[Music] welcome to the poor man's gourmet kitchen where we share gourmet recipes and a low-budget wonder now check this out here I've got a hot pan and add a little bit of olive oil get that swirled around a bit nice even coat across the bottom then I'm gonna go ahead and add an entire chopped onion to the pan I've never been a fan to adding raw onion to meatloaf so we're gonna saute this a bit get some color and that will contribute to the flavor as well now in a large bowl I've got some hamburger and I'm gonna add some pork sausage or making meatloaf not beef loaf and once those onions get some color and a just like this we're gonna go ahead and add that right over the top another thing I'm not a fan of is ketchup in meatloaf but we are gonna add a can of diced tomatoes we're also gonna need a binder so we're gonna add a couple eggs and some Italian seasoned breadcrumbs brown sugar will cut the acidity and the tomatoes cumin will just be awesome and coriander Mexican oregano is another one of my favorites and of course some fresh chopped garlic and let's go big with this recipe and add an entire package of original taco seasoning followed by some adobo sauce from a jar of chipotle peppers and last but not least Wurster Shire now you can get in there and mix it with your hands or you can use your second hand KitchenAid you don't need all this fancy equipment but it sure does help and you can just dump that right out and a cake pan or a cookie sheet whichever you prefer and just shape it to your liking it doesn't have to be perfect but I do prefer that it doesn't look like it fell off the truck or ran over by one you can marinate in the fridge overnight or take it straight to the grill now my grill is propane I've got three burners but I'm only using the front and I've got two specifically dialed in to hit 350 degrees so this is preheated to this temperature and I'm gonna run and direct heat on the meatloaf by placing it on the back two burners that aren't turned on so the heats coming from the front with no heat in the back but with the lid down it's gonna act like an oven you'll see I just lost 50 degrees demonstrating that for you it'll be back up in just a few minutes see I started cooking this at 6 o'clock we're now 622 that's practically the halfway point of my target time which is 45 minutes so we're gonna pop that lid open quickly spin this around so the heat hits both sides of that pan quickly close the lid as you can see here we didn't lose as much heat that time it'll be back up to 350 in no time but now we've hit that 45 minute point so we're gonna go ahead and flip this lid back open quickly remove the meatloaf and again close the lid now it's time for the glaze again I don't do ketchup but I'm gonna add poison sauce and you can find this in most grocery stores these days usually in the Asian or oriental section and it is good stuff I even put it in my meatballs now just at the meatloaf back to the grill only this time you're gonna crank up your heat to high but still only on that one burner and you're gonna hit around 400 degrees I'm a little shy but that will help caramelize that layer over the top so you can see 15 minutes has gone by so let's go ahead and check on it I'm also gonna go ahead and skew it with the meat thermometer yep pork product in this thing so we need to make sure we hit the right temps 160 165 is target at 156 it's only going to take a few more minutes now once you're there you can go ahead and remove it from the grill but tell me how do you think it's looking so far you think you might try meatloaf on the grill sometime pretty easy and it's just as easy in an oven too if you don't have a grill same time same temps but just like a roast you want to let this rest for a good 20 minutes or so before you start carving into it at which point it should firm up a bit you should be up to ladle or spatula it out onto a cutting board now if you want to make a gravy do not throw out the drippings this is good stuff if you liked this video be sure to give me a thumbs up and subscribe to my channel now watch this slice like butter and perfectly cooked now let's get a slice for the plate [Music] just look at this cannot be denied now this is normally my theory have it money shot well let's go ahead and cut into this thing just look how moist and tender with slight pressure it just pulls apart but it doesn't fall apart and it holds its own on the fork that's perfect good no soggy bottom either and there you have it grilled meatloaf right here in the poor man's gourmet kitchen thank you for watching and be sure to stop by poor man's gourmet kitchen com for more recipes and exact ingredients [Music]
