today on my food fix I'm going to show you how to make red bean paste this is a really simple recipe so here are the ingredients so here I have some dried aduki red beans these are the type of beans that are traditionally used for Asian desserts and we want to pour out about 1 [Music] cup next we just want to rinse these red beans in some cold [Music] water then cover them in water and soak overnight the next day you'll see that the beans have absorbed some of this water and become a lighter color we just want to strain out this water these beans have had the chance to soften up a little and they've grown in size next we'll pour the beans into a pot cover them with water and then we'll boil these beans for about 5 minutes on high heat after they've come to a boil for 5 minutes we'll strain out this water this will remove any bitter [Music] flavor put the beans back into the pot again and fill it with water make sure that the water is about an inch above the beans so that it won't dry out during cooking again bring this to a boil and after it has come to a boil turn it down to low heat and let that simmer for about 1 to 2 hours to check if the beans are done just squeeze a bean between two fingers and if they're mushy then they're ready [Music] strain the beans but this time retain some of that water in a bowl in case you want to make a more runny paste then you can Mash your beans simply by using a fork or a potato masher or you can use a food processor like I'm doing [Music] here now return the red bean paste to the pot and add in about half a cup of sugar start with a little sugar at first and then you can add more to your desired sweetness on medium heat stir in the sugar to dissolve you'll notice that the paste becomes really runny because the sugar liquefies but it'll turn more solid when cooled so at this point you can use it like this in some desserts such as red bean porridge or you can ladle it over shaped ice or ice cream but I'm trying to make a more thicker paste so you can cook it down and evaporate some of that water I'm looking for a more thicker type of paste that's almost doughy and can be formed into a ball and this can be used in fillings such as for red bean buns or sticky rice dumplings and again be careful because this will become more solid as it cools down and here we have it a sweet red bean paste that can be used in all types of Asian desserts thanks for watching and remember to like comment and subscribe for more recipes
