I just wanted to note here, -the production standards on this documentary are about as good as they get. It's brilliantly shot, and the room is perfectly mic'd to get amazingly good ambient b.g. sounds. Let alone the amazing subject matter. Someone put a lot of skill, money and know how into this.
There used to be a lady at Epcot that made these candies. It's absolutely mesmerizing to see in person. I could sit there all day and watch her.
Julia Child used to say that you could tell food was going to be good when it looked like someoneโs hands had been all over it.
At first I thought this might be a Toraya cafe but I didn't recall if they had a chef's counter like this so I did some searching using things I saw in the background and found that this is the Tsuruya Yoshinobu in Chuo, Tokyo.
How expensive are these?
Does this taste like fondant? They are so beautiful I wouldnโt want to eat.

They are very very sweet with very little other flavour. So beautiful to look at and watch being made.
If only they weren't so sweet and bland. Urgh. So much beauty. So little flavor.
