hi folks it's evo here from thundermiss lure company and on today's episode of thundemous fishing tips i'm going to show you how to make a seafood risotto but in this particular recipe you could use any fish that you've got whatever the catch of the day is it's a simple but yet delicious recipe so let's get started so folks before i begin any recipe i always like to have all the ingredients together in one spot and today what i'm using i've got two cups of rice and this is an arborio rice which is a risotto type of rice there's different kinds but the arborio is a very very nice rice to use i have one onion that's thinly sliced i have a little bit of garlic that's minced both six tablespoons of butter some parmigiano cheese a little bit of oil as well some canola oil for frying and then i've got my fish and again today i'm using a fresh cod fillet uh and i'm also using calamari and scallops but you can use any fillets that that that you like any fish at all i also have a key ingredient which is optional a half a glass of white wine and another key ingredient which is not optional i have um some chicken stock going now if you have fish stock by all means use the fish stock but i don't have it so i'm using chicken stock right now okay so very simply the first thing we're going to do is fry our fish and we have the six tablespoons of butter i'll just put them there we'll get that melted and going i have three tablespoons of canola oil that i'm also adding and again you could use any vegetable oil you want and all you're doing at this stage is just frying your fish now i also have that minced garlic which i'd like to add at this point in time there we go we'll get this butter melted down very very nicely perfect okay so step one we're frying fish okay the butter's all melted i got my garlic in there so i've got nice garlic butter and let's put in the uh the cod there we go nice fresh cod again the beauty of this recipe i know i've said it i'll mention it again you could use any fish you want totally up to you fresh water fish salt water fish very very simple recipe i'm going to put that on high just fry that up okay that looks about done let's just lower the heat a bit boy this smells really good this butter and garlic wow does that ever smell good already so i'm just going to remove the the cod with this slotted spoon and then i'm going to fry up the the calamari and the scallops and get those going so just take these out quick fry on the calamari i know if antonio was here he'd be telling me we should be using calamari for bait but it's also very good eating and some scallops put the heat up high again toss it up with the butter and garlic oil and let's give this a quick fry okay it's been a couple minutes these are perfect let's take them out just put the heat down nice oh this is gonna be really good smells good already okay that's perfect i'm just gonna salt my fish just a little bit a little bit of salt there because i use salted butter so i don't have to add too much salt so i'm just going to let that sit and uh and wait now i'll put my heat back on high all right now comes the risotto part what we're going to do is we're going to add the onion and we're going to cook that onion down for about oh about a minute or two and you notice all the liquid has been reserved in here which is gonna add a lot of flavor to that to that risotto once so once it starts cooking in there okay now we're gonna add our arborio rice and like i said i've got two cups here which is a lot of rice and uh this will feed like six to eight people one one cup of rice will probably do four people so i've doubled up on it i've got some hungry people to feed today and what you do once you've added the rice just stir fry it here just get it coated in that onion and that butter and it'll come almost dry and you want to just kind of stir fry it for about a minute or a minute or two see how it's dried up there already it's gotten dry a bit i'm gonna let it go for another minute okay now comes the optional ingredient the white wine again you don't need to but i like to add the white wine that's about a half a cup there so i'm gonna add ah most of it a little bit always save a little bit for the chef oh that's really good okay now same method i'm just gonna stir that all around and get it all coated with that nice white wine only takes about a minute and now while it while we were doing this we put our uh we had eight cups of chicken stock and we brought it to a boil on the stove here because your chicken stock what we're going to start doing now is we're going to start adding it one ladle one ladle full at a time to our risotto and the risotto is going to absorb that so there's my chicken stock and i'm going to start right now with one ladle spoon put it in there and same procedure just stir the rice around and what will happen is is that risotto will start to absorb all of that broth and as it absorbs it we're just going to continuously stir it that's the only thing with the risotto recipe is you're kind of married to the stove for a little while because you have to constantly stir which is okay so we're just going to stir this up and as we stir it's going to absorb that broth and once it starts to absorb it and the broth gets low i will add more broth okay it's dried right out i'm going to add another ladle spoon full and in fact what you can do you can see i've got some some of that flavoring on the side there i can kind of scrape that a little bit with the uh with the broth and get that flavoring right into the risotto rice so constantly stirring that's the key okay so it's absorbing really really nicely and all i'm going to keep doing now i'm just going to keep adding and stirring for the next 15 minutes or so and then we'll hook up with you again and show you what we've got okay folks we've been at it for about 20 minutes now i just sampled the rice it's absolutely delicious what i'm gonna do is add a little bit of salt now we've used already salted butter so we don't have to add too much salt but i've added a little bit of salt and now another tablespoon of butter that's going to make it nice and creamy we're going to just fold that in melt that in there i can see the creaminess already starting to come through and this is where we also add our parmigiano rice or sorry parmigiano cheese to the rice we'll just sprinkle that in and i have about one ladle spoon of broth left so we're just going to pour that in excellent so that can come off the heat this is the broth and now what we do is with that butter and cheese we're just going to fold that all in let that cook down just for about a minute because you still you want it to be a little bit creamy the risotto you can see here now the butter is all melted my cheese is distributed very very nicely and now i'm going to add our fish and add that in all the juices everything goes in oh boy give that a stir stir that right in look at that creaminess there oh folks this smells really really good i gotta tell you it smells delicious so just give it another stir too look at it it's got a nice creaminess to it you know what that's absolutely perfect we're gonna take it out okay i'm just gonna garnish with a little bit of sprig onion here just to add a little bit of color so the next time you're out in the water and you want to try something different than just a plain old fish fry give this risotto a try it's absolutely delicious it'll rival any risotto you've ever had in a restaurant it is fantastic you'll love it
