This is the beginning of a video to prepare this project called Parfait, a homemade Parfait and we are going to do it step by step, so this first video will be about how how to make yogurt at home. So we are going to have this result, a homemade natural yogurt, we are going to make the yogurt yield a lot, in many parts the yogurt is super expensive and we are also going to do it in a much creamier way, in the style of Greek yogurt to be able to make the Parfait so I'm going to show you those two ways. To make yogurt at home we need two things: milk and ferment. The ferment you can buy it, the best way is to buy a probiotic ferment to make yogurt but in our case we are going to use a yogurt, it may sound illogical but I am going to explain to you. This yogurt contains all the bacteria we need for the milk to ferment and yogurt can also be produced. This yogurt is natural, without flavor, without sweeteners and please make sure it says in the ingredients that it contain live crops. The milk will be of whole quality, an organic milk preferably, the creamier the better, choose the ones that are in the refrigerators in the supermarkets and we will heat it until before it breaks boil, when you start to see the bubbles you turn it off and let it cool a little bit, in my case I had already let it cool down a bit and I'm going to count up to 10, in this case I couldn't resist but until 8, 8 seconds, 1 2 3 4 5 6 7 8, I removed my finger and what I do is let it cool down for another 2 to 4 minutes. I do the measurement again, it has to reach a temperature of about 46 degrees Celsius, if you have a thermometer please check it otherwise you should not count to 10, so that the little finger can resist up to 10, that is the ideal point to be able to integrate the yogurt. If you do not do this step, what can happen is that you can kill the bacteria present in the yogurt, because if it is very hot that is what happens, if it is very cold or neither does all this ferment and all these bacteria reproduce very well. So my hearts follow all these steps to the letter and another super important point, milk cannot be ultra-pasteurized, forget about it ultra- pasteurized milk doesn't work. Now that I have mixed the yogurt with the milk very well, I am going to transfer it to this container, you can even leave it in the pot, you cover it and you follow the same procedure or also in a glass container. Now, I cover my container very well and what we are going to do is to try to simulate what the yogurt maker does and it is to keep this temperature so that the bacteria can produce the yogurt so I am using a blanket that I have that is super hot, I recommend that you use a similar one and then once it is well covered everywhere what we are going to to do is to put a bag on it, all this is precisely to keep it warm. If you are in very cold weather, try to warm up a bit before, about three minutes or five minutes, the oven and then you turn it off and you introduce all this package with the yogurt, in this way we also preserve that hot part that we need or if not you are going to go to the very hot part of the kitchen and you are going to leave it there or near the heating, in short, be creative finally and you are going to leave it for 8 to 20 hours, depending on the weather, 20 hours if your weather is quite cold. Now I will tell you, the more hours you leave it, the more consistent your yogurt will be but also with higher acidity so that all these factors count when making yogurt. In my case I left 24 hours because the weather was very cold, I put it near the heater but if you are in hot weather, I repeat again the information, leave it there for a maximum of 10 hours and check it. Now look at the result, this way we have made homemade yogurt, very delicious, very easy, it has yielded a lot, in some countries to buy yogurt is super expensive so this option I hope it works for you, as can you see it yields, what I do is, with the spatula, to mix the thickest part with the more liquid part that sometimes is at the bottom and I am going to reserve a part of this yogurt like this without sweetening, a natural yogurt, look at the spectacular consistency, it is the sum of the quality of milk, of the quality of the yogurt and that is how it will be. Now I am going to reserve as I said about 600 milliliters approximately to make our Parfait and I am going to teach you how to make a flavored yogurt so that you can give it to the children, the flavors that you have at home, those you want, especially the strawberry one which I think is the nicest of all, I add about 150 milliliters of yogurt and about 100 grams of strawberry and I'm only going to sweeten it with stevia, please, if you're going to make yogurt at home do no sweeten it that much because it is useless, if that is the case then you buy those that already are sold, the idea of making yogurt at home is that you have a very healthy recipe, very nice and your children will love this strawberry yogurt, your husband and the whole family too. Now the part we are looking for, a more consistent yogurt, a Greek type. So to make Greek type yogurt, what we are going to do is to put a strainer in a container and on the strainer we are going to put a very clean washcloth, a towel that is only for cooking that you haven't used to clean, please very important, and then you are going to put the yogurt. Take it to the fridge so that it releases the serum it contains and a much more consistent part remains on top, leave it for two to three hours in the fridge and that way you will get a very good result, put a bit of film or plastic plastic and then in my case I want to tell you that I leave it almost all night because it was very dark and I need good light to make the videos so this distilled a lot of serum and the yogurt was very, very, very consistent, so if this happens to you, I hope this doesn't happen so what you are going to do is simply to integrate a bit of the serum that is left over and you are going to mix until you get the consistency you want Greek yogurt style, this is a delight, look at this one.
