dude, gospel music is gnarly. This song uses the standard I, IV, V, but they throw in the vii and switch keys more than once. Without really studying it (haven't listened to GP in a minute), this song is in the key of F but also plays in the key of B flat... the bass player is going bonkers and I feel like that's what you're listening to -- that shit is going to be hard to replicate cuz that dude is a monster.
Long story long, writing and playing gospel style music is hard af. I feel like I can speak on it cuz I played it way back when but I was a guitar player so I just followed the bass and drums and didn't do shit. Let the piano guy do his thing.
You can still do mad crazy progressions with just the normal I, IV, V format. Using 7ths and stuff can make it sound fancier and "bluesier," which - when used with a higher tempo - gives that gospel vibe... Hope this helps.
A longer but more convenient (eventually) approach is to learn piano and theory and pick it out yourself. I'm working up to this. Another person mentioned a technological solution which I'm sure works fine as well, but doesn't work your brain cells as much :)
On the instrumental? If you're trying to do the same exact chords, take the audio, download it through keepvid. Then use a vocal remover plug in. Then take the vocaless instrumental and run it in melodyne. Figure out the tempo using tap inyour sequencer then write the same melody in piano roll that was laid out in melodyne.
