aloha everyone this is lenora hawaii's pickle lady today i have a special guest my daughter-in-law gigi again today she's going to make the lilikoi shortbread cheesecake so we'll get started here hi everyone so we're gonna first start off with butter so i got the butter at room temperature i'm gonna dump it in here so we're gonna smooth the butter approximately five minutes um just to smooth it out right now the butter is yellow so when you start smoothing it it turns white that's when you know it's kind of ready and when it looks smooth can you just use the butter if it just comes out of the fridge no you're going to have a very hard time mixing this so room temperature is always good if you don't have time with the room temperature you can just throw it in the microwave give it a good 20 seconds just to soften it but not melt it not melt it you want it to soften and a lot of people are watching they're not from hawaii or not familiar what is lilikoi lily corn is a passion fruit it has a nice tart to it you can make it as a juice by adding sugar and you can also you know a lot of people make it with lilly koi butter or as dessert or jellies or jellies as well yes so the really koi tree grows wild in the forest but nowadays you can hardly find it because everybody has overpicked it unfortunately so about halfway mixing what i'm going to do is stop the mixer and scrape everything here into the middle that way as i'm mixing it the second round here it'll catch everything okay so we're gonna mix it again we're about halfway done so give it a good two minutes okay so the butter turned white and it looks really creamy and fluffy i know that's uh where i can start adding things here so if you don't have this kitchenaid mixer you can just use a hand mixer or an electric mixer um it may take a little longer but just make sure that your butter is at room temperature so this makes it a little more easier because everything's you know you have the bowl and you can just put everything through so what we're going to do is just add on the sugar and if you don't have a hand mixer you can use a wire whisk but that'll take quite a while okay so the sugar's in we got the salt and we're gonna add vanilla extract okay so we got everything incorporated here and we're just gonna add the flour a little at a time so the reason why i'm adding just a little at a time is if you pour everything in all at once and start this mixer all your flour is just gonna fly off and make a big mess so now it's done mixing what i'm gonna do is put it in a 9 by 13 pan i did cover it with parchment paper so what we're going to do this is your bottom crust we're just going to pat it down and then bake it can you use wax paper no that'll burn parchment paper is what you're going to need to use and that's a good idea that you have the clips yeah i had to do that because it'll all fold over then i cut on the side so it doesn't catch and what we're going to do is just cut it down nara suggested that i use this glass to roll it out evenly and that's working pretty good just make sure all the corners got every uh the shortbread spatter here so i'm almost done smoothing this out so lennar if you could just take out the clips for me please yeah your hands are all nice and clean i'm gonna bake it at 325 for a good 15 to 20 minutes until the edges are golden brown okay so what we did is we took out the crust here and we cooled it down now we're gonna make the topping for this put two packages of cream cheese right in here we're gonna soften it up just for a few minutes okay there we go we're going to stop this and we're going to just clean up the mixer so it makes grabs everything here and soften every single piece of this cream cheese is kind of sticky once it softens up it's a little easier to handle but right now it's just a little tough how does it look lanara looks good now this kitchenaid is a really good investment uh for especially if you want to look for a good wedding gift a lifetime gift or any kind of gift for young people starting out this is really good this is a six quart mixer so it's it's really holds a lot i i really love this it comes in handy yeah and it matches your blouse and we love red lenora and i so this is what we're looking for now what we're going to do is just add the sugar and we're going to also add vanilla okay so now what we're going to do is lower the mixer here and we're going to add our whip topping here whipped cream you can also use well you can use cool whip or make your own whipped cream but this is what it looks like the consistency this is an eight ounce container and you can freeze the before you use it and it falls out very quickly and you said what they can use whipping cream too you can use whipping cream as well but you'd have to whip the cream first but for whipping cream don't use the stuff in the can because it has a lot of water and it won't keep its consistency oh it looks good okay so now we're going to lift this back up and we're going to put this on low because normally you would uh fold it in but with this particular mixer we can just put it on low again if you don't have a hand if you don't have a mixer like this you can use a hand mixer or a whisk okay so we're going to clean up the bowl here on the edges and mix it up one more time you can see it's not mixed because some of it is yellow and some of it is white so i'm gonna get it all together and make it one color so it's thoroughly mixed can you smell it yes and plus this you know when this crust was baking smells really good yeah the butter and sugar shortbread cookie yeah oh this looks really good lenora so this is what we're looking for nice and fluffy here we go so let's go ahead and take this on and we can just pour it on that good to lick if the kids were around they'd want to lick this spoon i'm a kid so i get to lick this okay go ahead you can take care of all that see look how nice and airy and fluffy it looks so after this we're going to cool it off chill it in the refrigerator and then we'll make the topping so there's really three steps of this of just making the shortbread crust the filling and the topping which is lilikoi and i also made it with guava as a topping so this is just your basic and whatever topping you want you can go ahead and top it with looks like you're spreading frosting [Music] and this you can just chill in your fridge uncovered for an hour and from there once you're done with your topping cool the topping off and then you can just put everything together the cream cheese is what will cause it to firm up and then you can put your fruit topping on it it's kind of difficult to guess if it's really even so when you cut it you will see how even you you spread it so we're now going to make the topping with lilikoi and this is what we're using the goya lilikoi concentrate so what i've done was i've mixed one cup of the concentrate and three cups of water bring it to a boil then we're going to add our sugar if you could just add the sugar lenara and then what we're going to do is just stir constantly so what we've done was we've skimmed off all the scummy part so we got this boiling now what we're going to do is mix our cornstarch in water so i have 1 4 cup of cornstarch half a cup of water get a dissolved here and then what we're going to do is pour it in the um in the boiled wrapping lilikoi water here what live juice now if you have fresh lilikoi available which in hawaii you can get either at the market or a friend who grows it you can make your own lilikoi juice and you don't have to use this package right i know it also comes in the hawaiian sun brand the frozen section so if you use that you mix that concentrate with water and then from there you can just use two cups of lilikoi juice so this will thicken it up and this is the top of your dessert here so it's gonna become like a jelly consistency okay so we're again going to just continuously stir this and not let it burn on the bottom and once you get this cooled off menorah then we can top it okay good oh the color is so pretty and you can really smell this to me lilikoi is the king of juices of all the juices i like this the best right see now you can see the consistency here so what we did was we boiled the lilikoi and once it started thickening up we cooled it off completely if you want to speed up the process of cooling the syrup up you can just put it in the refrigerator and once it is cooled off what we do is pour it over the crust and the cream cheese then i'll put it back in the refrigerator and cool it down for a good hour to two hours and then from there you can just serve it so it looks very firm you you know sometimes when people make this it's all jiggly so this one stays really good yeah you can also um prepare it by and putting it in cupcake holders and take it to work or to a potluck people will enjoy this so you want to try it now we can go ahead and take a look at this here we go cheers cheers [Music] the filling is just right and it's better than lemon bars this is this is really special lilikoi so i'm so glad that the mexican stores we can buy it frozen right so i can get it any time we want really tastes like lilikoi yeah just offsetting it with the crust is you have the sweet and the tart together with the filling here so the crust here is kind of like a cookie but if you want to want to undercook it to give it a little soft touch to it you can under cook it a little how long did you cook this so this was cooked for about 25 to 30 minutes you can under cook it but i know on the second day if this is not gone the crust will be a little softened probably from all the moisture so it is very delicious or you can just pick it up with your hand and eat it and a lot of people would like that yeah especially when you just take it to work or to your parties and put it in a cupcake holder it holds very well [Music] it's a dual kind of thing it's like eating a cookie and then the topping on top is really nice usually i don't eat too much desserts but i have to finish this one it's so good it's so good i need my dog absolutely all this dry coffee yeah but unfortunately she's she can't have any just us so lenora besides making this with just the lilikoi juice here you can also use guava that's another that's really good another popular dessert lilikoi in guava or you can have it both make it look pretty can you use berries yes absolutely that'd be really delicious so whatever topping i mean the crust and the cream cream cheese filling is the same it's just whatever topping you want um you just go ahead and be creative on that that's really good you'll spoil
