it doesn't get more traditional than bacala and spaghettini with an anchovy breadcrumb topping for meatless good Fridays and Christmas Eve our families from the Abruzzi and Calabria regions used to make this recipe and we're continuing with the tradition and we begin with a fresh loaf of Calabria bread you can use an Italian loaf or French loaf as well I begin by cutting two slices of bread that are 2 inches thick this should be enough to top four to five servings of spaghettini then the bread goes into the blender in small batches and you pulse you want to pulse until you get a coarse crumb and this is what it should look like by the time you're done with the two thick slices of bread you have about 4 cups of crumbs some of the ingredients that you'll want to prepare ahead of time our sun-dried tomatoes green onions green or black olives and garlic cloves sliced you will need one tin of anchovies with its oil and Jovi's tend to break down once cooked so you won't even know that they're there but it will add a beautiful flavor to your crumbs let the anchovies break down over medium heat and then add a little bit of extra olive oil throw in the sliced garlic stir it a little let it cook a little and then you gradually begin to add your breadcrumbs in small batches and stir this needs to be continuously stirred so that it doesn't burn you stir it until it gets a little bit golden in color as you can see it's changed color you add a bit more olive oil and you stir a bit more and then you continue to add some more breadcrumbs and keep stirring and with the pan still on medium heat we'll begin to add our other ingredients one and a half tablespoons of sun-dried tomatoes and you can just stir that in then we'll add some pepper maybe half a teaspoon of pepper or to your taste a sprinkle of pepper on jeanny to your taste then we'll throw in our green onions about two tablespoons and stir it all around and then we need to add about two to three tablespoons of fresh parsley and then we add our three tablespoons of green olives and while this is slowly cooking all together I would like to ask you for your support and to please subscribe to my Channel please leave comments or requests in the comment section now isn't this gorgeous and we're not done yet we will need to make garlic flavored olive oil to pour all over our spaghettini and crumbs so in a small pot over low heat you'll need a quarter cup of olive oil and one large garlic clove sliced and it needs to be slowly simmered and making sure you're not burning the garlic in the meantime you're boiling your spaghettini for four to five people or spaghetti can be used and your crumbs are sitting to the side warm and ready to go while we're waiting for the garlic to slowly and fuse the oil your spaghettini has to be well cooked and drained very well you don't want any leftover pasta water then we can top it off with two teaspoons of romano cheese or bottom in Genoa jonno then we want to take that beautiful garlic infused olive oil and drizzle it on top of the cheese and the spaghetti you can pull out the garlic chunks if you don't want them in there we top it all off with the beautiful delicious toasted breadcrumbs and stir it all up and make sure that you have some breadcrumbs to top up each individual dish go to Gina's Bella Cucina YouTube channel to find the bacala recipe buon appetito everyone
