Hello! It's time to bake the annual gingerbread cookies. We use an old recipe that we have used for many years. it makes really tasty gingerbread! I start by measuring and mixing all the spices Cardamom, cinnamon, ginger and cloves The complete recipe is in the video description below! when that is done, I measure the sugar and water and then I'm grating the peel from one lemon I mix all the ingredients in a pan, together with *Swedish light syrup (* see video description) I let the pan slowly heat up while I weigh up the butter It only needs to get hot enough to let the butter melt The butter is melted and the mixture has cooled down a bit I pour everything in a large bowl and add bicarbonate soda which I mixed with some water earlier. Finally I add some brandy to the mix, and after that it is only a matter of adding wheat flour to the right consistency That's it! Now the dough needs to "rest" for a day or so before baking Wouldn't it be fun to make a couple of your own cookie cutters while we wait?? Sure, I need to try that! Back in the days cutters like this were made from tinplate, which nowadays is quite difficult to get hold of so instead I have got myself some strips of thin stainless steel instead It should work fine, only problem is that you can't solder them together as they used to be, you either have to weld, braze or use blind rivets! You will see what I choose to do later... Regarding baking time you would have to experiment a bit, but in our case, a little more than 3 minutes worked very well! Indeed they taste great!
