hi I'm Dan Brooks with Crystal Lake Resort and I'm going to show you how we filleted rainbow trout up here right on the Lakeshore so first we gotta do is take a rainbow trout and you always start with his back away from you I just use a two or six and I'll show you why we start with his back away first you make an incision right behind the gills and then you run your Flay knife right down that backbone just like that right up to the tip of the tail flip that sleigh over like that and then skin it off just like that and there's your filet just like that beautiful now we gotta get the other side so we roll him over and this is why we start with the back away so now we start with the back towards us and you need the board so that you can get your knife at just the right angle cut right behind those get that gill plate again and then cut along that backbone fit that play over and there's play number two beautiful the fish is back away from you you cut right here and then you find that backbone and you just go right along that backbone you'll just feel it with your knife almost right to the tip of the tail and then you lay that open and then you skin off that last little bit you end up with a beautiful fillet just like that throw that in there roll him over now the back is towards you and on the edge of your board that gives you the angle you need in order to make these right Cuts follow that backbone down again right to the end flip that over and again cut off that skin and there's filet number two and that is how it's done that my friends is how we fly fish at Crystal Lake
