hello friends welcome back it's nadi from nadi's kitchen i hope the year has started out great for every one of you happy 2021 today we are going to make some black eye cake or chinese cake and you know it's one of guyanese favorite snack so let's jump right into the video so hi friends the very first thing we're gonna do here is to boil our black eyed peas i have here one cup which i have soaked overnight and i'm gonna wash this very clean and i'm gonna put it to boil so guys in the meanwhile our black eyed peas are boiling i'm gonna go ahead and start mixing the pastry dough i have here half a cup of butter cold butter so i'm gonna add this here and you know we're gonna follow the same concept like we did with the cheese roll pastry dough so it's the same thing so three cups of flour half a cup of butter and half a cup of the shortening and so guys because i'm using unsalted butter i'm going to go ahead and add a quarter teaspoon of salt and we're going to start combining this so we're going to combine this until we get a nice crumbly texture so guys this is the consistency you want and it has a nice crumbly texture so this is looking pretty good now so we're going to go ahead and start adding our ice cold water i have one cup of ice cold water and i'm gradually going to add small amount to the dough so guys we're not gonna knead the dough but we're gently combining everything so that we can form like a nice dough ball so guys this is what my dough ball looks like so i have flattened it out a bit and i'm gonna wrap this in the cling wrap and i'm gonna keep it in the fridge for like about two hours now let's check on our black eyed peas and it looks all done so let's test it so you're going to put a little in a plate and just press down and make sure it's nice and soft like this so and this is nice and soft so i'm just gonna go ahead and take this down so guys i have strained the black eye and i'm gonna start grinding it i'm gonna use my food processor you can do this with the food processor or you can do it um with the potato mushroom or you can even use a strainer and just you know pass it through the strainer so i'm gonna go the easy way i'm just gonna do this so friends i notice it's still very lumpy with the food processor so i'm gonna go ahead and pass it through the strainer so i'm gonna put some in here and just kind of like you know do this you will notice the shells remaining in the strainer you can just discard those so guys this is the final consistency of the black eye and you see it's so nice and smooth so we're gonna start making the filling i have here my nonstick pan and my stove is on medium low so i'm going to go ahead and add the black eyed peas i'm adding one cinnamon stick one cup of brown sugar and this you can adjust accordingly i'm also going to add 1 3 cup of vegetable oil i'm gonna go ahead and give everything a nice mix i'm gonna let this cook on medium low heat and this cooking process usually takes like about 20 minutes it has been like about 15 minutes into cooking and i'm gonna add the browning now so guys this is 20 minutes into cooking and it's almost done you see how it's separating from the pan and this is what it looks like and you will know it's done when it's separating from the pan like this so guys at this point i think might need a little bit more color so i added a little bit more browning to it so i've used like about one teaspoon of brown in total so guys we're gonna start putting everything together i divided my dough into three equal parts and i'm gonna start working with one piece so i'm gonna roll this out and you can use flour as needed so this is good it's like about 1 8 of an inch using a cookie cutter i'm gonna make the circles you can also use like a glass and do this so i'm gonna get four circles here now i'm taking the excess part out and you know save this for later because you're gonna have another dough ball with this now i'm going to roll out each individual piece and i'm going to start doing the filling now you're going to take small amount of filling and now you're going to start folding it in like this so just kind of run that off and that's it so guys i'm gonna do another one so guys it's all done and i'm gonna apply the egg wash i have here one egg two tablespoons of water and just like two drops of yellow food coloring so i'm applying this to each individual pastry so guys the next thing we're gonna do is applying these little red dots on top i'm using the red food coloring for this also my oven is on 350 degree fahrenheit and we're gonna bake this for like about 15 to 20 minutes or until it's nice and golden brown so friends after 18 minutes in the oven this is what we end up with nice beautiful black eye cake or chinese cake now let's see how it looks on the inside it's so good wow look at that so friends i do hope you have enjoyed this recipe uh do give it a try i'm gonna try this now and it's so
