yes this is a grim I achieve keep them welcome back to my vintage kitchen I'm prepared for a spring spring is here it's time to lighten up some meals and to get that spring fresh flavor out of the fruits and vegetables and meats that are in the store now it's almost Easter can you believe it today we'll be preserving lemons I did a video on how to preserve lemons probably my first year on YouTube and that was five years ago I haven't been consistent and that was one year that I just totally didn't do any videos but you stood by me I thank you and let's get on with this video trying to make the videos shorter I will be using a sugar salt method the last time I did a video on preserving my lemons I use strictly salt but I was reading the salt sugar method and it's from chef John on food wishes so this is two cups of sugar cuz I have quite a bit of lemons plus I want to finish whenever they get a little reduce I'll put more lemons in there because this is so very good on lemon chicken or broiled fish or baked fish it is good and Rice's pastas couscous you name it I bet it can be incorporated into some breakfast two eggs lemonade okay I'm using the kosher salt just regular kosher salt and that's 2 cups of that - I'm purging my spices so whenever I can I'm using up some spices that I have so this is my own take on it we're gonna use a tablespoon of thyme and this comes from the Hispanic aisle in and I've had this probably at least a year it's time for it to be okay I'm putting bay leaves in there I did me before this is a totally new preserved lemon but I bet the bay taste will make these particularly good now I have some saffron this is probably a year old too and I'm gonna put a teaspoon of saffron threads now heaping teaspoons and this is pin zzzz I think it's pins ease it's a spice store and they have really great spices nothing but spices pinzhi spices I'm gonna put a palm full of their Malabar India Malabar peppercorns and let me get a whisk I tried to make a new angle for this for this video I'm gonna have to order a shade here's a big clump of sugar our salt this looks pretty already okay now what I'm gonna do is show you how I cut my my lemon not that you need to but there's always someone who will need a learning curve every now and then now on the ends I squeeze the juice because waste not want not and I make about a quarter inch slice still loving the copper chef knife and I also removed the seeds you can go a hundred times faster without moving removing the seeds but it won't be as pretty and your product won't be it's nice all spring and summer a lemony mayonnaise would be good with these preserved lemons and I Olli hey Olli make a dip would be wonderful and see what I mean the the removal of the seeds can be a little taxing but it's totally worth it okay okay now we're ready to go my vintage touch on this recipe will be I just got this vintage um jar from one of the consignments our thrift stores and I thought it was so pretty and so interesting and this will be perfect for my can't you see them now in my um in my jar I can um I'm using a vintage spoon I love it because it's it has a small scoop so the first thing we want to do after mixing our salt sugar combination is to put a couple of spoonfuls or cover the bottom okay now we're gonna start inserting our lemons we're going to leave these lemons out on the counter for about three days then we'll be able to use them in my older video i think i cured them for six weeks or something like that but i want to use these four recipe I have in mind I think I'll put some more lemons in there it's like build your own preserved lemon jar okay now I'm gonna put some more sugar salt solution oh I need to put a Bailey's fortune I don't know how a fresh bay would react I don't I guess it would be okay okay put a little more salt sugar this is so fun and it's so good you know I like Moroccan food from time to time and in Morocco they use a technique for preserving lemons for their Tanjung push it down [Music] okay guys this is our preserved lemons I pushed those babies in there and got all of them in the jar and it's just looking beautiful I hope you can pick up the saffron the peppercorns I put the lemon juice salt and sugar and the bay leave actually you can do whatever you want the this is your baby I just think that those combinations will yield me really good for the spring season I'm not even going to talk about summer yet I have it sitting on a vintage crocheted little doily I love that too I didn't make it because I did not know how to crochet or knit please rate comment and subscribe thank you all for joining me here in the kitchen I apologize for the noise and the refrigerator it's old just like me talk to you soon goodbye
