Just got home from work, where I spent all day doing exactly this. Funny to see an HD video on the front page going through a normal day's work for me. We do a few things differently but for the most part this is a very accurate depiction of breaking down a hog.
Well, I didn't think I would watch the whole thing, but here we are 20 minutes later and I know more about a pig carcass than I ever thought I would.
