[Music] there's no greater comfort food than a Hardy stew today we're preparing a flavorful dish that's perfect for those chilly evenings Irish Guinness beef stew made with tender beef root vegetables and of course the iconic Guinness Stout this stew is a taste of Ireland in a [Music] bowl start by cutting the beef into 2in cubes Pat them dry then sprinkle with about 2 to 3 tablespoons of salt and pepper Guinness stew is usually made with lamb but in many parts of the world including here in the US it's more commonly made with beef and for a stew like this you'll want a tough cut of beef with plenty marbling such as Chuck or round roast you also want to use big pieces of beef if the pieces of beef are too small they'll cook too quickly and fall apart in the stew before it's had enough time to develop the Deep flavors we're going to start by heating 2 tablespoons of olive oil over high heat in a dutch oven or a large pot then add the beef in batches and sear well on all sides searing the beef adds depth of flavor to the stew by caramelizing the meat and creating a rich Savory base it's not just the brown beef itself but also the brown bits left on the bottom of the pot which adds extra flavor to the [Music] sauce [Music] once we Brown all the beef remove them onto a bowl or a plate and set aside we're going to lower the heat to medium and if the Dutch oven is dry add another 2 tbsp of olive oil we're also going going to add in some onions and garlic and cook them for about 3 minutes until the onions are soft and translucent the moisture from the onions are helping to release the nice caramelized bits stuck to the bottom also called fond this is where all or most of the flavor [Music] is now while the onions are cooking sprinkle in some [Music] salt next add the [Music] garlic [Music] then we're adding in some chopped bacon the bacon is optional but it's going to add in some smokiness and extra flavor you can also substitute it with either ham or Panetta cook the bacon until it's brown then add some tomato paste and give it a quick stir one of the best things about using tomato paste in beef stew is the way that it enhances the flavor of other ingredients it brings out the natural sweetness of onions and carrots and helps to melt together GA all the different flavors in the pot also it gives the stew of this beautiful red color that just makes it just more appetizing then add in some brown sugar we're adding dark brown sugar which is going to balance out some of the bitterness with sweetness and it also gives a death of flavor with its molasses notes next add in the flour and stir for about 1 to 2 minutes to cook off the flour the flour is going to help thicken the broth I prefer my stew sauce a bit thick but if you want a thinner or more watery stew you can add less flour or just emit the flour Al together then slowly add in 3 cups of beef or chicken broth and give it a quick [Music] stir next we'll add the Guinness just make sure that it's room temperature and pour pour it slowly into the pot to prevent any splattering for those who don't drink or prefer non-alcoholic beers Guinness now has a non-alcoholic version and works perfectly in this recipe next we're going to throw in some fresh thyme and some bay [Music] leaves we're going to return the beef into the Dutch oven including all the juices the broth level should just slly cover the beef give it a stir making sure to scrape up any brown [Music] bits now we're going to transfer it to the oven and simmer at 325° for about 90 minutes up to 2 hours stirring halfway through the [Music] cooking when the 90 minutes is up and the beef is forked tender stir in the carrots small potatoes and the celery while carrots potatoes and onions are the classic choices for an Irish stew feel free to get creative with your vegetable selections turnips parsnips and mushrooms all make delicious additions to the stew now return the stew to the oven at 325° for another hour until the vegetables are tender after an hour bring out the stew and let it cool down for at least 5 to 10 minutes at this point you can also skim off some of the fat on the surface if you want and remove the bay leaves and the [Music] thyme you can tell the beef and vegetables are cooked and tender if you can easily Pierce them with a knife we want to taste the stew once it's cooled a bit and adjust the seasoning as needed a pinch of salt and pepper a dash of Worster Sher sauce or a Sprinkle of fresh herbs can really Elevate the flavors this Guinness beef stew is the ultimate comfort food the alcohol is evaporated as the stew simmers low and slow and you're left with a deep and robust flavor with fork tender beef creamy potatoes and the sweetness of carrots serve it with a slice
