[Music] hello everyone i'm here inside the friary kitchen and i have a special guest to introduce you today she's a very important person in the friary this is our cook portia and as you can see it's through her food that we keep that we maintain our health and our strength and everything porsche cooks is absolutely delicious and so uh portia yeah it's good good to uh could you have it with us today our people would like to get to know you a little bit i know you you've worked at the at the friary since 2018 uh before that you were employed with the ewtn in the pilgrimage department for a number of years you've got a husband and four children and uh tell us a little bit about that i am a wife a mom of four boys all boys um my husband dominic is also an employee at eden yeah i grew up basically here in birmingham went to catholic schools all through high school and graduated from uab all right wow yeah that's great yeah yeah she's like an expert cook she's very gifted in her trade here and she cooks a little bit of everything for us you know sometimes we're eating asian food italian food you know american food mexican food indian food you know she she knows how to do it all and so portia what do you got for us today okay so today i chose to do marinated pork chops that i will marinated pork chops these are the chops right here yes that's just one bachelor that looks cool the marinade is it's an adaptation of what i i put together with another food blogger that i follow that i love her recipes right it's got a soy sauce worcestershire sauce dijon mustard yeah pepper a lot of garlic oh this is it right here yes so that will go into the the bag that will marinade for several hours it's okay you got the potatoes so now what are we gonna do okay so i'm cutting up the potatoes yeah kind of uniform okay and they're going to be seasoned with olive oil and some seasoning and i'll toss it together and then they'll roast in the oven for about 400. and then the same thing will go with with the red the vegetables broccoli and cauliflower today i'm going to [Music] just season it oh yeah look at that this helps it crisp up yeah and then i use an all-in-one seasoning so all in one season wow and then i'm going to just toss it around some and then they'll spread out in the oven so that they they roast evenly so i got to make sure everything is separated and coated with the olive oil so this will be ready i've just prepped it it's not going in just yet but but it's ready to get go in the in the oven to roast it should roast about 30 minutes okay so i'm going to put this aside all right you got the meats yes so there you go [Music] with the meat i gotta open up the bag can i open up the bag thank you i gotta help there you go yeah so there we go this is the marinade i mean that's the marinade just like i said with yeah so i can always leave it open like this so you can pour yes i'm going to pour it in and once i pour it in there we're going to get it then i close it up again and then i'm going to massage it a little massaged it yeah it's going to massage in here kind of coat all the meat coat it [Music] once it's all coated it'll marinade in the in the refrigerator for about three hours three hours all right yes should we just uh took the chops out of the refrigerator they've been marinating for about three hours yes and uh what are you gonna do now okay so the next step is i'm going to put them on the grill about four minutes on each side and and then at the very last i'll glaze them and then they'll be done all right show us how it's done [Music] i'm gonna do some glazing now okay just tell me if i'm doing it right you're doing it perfect all right look at that [Music] [Music] okay the smile's there um all right it's just yes smells delicious okay so let us pray now bless us o lord and these are gifts which are about to receive from thy bounty to christ our lord amen this is really tender portia thanks oh my gosh you know i'm tasting that garlic and the combination of the worcestershire sauce and you know the soy sauce in there and the brown sugar yeah it's a nice balance because nothing's overpowering each other you did it just right thank you oh season perfectly tasty olive oil the salt and pepper this is wonderful got some vegetables here i'm gonna try the cauliflower hmm a little broccoli it's wonderful i'm going to also prepare a little dessert a little dessert it's it's my mom's recipe it's pecan tarts okay pecan do you say pecan or pecan pecan pecan growing up i always thought it was a filipino dessert yeah apparently it's not the dough is a very simple dough it has flour uh cream cheese and you cream the butter and cream cheese first okay and then you add the flour and that's all that it is so it comes out like that you chill it in the fridge for a little bit for the filling it's brown sugar eggs vanilla and melted butter and then at the end you toss in uh pecans oh all right so this looks like this yes that's the thing look at that i feel like eating it like this i have a mini uh muffin pan a mini muffin that i put i put the dough in and i'm just shaping it into there once i i shape the the dough i just pour in a little bit not not too much to the top just three-fourths of the way of the filling so this is what i'll do and it'll go in the preheated oven at 350 and it just it just it bakes until it's a lightly golden brown color [Music] and so it'll stay in there i'm going to start out with 20 minutes we got one here [Music] yeah you got that cinnamon we got the caramel in there the pond everything comes together very well well fortunately this is a delicious meal the friars are really going to join tonight and we thank you for sharing your recipes with us
