How to Sear a Ribeye Steak on the Blackstone Griddle Like a Pro

you know what i've seen a lot of recently i've seen a lot of blackstone or griddle style grills that you guys are buying and using in the backyard and i love mine too it's perfect for like cheese steaks and fried rice and all kinds of different things that that you know that blackstone can put a pretty good flavor on anything that needs a sear that includes steaks a blackstone can put an amazing sear on a steak so today i'm going to show you how to cook a perfect steak on a flat top griddle specifically in my yard is going to be the blackstone it's hard to say what you have in your yard but i think blackstone is probably the most popular brand when it comes to these flat top griddles they're just they're very versatile they're definitely worth their money because they don't cost as much as you would think they do and perfect food let's go ahead and check it out [Music] [Music] the first step to a good steak is buying a good stake and right now that's actually insane how much money it cost uh to purchase all kinds of different stuff the butcher shop told me you know the the prices are fluctuating drastically every day but if you want or you need to have the perfect steak you got to spend that little extra money you know it's not maybe not the everyday steak but sometimes you just have to have the perfect steak and like i said it starts with buying a perfect steak this is a prime grade how heavy was this thing i don't even see [Music] one pound almost one pound rib eye beautiful okay so the next step is drying the steak off you want the outside of the steak to be nice and dry flip it to the other side and dry that side off and just kind of set it down kind of soak up all that juice seasoning for a steak should be simple salt pepper and just a little bit of garlic we're about half salt half pepper and just like i said a little bit of garlic powder what we're going to do is we're going to spray the outside of the steak with an olive oil and that's going to help cook that outside help that sear because a great steak is seriously all about the sear and that's what this black stone is gonna do it's you know like a big cast iron pan it's gonna help us get a perfect sear no rib eye like this you know that's over a knuckle deep so it it's about a one inch uh slice we're going to go ahead and season it really well give that a little pat flipper and do the other side nice and even next step is just letting it sit here right out on the counter just try to keep the flies off of it you know when a flies going after your food but you want it to come up to room temperature the reason we want it to come up to room temperature is so that it cooks evenly we don't want to have you know a cold spot in the middle here and then this cooks to you know well done to cook it that perfect uniform temperature that you want your steak at gotta make sure it's up to room temperature before you start the cooking process the great thing about the blackstone is you can do multiple zones on it so you can have the left side cool and the right side hot you know you can do almost anything you want on this one it's got four different burners so technically it has four different zones and what we're going to do is we're going to use one half as a hot zone and the other half as a cool zone and so just going to barely turn this knob and this knob on whereas i want these on high i am going to spray a little nonstick spray on the side that i'm going to sear on this right side [Music] don't need any on the left side because i'm not actually going to put the steak on the cast iron you can usually tell when the black stone is ready by that little bit of smoke but let's go ahead and and see exactly how warm it is for 4 30. over here we're down 360. so i want this i want this sear side to come up more than that and it's coming up pretty quick it's already at 485 490. about 540 i'm gonna turn it down just a little because i don't want to burn it i want that 550 i want to stay right about 550. this is what every steak should sound like as soon as it hits the griddle ready oh yeah and now we're just gonna let it cook for about a minute and a half and then we'll flip it and let it cook there for a minute and a half or you know until we see the sear that we're looking for and then i'm gonna put it over on the cooler zone for the cool zone i'm going to put this rack over here let's check that temperature again yeah it's warmer 350 540. minute half we're gonna go ahead and check it yeah i think i'm happy with that flip ah i might have flipped it a little early i think it looks good gordon ramsay says no color no flavor we're looking for that color so we have flavor a perfectly seared steak traps all the juice and flavor inside the steak and then you just get it up to temperature i like mine medium rare so i'm going up to about i'm going to do 125 to 130. everybody likes their temperatures different that's probably about it yeah i'm liking that guys yep i think i'm gonna go ahead and put it on the wire rack now we're on indirect we're on indirect at about 350 degrees so we're just gonna go ahead and let that finish like i said i'm gonna bring it up to about 125 to 130 right in that window and then we're going to take it off and let it rest for about 20 minutes letting your steak rest is one of the most important steps so
