all right today we're gonna work with some fresh squid I'm going to show you how to clean it and then we're gonna not deep-fry it I know most restaurants and you're probably most familiar with calamari but we're gonna do a little bit different we're gonna do a Korean style we're gonna put a little bit of gochujang sauce paint it right on top grill it a hole and serve it whole I think it's kind of a cool way to present squid it's more in line with its natural state get ready to get your hands dirty let's start [Music] [Applause] [Music] alright guys so let's start by learning how to clean squid yeah the first thing is to not get grossed out touch it you know Pettit different texture here feels like toenails here and appreciate the beauty look at these fins up here and here's our approach we have two fingers we're gonna go in we're going to scrunch up the two part so it can go here and then we're gonna pinch and pull it out alright so you see that I scrunched the two part so I can grab the top part so it's pretty clean on the inside you see there's nothing there if you're really good you'll take all of this out without popping any of the sack but to be honest I'm 50/50 on it and it doesn't matter we're gonna cut right here dump this part out and if you look in the tube of the squid there's what I call plastic spine of course that's not made out of plastic but you need to take that part out yeah and it does look like a piece of plastic so now the tube is ready I'll put it over here and guys if we look we still have the eyes here and there's a beak in here as well we need to remove one two and then the beak so three things off of this I like to cut right below the eye line level if you open up from the bottom you'll see the beak and you can just pop that out tentacles the tips I like to cut off this is what it's using underwater to touch things so cut off those toenails the next we're gonna remove the suction tip covers you see these like kind of yellow spots and you just put your finger here and you just run it down and you see all these cover tips do that for each of the tentacles alright guys now it looks like something at a restaurant right we're gonna make some cuts so it makes it look really nice for presentation you'll see later if this is lying upward I just want to give it a slight 90-degree turn so I'm going to leave about a thumb worth of space up top and guys be careful because it's a little slippery alright and once your cuts are done if you move it back to the top now you're gonna see you have beautiful cuts so now we're gonna take the Scotch John turn it into a sauce and elevate this squid just elevate it take two tablespoons of it it's one second tablespoon in and now two tablespoons of Korean red chili flakes nah dude one tablespoon of minced garlic in one tablespoon of soy sauce one tablespoon of mirin or use any cooking wine two tablespoons of honey that's one and one more all right one tablespoon of sesame oil and a few shakes of the SES am ii all right let's bring these guys into harmony harmony Oh give that a little taste mmm a spicy got a punch I think it's like just right for seafood put this at a medium high a little bit of oil in the pan all right we're gonna move the oil around a little bit we'll take our squid don't lay it down and as the squid cooks it's gonna turn purple and then we'll give it a flip guys when you flip it it's gonna curl up like this just stick to your tencel's and hold it down like this now you see this baby has turned beautiful purple we're gonna flip it back around Wow know the tip let's reduce this to a low take your brush and now we're gonna just baste our our squid with this nice sauce looks nice we'll flip it over one time and I'm gonna base this side as well there you go guys you got this nice char on top and this is finished that looks beautiful and to this I have some chives just put it like that you see how good that green is makes it look like a whole new dish and to this we're gonna drop some more sesame seeds just follow that green trail all right then I just threw some useless salad in the back use whatever salad dressing you like but the star of the show is this I forgot to cook the legs mmm that looks good this is your Korean grilled squid box ooh I want to show you one of the middle pieces just use a scissor easiest nicely cooked on the outside not overcook that all on the inside put that on some white rice and your whole life if you just been eating squid deep-fried then shame on you shame on you I hope you enjoy the dish I hope you have fun cleaning the squid and just enjoying the beauty and the taste of seafood [Music]
