you may want to wake up Grandma folks welcome to another episode of The Iron chicken so I think I think what we have here is the uncertainty principle running amok you see how long that breast is I'm so relieved but you trusted us enough to come here but but as you know we were hesitant yeah on this episode The Crew and I traveled to the heart of Pennsylvania Dutch Country to meet some chickens lots of chickens and a French entrepreneur who knows how to make them tasty I don't think that was an egg let's get started Jean Georges David Burke Danielle rotisserie Georgette what do these fancy New York restaurants have in common besides a bunch of first names that I may or may not be pronouncing correctly the answer a certain somebody named Arya Dogan a woman on a mission to bring back the great tasting chickens of a bygone era which leads us to Lancaster County Pennsylvania a place where chicken farming goes back in time yeah hello hey how are you how are you I'm good I'm Mike nice to meet you Mike hey Mike Mike as well how are you good how are you I'm great thanks great yes say it properly I did okay yeah in there though it's a fringe thing you're very French do you mind putting plastic boots yeah do you have any yeah it could be great I love plastic boots Mike is this your place this is this is one of my Farmers that I work with I work with several different farmers in the area okay and so these are our chickens yeah gotcha so these are your chickens and you're here to get their chickens this is funny very kind thank you this is for you oh thank you very much don't get too attached to it I I have great memories associated with that hat I just can't remember any of them right now what does this say it says yeah that's one of your Musketeers there yeah so hang on you get your chickens which everybody seems to love from just this one place or several no several place this is the one where we have our green circle which is a program where we pick up the vegetables from the restaurants bring them feed the chicken the vegetables and then feed the chickens to the restaurants so the restaurants that buy your chickens also provide you the vegetables the vegetables which you feed the chickens yes and then ultimately the chickens return and the outside real free range and then they have those vegetables right and it's perfectly you'll see it's perfectly good vegetable peeling so everybody's happy yeah yeah right so what are we gonna we're gonna feed them now let's feed them okay now I'll step over the fence and you can just hand them to me all right [Music] there is no door or gate we found that the roosters are smart enough to uh they are figure out boosters are smart also cocky yeah see what I did the rooster's cocky besides being skilled and polite laughter Mike also adds generations of his family's farming know-how so we have milk we need to put pieces of bread in the milk right and that makes a very nice very moist breast and let's put the vegetables in the trays so we laid out a lovely assortment of vegetables that have won over the best chefs in New York note my attention to presentation now we inspire a five-star feeding frenzy as the chickens tuck into their Sumptuous meal [Applause] thank you [Music] or maybe not what we have here is a production issue the idea was we take this really expensive food right from these really great restaurants and we put them into separate bins and then we and then we watch as the chickens go go completely crazy for it right and then and then we decide which one of the five-star restaurants uh has created the most delectable dish for the pulitz and the cockrells in question but the thing is they we're freaking them out a little bit with all of our cameras plus they they kind of eat all day long other stuff so so so the frenzy we anticipated is is going on right over there foreign as you can see some of them are are literally so excited by the prospect of dining on the five-star food that they fall asleep [Music] if you're set up there and we take these and put them a little closer in Orient them identically it's been said if you want to make God laugh tell them your plans call this plan B [Music] the only sensible thing to do when hungry chickens refuse to act like hungry chickens a completely different show good evening everyone and welcome to another episode of The Iron chicken [Music] I'm Mike Rowe fair warning tonight's program is going to be a barn burner feathers will fly why because four of the finest restaurants in New York City have come together for bragging rights who has the most delectable scraps in the barnyard is it rotisserie Georgette Danielle or David your guess is as good as mine but why guess when the Barnyard is packed with legitimate experts behind me dozens of happiness pullets and cockerels waiting for the moment when the question will be answered once and for all [Music] you may want to wake up Grandma folks this one is one for the books stand over here stay out of the way oh you can almost feel the tension building it's unbearable [Music] from the rotisserie delicious I got fennel come and get it um [Applause] hey no they're not moving it's not that the food isn't great it's just that chickens hate cameras who knew I think the entire study is somewhat flawed by our presence yes I mean really I mean let's face it no there was a German physicist Heisenberg wrote about the uncertainty principle okay which basically says the act of observing a thing fundamentally changes the thing yeah that's a good thought and so I think I think what we have here is the uncertainty principle running amok actually you know what you know what ending here and since this could be the beginning of the show or the end or something in the middle sooner or later it's inevitable I need to ask you questions like why do you care so Chris has run out of tape yeah okay but Taylor Taylor you're still running right okay good the reason why the name of my company is because he was a real guy he was a hero he had Panache and he did things for the right reasons you know yeah for the uh for his King his family his Queen he's Musketeers his country and he did things the right way without thinking what's in it for me and that's what I want to do in life so the name of your company is reflecting a kind of selfless commitment yes on behalf of a fictional character would create he's not the fictional does it really existence I was just making sure I say some things just to make sure you're listening to me sometimes so to sum up on our last remaining camera dartanion a real character written about by Alexander Dumas now the name of your company and the name that you chose because it uh imbues all that you find important is that a fair summation to live something in life that could be a little Legacy if with dartanyang we can make people eat a little better and think a little more about nutritionally what means better yeah I'm happy good throw you up just in time let's take a break just kidding now we're off to the Hatchery where ariane's finicky chickens are bred this happens to be on a farm run by people who literally have a religious commitment to farming with Integrity the Mennonites the Mennonites they're like the uh folks he wears yeah they are they're old school similar to Amish but different they actually use electricity which they almost don't and they use the internet too which I thought was interesting that's probably how we found them yeah probably the Mennonites are the whole reason Ariane raises her chickens out here she needs breeders and farmers who understand the old European traditions [Music] and when you see things like weather veins laundries swinging on the clotheslines and increased buggy traffic you get why this is the only place it could be done the salt of the earth nature of these Farmers is great for raising chickens Chris what are you shooting but Mennonites have a healthy suspicion of the TV business harkening back no doubt to that famous verse be wise as serpents and harmless as chickens or is it doves let's go with chickens okay so we're at the uh Farm getting ready to shoot going through the release process you know what you know is it's we got paperwork most people don't even read it this is what you have to sign you want to be on TV nowadays well this is a Mennonite farm and you know the owners read this and they said no I don't blame them so we went back and forth with the office for a while and eventually it's it's unprecedented but we now have releases uh from The Meta Knights handwritten super simple I Joel Martin agree to let micro film on my property as long as you did not disclose our address point is Joe Martin is the Mennonite whom Ariane trusts to breed her prized chickens and for the record guys like Joel they don't sign releases like ours because they believe their word ought to be good enough far as I'm concerned it is ready to go what variety are they their Heritage breed that's from France from France so the story really starts in France what I wanted to do is that chicken with that green charcoal is basically reproduce what my grandmother was doing at my father's restaurant all she was doing she was ticking and she was sorting out the vegetables and she would bring that to the chickens and those chickens were magnificent magnificent and some people here told me oh how Innovative this is incredible this is not this is my grandmother's and it's not even her ID it's everybody was doing that in France at that point the Mennonites might be old-fashioned but when it comes to technology it's not like they live in the Stone Age grab that machine up there place that over the eggs right there you go now put the eggs in the tray push a little button Bingo ingenious ingenious I have some Mennonite related questions okay what's the difference between Mennonite knowledge basically they've retained a lot of the old traditions such as driving horse and buggy versus uh driving a car yeah and the reason they do that is because they're trying to protect their Community retain the values right is it the same way as the Mennonite in the Mennonite but it's just that we have decided kind of drawing a line at a different place yeah but I mean regarding technology space the modern technology that we have the electricity that we're using here you will find as the Mennonite Community we're slow in embracing new technology and the reason we do that is we want to watch it and see how it affects society and how it affects us what about this what about my crew what about TV but you trusted us enough to come here but but as you know we were hesitant yeah we observe what's happening in in what you guys do sure for example the Amish Mafia let's talk about the Amish so so as a community we look at that and we see what they're doing and it's a farce it's a joke it's not real at all right so why bother trusting the likes of me and these guys that come over here and not turn you into the uh the Mennonite Mafia mafioso or something because somebody has to share about who we really are and share the truth right all right so really the only other thing to do is to go cook the birds but I'm still unclear where that happens is it on your property it happens in my home my kitchen my wife's kitchen she offered you her kitchen so this is this is huge you not only trust us in your place of business you're gonna let us in your home we are and we're going to prepare the chicken there in your kitchen we are honored to have you come into our home now I'm honored to be here we're not going to break any China we're going to be on our best behavior guys good deal feeling your best behavior please we do that Chris you promise I promise to be on my best behavior I know we're going to take a break during the break my crew will take a sacred vow be on their best behavior Dan you're not even coming in the house welcome back to somebody's got to do it or somebody is Ariane Dogan she's on a mission to breed a better chicken she's come all the way from the south of France to the middle of Pennsylvania Dutch Country the question is why listen carefully this is the point of the whole show how would you feel about walking with me across that Babbling Brook just over the bridge as you say some insightful and Unforgettable things okay you know I come from a family in gasconi Southwest France and I'm the Seventh Generation I'm the oldest and so I I wanted to show what I could do you know I wanted to show that I could do something in my life and when I started dhartanyang almost 30 years ago it was to provide the best best meat and poultry possible to the home Cooks as as with for the the four star chefs in America speaking of that would it be okay now to go to the kitchen where we can eat a couple of these adorable and cook them first we have to wait 75-80 days first yeah but in TV time it's going to happen in the next couple seconds all right step one compare a typical Supermarket chicken with one of Aryans I see a plumper version here I see a leaner version here you see how long that breast is and how round this one is you see how wet this guy is is that going to be tender yeah for sure but beyond tender is going to be really mushy is that French when I came to America and I tasted chicken here that mushiness I couldn't understand I really couldn't we don't have that in in Europe so I just want to do them very very simply so that you really take the difference so no garlic no herbs just salt and pepper very nice New York yeah yeah so I mean if you are are you doing more or less exactly what you want to do in this giant industry of food it's been 29 years at the beginning I was on the phone calling the customers on Monday then sweeping the floor but today we it's a different job altogether I do not sweep the floor anymore I have 170 employees today one seven zero yeah and we just opened a warehouse in Chicago we're opening one in Houston we mentioned four restaurants today earlier how many restaurants do you serve all together four thousand seriously yeah I had no idea you were such a yeah but not that chicken that chicken is very limited to seven restaurants how much more expensive is it this one say it's one dollar one dollar ten a pound right in the supermarket the mushy water this chicken the green circle in wholesale it is close to seven dollars a pound so that's that's much much yeah that's 700 yeah yeah at seven dollars a pound building a better chicken takes more than perseverance it takes a leap of faith people think what their dream is like all those born restaurants yeah and once they do it and they understand it's totally different than what they have you know they they the romance of it is way small in relation to the hard work of it and and they abandon yeah so you know there are a lot of people who love to cook but they're more people who love to eat there are a lot of people who like to make TV but they're more people who like to watch TV but it's good that there are people who like to watch TV otherwise they wouldn't be people to make TVs correct let's check it out let's check it out all right okay it's been in there for about an hour right about an hour this has got to be some chicken so I'm on a Mennonite Farm in the heart of Pennsylvania Dutch Country about to Embark upon a blind taste test to see if I can tell the difference between a couple of chickens Troy you ready I'll look wherever you want you know what I'm going to do everything to this one from now on it's but the time has come or at least we're close to the time possibly let's check it out let's check it out all right okay it's been in there for about an hour right about an hour this better be some chicken yeah I hope you will appreciate it's perfectly cooked all right are we ready to eat you're happy yeah I'm very happy if I'm not mistaken I believe we're about to embark on a taste test Ariana's gonna carve me off a piece of meat and then do the same thing I would expect to this mushy water sew tag over on the right and I'll taste them both and hopefully pick the right one blindfold the man we're good I I can't see anything okay but the time has come okay so first little piece of the breast oh it's hot I don't know if it's too hot okay it's too hot it's okay cool [Music] okay okay ready I'm ready unlike the recently canceled iron chicken this little competition could have actual consequences if I can't tell the difference between a supermarket bird and ariane's prized pullets well that would be embarrassing for me for Ariana and for the chicken that's a better chicken very good very very good I'm very proud it's not even close yeah it's not it's not even close there's so much more flavor in it no so relieved I'm really relieved honestly well thank you Lord for Mike and Ariana and just prayed you bless his food as we partake of it we thank you for it in the name of Jesus amen amen amen and we thank you Joel for allowing a bunch of TV people into your home and trusting us not to break the China well look before I invite the crew in I feel like I ought to say something wrap it up sort of way so seven generations from France 170 employees it looks like you're doing it so congratulations thank you thank you very much but where would France be without hospitality and the collaboration of the Mennonites and where would we be if not for the English out here buying all the stuff am I right absolutely clearly it takes a village to build a better chicken wish you were here one body many parts if you will each with a unique passion to satisfy Body and Soul in other words these premium birds will start in premium restaurants because somebody's got to step up and establish the market for a better Bird that's how you get a better Chicken in every pot ariane's birds are a lot like Teslas and solar panels in the very first HD TVs only tastier welcome back to the Columbus room it's good to see you you as well today's Chef has prepared for you a roulette of police which is a French heirloom chicken I see the chicken itself is served over a zucchini puree with heirloom summer squashes surprising zucchini blossoms and susiant and of course a buttermilk froth endlessly playful and the usual sir the usual is most unusual here at Lacroix I think you'll agree when you find yourself in the area Benjamin thanks so much please
