 of them. But these ones are not that big. I add 2 laurel leaves... And a few black peppercorns. On www.casapappagallo.it you can find this recipe with all the ingredients and the step-by-step cooking guide. Another ingredient: chili pepper. This one, though, is an optional ingredient. If you are not fond of spicy food don't add it. In this case it is a fresh chili pepper so it is slightly less hot. I am going to use half of it. We now leave these vegetables to soften for at least 10 minutes so they will absorb the wine while all the alcohol will evaporate. Once that is done we will move on. Once the liquid is all gone and once the wine has been completely absorbed... It took about 10 minutes in all. Time always depends on the heat as well as on the type of pan you are using... So use the liquid as a signal once has been absorbed or completely evaporated. Let's move on. I place the chicken back into the pan. I place it over the vegetables. And now, let's add in all the remaining ingredients. Vinegar. Cherry tomatoes. I use whole ones because I want to have a few whole ones on the plate. However, if you prefer, feel free to chop them up. Salt. Don't put too little salt, ok? A couple of rosemary sprigs. Don't add in too much otherwise it's flavour will be too strong. Powdered saffron. Using saffron stigmas for this recipe feels like wasting them... In this case it acts almost as a colouring agent. Now I cover everything with boiling water. Plain and simple boiling water. Put the lid on. At medim-low heat let it cook for at least half an hour. The... The chicken... use the meat as a signal. You will notice that the meat will come right off the bone and at that point our recipe is done. It will take at least 30 minutes. Okay... It's done. Do you recall what I said earlier? The meat is coming separating from the bone. At this point I can turn the flame off. And now let's put the chicken aside as you can eat this dish warm but it really shines if it gets eaten when it has cooled down. So take the chicken put them in a pot or in a large pan or in any container that enables them to be placed on the bottom so that they can be covered with liquid part. Perhaps, if I had a slightly larger pot it would have been better! Anyways... I have covered the bottom of this pot with the chicken and now I cover it up with the vegetables. Some of the cherry tomatoes are still in one piece as I wanted. Take everything! Don't leave anything behind! Obviously... You have to cover everything up with the liquid part. That's it. I put the lid on and leave it to cool down. You can leave it outside the fridge too. Well.. there is a couple... of carrots... ...some onion... I just give it a go. Mh. It tastes amazing! But... I will try it again when it cools down. I left it in the fridge for a little while however, this dish will be better tomorrow. Okay: it is cold, but the more you leave it, the better. Nonetheless I am going to try it again. Chicken... A few vegetables... Let's taste it! Let's taste it!... Some vegetables... Mmmhhh! It is something different from anything else. What I mean is it is extra-tasty. Eating cold chicken unless it's in a sandwich with lots of sauces... Done this way it's delicious moreover it keeps well for long. Trust me! Give it a go because it's fantastic! Mmmhhh! I eat it just for you... And I am happy to do it. :)  Aaarrrggghhh! O.o Oh no! I dropped a bit of carrot...
