[Music] [Music] hi guys I'm Seungyeon longest welcome to Asian at home and today I'm going to show you how to make Japanese styles soft-boiled or medium boiled eggs for ramen so right now I'm peeling my egg I already cook them and this is how I cook the egg bring enough water to boil in a pot that able to cover six eggs calculate place the eggs into boiling water using a spatula ladle or spoon set the timer for 6 minutes first 1 minute of cooking the egg stir around the egg constantly this way we can ensure the egg yolk will replace right in the middle [Music] when the SI done cooking carefully remove the eggs from the boiling water to an ice water bath there is a reason why we cook the eggs from the boiling water one that way we can control exact the time that we are cooking the egg because if you're started cooking from the cold water it's really harder to judge how long they will be cooking in order mean and the second when you start to cooking the egg from the boiling water it actually makes each to peel the shell from the egg trust me this trip always works for me and now my eggs are all peeled here is my perfectly soft-boiled six eggs right here now I'm going to pour the sauce mixture that I made earlier I pre made this sauce because it needs to be cool completely so it one continuously cook the egg this sauce is so easy to make and this is how I made it into a saucepan combine quarter cup of soy sauce quarter cup of mirin and one cup of pascha broth I do have a dashi broth recipe check it out right here Tashia broth it's like the heart of Japanese cuisine is actually a staple recipe or the stock to have in your refrigerator ready to go if you love cooking Japanese food often at home stir everything and bring it to a boil over high heat when it starts boiling just a continuously let it boil for 2 to 3 minutes so all the flavor will combine together and alcohol will be evaporated remove it from the fire and let it cook completely and here it is now I'm going to pour it to my eggs actually now you're looking at it my bowl is a little wide a little too big for the amount of the liquid and the egg because you wanna make sure the egg is a completely covered with the liquid so I'm going to actually move them into the smaller bowl and let's see and this is something that you need to make sure so the egg will color even either outside let's pour the sauce over yes all right now we are going to cover them completely with plastic wrap but make sure the plastic wrap is actually touching the eggs and the liquid not just on top but make sure it goes like this now we are going to place this in the refrigerator and let it set for 24 hours when you are ready to use this japanese-style soft-boiled eggs aka I will call ramen egg let's cut them into half using a SuperDuper sharp knife or a thin thread place on top of any type of ramen that you like from my home may to show your ramen or my pipe and chicken ramen that is about Tom or even your instant ramen cup ramen this ramen egg will elevate the elegance of your bowl of ramen if you like my perfect Japanese style soft boil the ramen egg recipe please give me a thumbs up and subscribe my channel for more inspirations and idea of Asian home cooking thank you so much for watching me today and remember you can always cook Asian food at your house making it easy and fun I'm seung-jun longest and this is Asian at home and I will see you next time bye [Music]
