what's going on guys Rick here today we're in the beautiful and historic City of Memphis Tennessee home of the Memphis Grizzlies Elvis's Graceland and some of the best barbecue you will have in the entire United States today we're going to be going to three of the best barbecue restaurants here in Memphis to see just what makes Memphis Barbecue so unique let's [Music] go [Music] all right guys so we've arrived here at our very first location Central Barbecue here in Memphis and I'm I've heard that they have some absolutely incredible ribs and not only that but they have won several barbecue competitions for having well the best barbecue around so let's head on inside and see what they got going on all right guys we are in the back of Central's barbecue inside the kitchen yes this the kitchen this is the hotline over here we got the PE all right let's come over here to the corner and check out what they got going on we got the ribs and the wings as saido guys as soon as I walked in this room smells so intensely of hickory wood guys wow yes sir Hickory the wings we smoke about 4 and a half to 5 hours those have been there about four got another two three hours left on them wow wow so I would imagine if you like stand here for like a like maybe even 30 minutes you would just walk out of here just smelling whe my car smells like barbecue all right for sure and these ribs you said so how long is cooking these ribs for they're cooking about 4 to 6 hours those are the loin backs the only kind we use most people use baby bags so Lo backs and then this is this is uh pork yes all pork no wow and then I see right here that these are the chicken wings we soak them 24 hours in hot sauce and then we smoke them and once they're done smoking when you order we flash fry them toss them in the sauce and serve them up wow I mean it's they look so vibrantly red I can imagine that the flavor is probably very very I mean you said you marinate them for over 24 hours right yes sir 24 hours guys check it out it's rotating oh my goodness so why why why is it rotating like this uh it helps keep everything cooking even and rotating and keep the juices FL do you have the coal outside in the back or how how is this we don't even use Co it's strictly wood Flame want to go see that would be awesome yeah see wow nice and toasty oh my goodness yep nothing but wood in flames and little Ash and sweat wow wow so how how hot are these ovens what are we cooking these meats at we cooked them at 250 250 slow and Smokey slow and Smokey guys just the way we like it I think it's enough talking I think we should go inside and check out the food for ourselves have eat H got hungry I am hungry let's go inside [Music] guys so we have a beautiful assortment of dishes here from Central's barbecue look at this half rack of ribs right here half of it is dry the other half of it is wet right here we have an amazing huge sampler platter of basically everything that you can get here we're going to start with the ribs guys cuz honestly I've been eyeballing them and they look so good check it out cheers whoa it is so incredibly Smokey guys wow so soft so tender and that smoke really just punches you in the face the spices are all there it tastes kind of peppery sort of fiery a little bit of um little bit of a kick not too much though we're going to start with these hold pork nachos first they have pulled pork jalapeno and then some shredded up mixed cheese monterey jack and I guess cheddar check it out that P pork is so soft it almost kind of melts together with that cheese like it literally just instantly I didn't have to chew that at all P pork sandwich time my my teeth just kind of glide through it like butter the soft roll the soft meat Wing time wow look at look at that sheesh man that thing looks so beautifully coated so dusted every little square inch of this Wing is coated all right I'm going to go in with that flat piece first and that can really really taste the hot sauce in this chicken a nice dry robe on top got a good little got a good little kick to it it's got a nice Cayenne flavor in there too wow this is some really topnotch Wings pickle that just wraps up our experience here and all right guys we've arrived here at our second location revu's Charcoal Ribs it is supposed to have some of the most delicious ribs in the entire United States this is one of the most historic restaurants in all of Memphis it's been open since 1948 let's go on inside and check out what they got [Music] cooking [Music] all right guys so here we are right here in front of the um we're in front of our pits world famous pits are the run this is where the magic happens guys this is where the ribs are cooked the world famous Charcoal Ribs uh let's head on back there and see and see what we got going on I'll show you let's go check it out come on guys so what we do is we Tri we don't smoke them Char ribs so with our pits you have to be very intensive with man maning the fire the heat the product is all on the cook so there's no there's no smoke or rotisserie cooking itself you're setting the gauge at it when you cook at the run you rather really cook this is directly in the Heat and the best thing about this you're directly in the restaurant also and a lot of people when you eat our food you think we we just marinate them overnight we we Seas them we don't do anything the only thing we do is on the process from a frozen State we bring them down on the rack 6 in above the bar and we based them with pickle juice tting it with pickle juice guys so up there we have the they're just raw ribs raw ribs Frozen not even seasoned marinated salt on them nothing no salt Sal no no pepper this is just straight raw and he's hitting it with the pickle juice and no flavor in the Cho leader just regular Hard Wood Wow nothing to alter the flavor this is strictly rund this is a culture itself this is something no one can mimic because they assume we're doing something special that which is that's how you come to fire down they have water hole right here you have to be very Hands-On and tted how long does it take for these ribs to cook it takes an hour and a half and a half wow so you're hand cutting this hand cutting every slab that goes out wow which is a a large order is typically n 8 to nine bones and so this is the famous part about it this is the bason juice this is 50/50 this is vinegar and water wow okay so vinegar and water with the Renu seasoning and barbecue sauce oh my goodness oh and we're just drizzling that on top just basic wow and then you take this run the S and that is the Run V famous season the Rev Vu famous seasoning is that a dry rub it is this is dry rub R is considered a Creator dry rub Creator the creator of dry Road ribs not just dry R guys yeah this is where Memphis got his stands from dry Road rib from wow and you said how long when did he open this 1948 1948 is when uh Charles right Charles Virgo Charles Virgo started with a s sandwich shop in discover Co shoow thank you so much Robert for giving us a little bit of time of your day and showing us this am amazing process they have here at rendevu thank you appreciate it we're going to go on see what else is [Music] outside all right guys here we have in the world famous rendevu rib on top is you guys saw it's just that dry rub coating and on the bottom right there is that vinegar juice that he based it with in the last place that we went to there was a pink uh ring on the outside that's from smoking it but right here we don't have any of that cuz these are char broiled ribs that is so good that is so good the dry rub on top you know I'm not getting any any pickle flavor not pickle flavor at all but that vinegar oh my goodness and what is this oh this is this is more vinegar he came and he drizzled more of the house signature vinegar on top almost kind of rehydrated it not falling off the bone you're getting clean indentations every time look I'm going to go back another one man I can definitely taste the Greek inspiration little hints of oregano in there now it came with their signature house kosa as you guys can see it's yellow nice uh nice sharp mustard flavor in there I can taste the celery seeds in here they're giving it that good you know uh cold sta flavor but still the mustard oh really good it's kind of spicy actually it's kind of spicy but it's perfect company for those ribs right there they're house baked beans wow there Chicken in there oh wow it tastes like barbecue beans not very sweet the other kation was more sweet this one is a bit more Tangy Tangy barbecuey beans delicious guys oh man Rondevu all right guys well we absolutely tore up this food man we're full we're happy and we wrapped up this location let's on to the next one all right y'all we're out here at our third and final location Marlo's Ribbon Restaurant it has been here since 1974 it is a Memphis favorite a lot of people love it and you know who else Lov this place Elvis Presley guys this was one of Elvis's favorite restaurants to come and eat at so you know what if it was fit for the king it'll probably be fit for me let's go on inside and see what they got cooking [Music] all right guys we're here with Michael in the pig pit uh this is where the magic happens right oh yeah this is where all of our magic happens oh my goodness so what are we going to do right now what what do we have in front of us right here so right here I have some cherry wood we normally like I said earlier we try to keep our barbecue nice and sweet so we don't like to go after oak or mahogany or stuff like that the smoke is too harsh so we try to keep a sweet wood like cherry or apple or pecan things like that this is our burner right here this is where all of our wood goes into and uh like you said this where all the magic happens wow guys wow so we're burning that wood down uh for what so right now uh this uh what we're smoking right now is we have about 400 to 50 to 500 lbs of beef brisket right now and we're cooking it down to about 350 Dees for like I said earlier about 12 hours wow 400 to 500 lb you guys going to feed the whole village hey we try to we try to have enough food for a small army at all times so damn it sounds like it cuz that that is a good amount of meat yes sir awesome you want to check it out that would be awesome yeah all right wow oh my goodness oh wow instantly the room filled with that smell it's intoxicating isn't it oh my goodness it is this is my favorite part of the job I go home smelling like barbecue every day oh wow this is beautiful it's a wood and a meat smell guys wow this is awesome so 400 lb of brisket in there yes no that's our regular we try uh we smoke that much about every single time we will have this pit running in the summertime almost every single day wow and it's warm in here it's very hot oh no it definitely stays warm in here the pig pit man the pig pit this is this is a SAA room oh no if you stay in here long enough you you you'll lose a few pounds yeah I think I'm already shedding some right now but we're going to have to gain some of it back with these ribs oh I got you no problem I got you oh man this is awesome thank you so much for showing us the p no of course all right y'all enjoy I appreciate it let's goe on inside and let's go Gra on some of this delicious food all right let's [Music] go all right guys so my man Michael just brought out this beautiful beautiful assortment of different uh dishes that they have here at Marlo's let's start with the ribs oh my God that meat was so soft oh literally fall off the bone oh my goodness look at that beautiful chunk of meat right there wow it's so tender and So Soft it's Smoky but it's not it's not overwhelmingly Smokey it's not slap you in your face Smokey this is just kind of like the smoke was kind of just kissing this rib it was giving its Essence it was kind of giving a little perfume of that cherry in there it's so good the brisket basically kind of just disintegrates in your mouth wow all right we're going to go into this barbecue chicken cheers the chicken here at Marlo's that same flavor that I was getting from the ribs that kind of sweet kind of you know background flavor of smokiness that that rib has it's also here in this chicken very good and once again that that that barbecue sauce it's so good it it makes me feel at home the COA it's refreshing it's it's a nice way to wash down all that heavy meat that we just had you know in these green beans a little bit of the the trimmings that they have from the brisket itself if they have a little bit left over they'll actually throw it into these green beans to make it a little bit heartier a little bit beefier just give it a little bit more flavor so let's see wow it's it's kind of fatty it kind of just released it in here a little bit of that that um that brisket Essence in these green beans for sure can be tasted moving on to these mushrooms it's a hearty gravy it's very filling just the gravy itself it's thick and it has all of that mushroom flavor all right the beans cheers good sweet baked beans yeah they're just sweet baked beans this um you know not too much to say here but still super good this is real Memphis guys real Memphis Barbecue all right guys it has been a full and amazing day of exploring Memphis and trying some of the best barbecue that America has to offer I am full I am happy and I think that it's time to get up on out of here please comment down below what
