How to Make Hainanese Chicken Rice | A Simple Recipe

[Music] it's angel today I'm going to show you how to make Hainanese chicken rice now this dish actually originated from the high-tech province of southern China but it's really popular in Southeast Asia so popular that it is the national dish of Spain up or and even though we're using the cold chicken in this recipe I don't want you guys to be intimidated because it's actually one of my more easier recipes to cut so with that let's get started and I will show you guys how to make chicken rice at home first let's prep the ingredients slice some ginger into four to five generous large pieces next peel eight to ten cloves of garlic both of these ingredients will be going into our soup and our rice and finally chop up some green onions for garnishing I like to put mine in a small bowl toss with a bit of olive oil then put into the refrigerator to chill before using next prep the chicken make sure your sink is empty before starting so it's easier to work with start by unwrapping the chicken and removing and setting aside any giblets found inside the chicken cavity next exfoliate the chicken with a salt scrub I'm using kosher salt here and by exfoliating I'm really helping to remove any residual skin or small feathers that you don't want to eat think of it like giving the chicken a beauty scrub after that make sure to rinse the chicken under cold water really well both inside and out and yes under the arms too when you're done the chicken should be smooth and shiny like this next boil a stockpot with filtered water about 65% full bring to a full boil then blanch the chicken will want to blanch the chicken for one to two minutes to cook the outside of the skin then turn off the heat and remove the pot make your way back to the sink and carefully remove the chicken and rinse under cold running water keep rinsing the chicken both inside and out until the chicken is no longer warm to the touch this will help give the chicken skin a nice springy firm texture trust me you don't want to skip this step when you're done carefully put the chicken back into the pot return to the stove and let it reboil finally add 1 tablespoon of kosher salt good ginger slices and your garlic before letting it cook at a soft boil for 30 minutes while that's cooking let's make our rice clean and wash your rice like you normally would but instead of water use chicken rice broth if you have some saved from last time this will help make your rice extra tasty if not using water is okay too I'm also going to add 2 cloves of garlic a ginger slice and the chicken neck I saved from earlier [Music] throw all of that into your rice cooker and set it to cook pretty easy huh after 30 minutes going back to the chicken turn off the heat and set the pot aside to let it continue cooking with the residual heat for another 30 minutes during this time resist the urge to lift the lid [Music] while we're waiting let's make some sauces if you like spice slice up some serrano chiles then for a classic sauce grate some ginger into a serving dish and adds olive oil next I'm preparing a mixture of chili garlic sauce with a splash of soy sauce and finally a drizzle of Asian sesame oil YUM perfect timing now that the rice is done remove the ingredients we added for flavoring then fluff up your rice [Music] now our chicken is done but it's going to be really hot too hot so carefully remove the chicken and let it cool on a plate or your cutting board for ten minutes before cutting after 10 minutes you can go ahead and cut your chicken like you normally would I find that it's easier to start with the legs when you're done you'll have plenty of chicken to put on a serving plate or platter as a final step take out your green onion mixture and add a few pinches of sea salt before mixing and serving as a garnish over the chicken and when serving don't forget to serve your chicken rice with a bowl of the yummy soup so this is how you make kinda nice chicken rice there's a ton of chicken plenty of soup for leftovers or perfect family and it's just a really nice healthy clean tasting meal if you want to try this recipe at home feel free to go to my website I have a printable version as well and don't forget to give me a thumbs up if you like this video and I will see you guys next time [Music]
