[Music] [Applause] [Music] new orleans is a city that's filled with culture history and fun today i will show you how to make gumbo from scratch if you like this video please like share and subscribe hello everyone and welcome back today we'll be making authentic gumbo from scratch so if you never tried this and you want to have some gumbo this holiday season i'm your teacher hi everyone um these are the things you will need to get started you will need here which is a teaspoon of cayenne pepper this here is grounded thyme and you will need a teaspoon of that you will need one tablespoon of a seafood boil or you can use any type of seafood season you just need one tablespoon you need four or five bay leaves you will also need here one and one half cup of flour you will need one tablespoon of soy sauce you will need one tablespoon of garlic powder then you will also need two tablespoons this is called gumbo fillet i'll show you what that is then you will need a tablespoon of parsley then you will need a a teaspoon of salt and a teaspoon of pepper this is actually a teaspoon and a half of pepper you will need one stick of butter you will also need one cup of oil you will need a one cup of okra you will need one whole this is one whole chopped up bell pepper and then you will need two and a half stalks of celery this is two stalks and that's a half you need one whole onion you will need uh your seafood you can use about a pound of shrimp and then i have some sausages you can use kabasa or you can use um andouille sauce this is an andouille sausage from louisiana also um this is a two-hole chicken breast then you will also need one quart of chicken stock and you will need two quarts of water these are the things that you would need to make the gumball from scratch so we'll get started [Music] the first thing we would do we would start off by adding the two quarts of water that you have we're going to take two quarts of water we're going to pour that in and to the water we're gonna add uh a little bit of okra well let's add uh some okra we're gonna take our okra and add it to the water and then we're going to go ahead and boil this uh for about 20 minutes so i'm going to put on the stove and boil it for about 20 minutes now while we have this boiling we're going to mix up our roux and this is what we're gonna add we're gonna take our flour you're gonna add your one and one cup of flour [Music] then you will add your ground uh you're gonna add half of this this is the gumbo fillet so i want to make sure the uh everybody see this can y'all see this this is the gumbo fillet this is what this is we're going to put half in now and we're going to say half later so we're going to put half of that in we're going to save a little bit for later then we're going to add our garlic powder add all your garlic powder then you're gonna add your uh seafood seasoning we're gonna add all of that then you're gonna add the cayenne pepper and this is the grounded thyme we're gonna add that to the flour and then we're going to save our salt and pepper for later and we're going to save our parsley and we're going to take our bay leaves and we're going to go ahead and add them to our boiling water okay so we're gonna go over here we're gonna add our bay leaves to our boiling water [Music] see i've already added the okra i've already added the okra and now i'm going to add the bay leaves we're going to bring that all to a boil we're going to let that boil and while that's boiling i'm going to add our chicken we're gonna go ahead and cut up our meat [Applause] [Music] [Applause] [Music] so after you chop your vegetables go ahead and um chop up and clean your meat i am using two chicken breasts i'm gonna de-bone it and um cut it up and i'm just cutting it up into like a four you know just small pieces to go inside the gumbo i'm also using uh an andouille sausage you can use andouille sausage kebasa sausage or you can use a smoked sausage all of them are very very flavorful uh but i like the endowed sausage because it has like cajun spices in it but any sausage that you choose it should work good in this recipe i am also using shrimp uh you can use shrimp crab and any other seafood that you like uh my kings in this house they don't like crabs that much so i'm not gonna put it in this particular gumbo but this is when you add the shrimp the seafood that's will be the time you add the crabs we have cut our chicken up now it's time to add the chicken to the boiling water so let that boil and then we'll continue [Music] on [Music] so [Music] [Applause] hmm [Music] now it's time to clean your seafood and tonight i'm using shrimp uh at this point you'll clean your crabs or your shrimp and the most important thing after you clean it put it back on some ice water or you can sit your seafood inside the refrigerator because you don't want to get uh food poisoning by having the seafood sit out in the uh warm atmosphere so see how i cleaned and deveined this shrimp make sure the shrimps are clean there's no uh tails on and the crabs make sure you clean the inside of crabs and remove all the loose shells if you're using crab and we have already chopped up our meat and the next step is i'm gonna show you how to make the roux [Music] uh [Music] all right you guys we're gonna add our two sticks of butter in and we're gonna add our oil and we'll get it all mixed up this is the most important part of making the gumbo if you get this part wrong you might as well just throw it out and start all over what you want to do is uh heat your oil up and your butter you want to heat it on medium heat heat it on medium low heat and when you start adding the flour you want to cook it on medium low heat see we have our flour i am mixing up the spices that we put in there because we want to mix it up go ahead and mix it up real good because we're getting ready to incorporate the flour when our oil and butter get hot we're going to go ahead and incorporate the flour into it and you're going to constantly stir i am stirring the butter that's in the oil up now to get get the uh heat to heat up just a little bit so i can get ready and start cooking this roux now don't be impatient when you get to this part because it's going to take 15-20 minutes for this flour to brown to begin to make the rule and you want to be patient and you want to keep stirring and watching watching it because you don't want the flour to become burned if you leave it alone and just let it cook on the stove on low heat you'll burn it so see how i'm adding it just keep go ahead and stir it up just keep stirring it it looks brown because of the spices that we added and i added the spices to the room mixture to the flour because when you add spices to oil it release aromatic flavors and smells it smells so good but you still would smell the nutty smell of the flower when it almost uh ready when the roux get almost ready so just be patient and keep stirring ah [Music] look at our room that looks so delicious and gorgeous but listen to me guys if this is your first time ever making roux do not do this step because you need to get an experience of making the route before you do this because it can easily burn so what i want you to do is take your soy sauce and just put it over in the pot take your vegetables and your soy sauce and go ahead and add it to the boiling uh chicken and okra stuff that's in the pot now if you've experienced and you think you can go ahead and do this go ahead and try it but uh be careful and you gotta work fast see how quick i work you gotta work fast because if you don't when you put that soy sauce inside that oil it will fizzle up and it will burn quickly so if if you can do it you know just keep stirring and stirring and stirring like you saw me do but if you don't feel you'll be able to do it don't worry about it just put the soy sauce inside the pan with the uh mixed vegetables and then you just pick up from there [Music] wow it smells amazing go ahead and add your sausage and then after you add your sausage go ahead and add add that quart of uh chicken stock and go ahead and stir that up and when you finish adding the chicken stock go ahead and put your spices in we're gonna go ahead and put the rest of the gumbo fillet in and uh go ahead and put that in then we're gonna um put our parsley inside stir that all up get it all mixed up real good then you can add the rest of your salt and pepper and then once you get everything all stick all stirred up real good the last thing that you will add is your seafood now go ahead and add your shrimp go ahead and add your crabs or whatever type of seafood that you're using and then you're going to turn the heat on low heat and you're going to let it simmer uncover for about a good maybe 20-25 minutes and see how good that look is already thick once it starts simmering after about 25 minutes what you would do is uh skim some of the oil off the gumbo and uh you have a good gumbo don't forget to always taste it to see if it's have enough salt or enough pepper or whatever you need in it you can always add more salt later but don't start off putting a lot of salt in it read the instructions on the on the package where you uh for the rice i have two cups of rice and four cups of water and i'm going to make the uh long grain white rice but you can use any type of rice you like hooray our gumbo is finished it looks dark and mysterious but it's absolutely delicious when the gumbo is cooked after 25 minutes it cooked down there will be some oil that come to the top of the surface just skim some of the oil off and you would enjoy this delicious delicious soup i would like to say a prayer for us
