[Music] I'm ready so because you said you're not that familiar with kombucha what I did is I displayed here real high level layout of what kombucha is okay all right so here we go so it starts off simply with just regular loose leaf tea that you brew like regular tea so we achieve teas used fruit juice so that's what these are these we use Kiwi juice so that's the source of carbohydrate so we brew the tea add to Kiwi juice and then this is what you have is a teeny tiny batch and then what you see in here is the kombucha culture also known as a Scobie okay so what we do is we ferment for 30 days this turns into from a brewed tea to a detainee effervescent kombucha then we add fresh ingredients of raspberry lemon and ginger and basically we fresh press these in our end result right not scary - ooh so as promised I'm going to show you how you make illusions so what we're gonna do is we need to take this water and we're gonna need to add our fermenting agent so we at GT's use QE so here are the Kiwis and we press it it's a Kiwi juice and we're gonna slowly add it to the boiling water and the reason why we're boiling it is it during the boiling it breaks down the carbohydrates into even more digestible sugars now keep in mind the sugar is not for you it's for the scovia and now what we're gonna do is we're gonna get these teabags which again are essentially just bagged versions or of the two teas that we use add the teabags into that you really warm sweetened water and allow it to fully emerge so now what we're gonna do and this is the most important part actually I'm making kombucha because whatever you do you can't cook your Scobie and so the way to avoid that is you make sure that this hot tea gets transferred into another pouring vessel I'm supposed to know what it's obvious yeah well stay tuned it's coming up okay got it we're gonna use this and we're gonna slowly add it into the small batch that is gonna be the home of our kombucha so now we have room temperature purified water okay can't be tap water it can't be dirty water so don't these cheap water is clean don't be stingy try not to before don't be stingy okay so you're going to dilute the tea to normal strength so you see how it's moved slowly taking the color of regular color tea before it was too dark the truth raw bottle of kombucha is alive and so when you open it you can tell so that's not just carbonation that's not just soda pop that's life it's like so you're gonna add half a bottle it's got some floaters might have some photos which is a good thing honestly the more graphic your batches the better okay so you're ready so we're you ready we're gonna go get our star our hero she's a celebrity star you ready let's meet her okay let's go get her so you see recon I'm gonna go bang okay okay so here we are okay yeah okay so hold on so this is when you asked earlier what escabi is this is a scope and the scoby stands for symbiotic culture of bacteria engines oh so she's the acronym she's an acronym she's she's like Prince you only can go as she can go by one name okay that looks like Christmas man okay so I can put it in baby wanna be put in so let me demonstrate right so what you have here so you have this beautiful round culture and there's actually two of them right so underneath it is the mother I see you getting excited gross a family is a family yeah it's a mother and daughter story yeah wait so this is not human it's not human no this is not there's no human placenta here this is all plant-based [Music] okay here we go it smells I can't even describe what's like vinegar right like think of like a salad dressing I hate it bad Wow actually ELISA that there's no lick your fingers so now fast forward seven to ten days the batch is fully fermented and the tea which was once sweetened is no longer sweet knees a little bit more sour it has more of like a vinegar quality that was developed during the fermentation all coming from the scoby so what the scoby does is eats the sugar and then turns it into more like a vinegar base and just like raw apple cider vinegar is very healthy it's very good for the gut very good for balancing your acid alkaline kombucha does that and where is mrs. Gopi from where does she come from yeah but we did the 23andme and it turns out she's from Asia yeah you know we thought she was from another part of the world but finds out its 221 BC is that we believe the first time a Scobie made herself known was back then you don't look that old well thanks Congrats good doctor I'll go on I want an exception now ready you can do it everyone you know what long as you as you taste it can swallow that's not bad that's not as bad as I thought it'd be okay it's like a backhanded compliment it's good it's okay it's not it's like lightly carbonated mm-hmm where does that come from so it comes from the fermentation so we have a lot of different flavors right we have everything from original which doesn't have any juice - ginger aid which has ginger juice subtraction and then the spectrum of flavors continues from there and I want to hear your reaction yeah you know what maybe we'll come up with a flavor together all right okay is you ready Texas Pete hot sauce okay I know the Pete is your named piece okay no no no I'm here to broaden your horizons not to give you everything that we make okay and I want to hear your reaction
