g'day welcome to the simple sooking Channel today I'm going to show you how to make a lemon cake with lemon frosting I don't know why I did that but apparently that means lemon to me and I'm using a lemon for my own lemon tree to give her that extra lemony taste so there's a go good large mixing bowl and chucking 250 grams of softened butter chuck in 1 and 1/3 cup of sugar 2 cups of self-raising flour 4 eggs a little bit of baking powder and about half a teaspoon get a lemon grated put the lime in there reserve about a couple of teaspoons that we'll use for the frosting you also then juice the lemon keep about half of it put in here and the other half we're going to keep set aside with the little bit of rind because we're using that with the rind for the frosting now add up a cup of milk now I want to mix this together to create a really yummy batter just start it on slow so doesn't fly everywhere unless you want that now you want a nine-inch ah here about nine inches by three inches by ting ting you can have a smaller one or even a bigger one depends on your preference how how big you want the cake how high you want it to rise but I find that this is a good good size for this amount of batter now just flatten it out you can just shake it and it should flatten enough now pre-heat your oven to 160 degrees Celsius or 320 degrees of Fahrenheit pop it in there I usually put on the low or middle shelf not the high shelf it will take usually about 45 minutes to an hour just check it up about 45 minutes and just if it's risen well if you stick a little skew or something in and it comes out dry and crumbly or just tiny little bit moist but crumbly that's good if it comes out really wet just give it another 10 minutes all right that is ready now just let this cool just enough so you can put the frosting on so we're going to make the frosting and once this is cooled enough put it on there so it doesn't melt everywhere know for this get about 100 to 125 grams of softened butter and just chuck that in now add that little bit of lemon rind that you reserved that you created before from the lemon and about half a tablespoon to a tablespoon of lemon juice then get about a cup of icing sugar it's also called confectionary sugar and probably some other names now we just want to mix this together and make sure that you have it plugged in now I'll get the frosting oh yeah oh look at that hahaha okay Oh Mamma Mia mmm moist yummy so good I'll see you next time for my next meal
