Never realized how much I have in common with the burger guru and this burger session in particular.
Firstly, I’ve got family from Charleston, even lived there for a short bit and have had a couple pimento burgers. Never thought I’d dig pimento anything but it grows on ya and the best was at the Tattooed Moose. Great little dive-ish bar back in the day and I worked real close by so had lunch there quite a bit. They fry their fries in duck fat and oh my gourd are they tasty. Haven’t been in about a decade since I moved up north but damn good spot.
Next, I grew up in the Midwest and used to drive through Sedalia on the way to visit my grandparents out in the boonies. I can remember the first time having a goober burger at the Wheel Inn on 50 highway several decades ago and ten year old me thought it was gonna be gross but damn was I wrong. Hadn’t been back that way for a while but drove by right before they closed (seems like forever ago) on the way to visit some family and stopped in for old times sake. The place was pretty banged up after 60 some years of business but in my opinion, the best burgers come from a hole in the wall like Dyer’s in Memphis or Town Topic in KC. The dingier the better and it was freaking delicious.
And lastly, George is my neighbor in Brooklyn. Last year he was slinging burgers out his apartment window. He’s THE burger badass and also has a pretty killer single barrel rye whiskey if you can get ahold of it. Rye whiskey and smash burgers are two of my greatest weaknesses. Come to think of it, maybe I’ll start carrying my copy of his book so I can have him sign it the next time I run into him in the hood. Love the dude.
I've been cooking smash burgers for a year now and I love them. I've learned cooking them inside though is risky business.
How do? The only issue I’ve run into is setting off the fire alarm from time to time
