hi everybody it's barb here today I'm going to make a deep dish apple pie now this is a recipe that my father's mother taught him and then he taught me and I have taught my children so we're going to try and make this year today what we're going to do is we're going to cut the apples and make the filling first so I've already cut up a bunch but I'm going to show you how I did it I'm using Cortland apples today you can use any kind of Apple as you have in your house just taste them to see how sweet they are if they're really sweet then you're not going to need as much sugar put in them if they're sour you're going to add a little bit more so everything depends on the taste but this recipe will work regardless now this year apple that I'm cutting now has a little bit of bruising on it that is fantastic because that gives it a little bit more sweetness so I'm gonna cut my Apple in four I'm going to core it okay make sure you get all of the hard stuff out of the center because you don't want to chew into that while you're having your pie each piece you should cut into about five slices as it goes in that way you're gonna have the same thickness for each piece my way it cooks evenly okay now I use cinnamon brown sugar and white sugar in this recipe the brown sugar is what gives it the deep-dish flavor and measuring cups so I've tasted these already they're not overly sweet so I am going to put in 1/3 of a cup of white sugar and 1/3 of a cup of brown sugar I use the little bear in my brown sugar which helps to keep it soft and buy them in any of the stores you put it in water to soak it first and then you dry it off and put it in your brown sugar I'll keep it nice and soft so I'm going to give this a stir and we're going to see how that coats because I do a lot of apples in this one and that's not enough I want more brown sugar in there so I am going to add say another third of a cup of the brown sugar it's a half a third of a cup of white I'm also going to take some cinnamon if you don't like cinnamon you don't have to put it in but it does give it a big flavor I'm putting in a teaspoon kind of stir that up again now this will make the pie juicy and you do want it juicy but you don't want it to run so in order for it not to run you're going to put in a couple of tablespoons of white flour and that will thicken the sauce and your pie shouldn't all over okay so we're going to mix this up well and this is going to be a personal preference that the amount of cinnamon that I put in there was plenty but in my house we like it a little stronger so I'm going to add a little more and you can make that decision yourself so they're all coated now so we're going to set that aside and we're now going to make the crust this is a very simple recipe I don't use machines and prefer to use my hands just because I can feel the texture Crisco makes these great packages where it's 1 cup of shortening in each one of these packages which is exactly what you need put the shortening in take our 4 and we're just going to flatten it out spread it around the bottom of the bowl and that's it I'm now going to add 2 cups of flour 1/2 that's it for that I'm using Robin Hood and it's just the all-purpose flour you can buy pastry flowers and everything else but I don't see any reason to go out and buy special flour just for this I have been making these pies forever and I once had a lady say to me could you mass-produce these I'd like to sell them I decided not to just because I had two small children at the time I just put in 1/2 of a teaspoon of salt onto the flour I'm now going to mix this with the shortening the idea with the dough is you're not you don't want to over mix this so I'm just going to get it so it's incorporated into the flour just a little bit because the main part will be done when I add the water so you now need 1/4 cup of ice-cold water so I have water in the fridge and it's cold whoops so I'm now just going to sprinkle it around I'm going to mix it a little bit with the fork now you're gonna see that it's not coming together the way that you think it should but it is I used my hands I'm gonna take my hands and I'm gonna just squeeze it that's all you have to do here and it will all come together now I make this ahead of time and you put it into the fridge you let it set it just because your hand is in here you're warming everything and you want this to be a little bit chilled for rolling purposes now wipe my hand off and I'm now going to form this in balls needs a little more squeezing there so you're gonna separate it in half because this makes two single pie crusts but we're going to need both of them for an apple pie one was on the bottom one is on the top so you're going to try and make them even it doesn't look like they're together but they are so I'm now going to take these two balls put my hands in short game a little hard and walk through our behavior so don't do it we tell all there is and we're now going to take some plastic wrap and wrap each one up individual now you want to put it the fridge for about half an hour I made some earlier I'm just going to push them down so I'm going to freeze these because I'm only making one pie today you put it the freezer when you want to use it you can just take it out wait for it to thaw roll out your dough and do the same thing that I'm doing just makes it a lot easier for you later on if you're wanting to make other ties so I'm going to put these two in the fridge and get the other two I was out shopping one day with my grandson and he likes to grab things off the shelves now I have been picking these guys for a long time he grabbed ahold of it's called a pastry cloth now I've never ever used one before and always had issues sometimes with the pie sticking underneath using this cloth it will not stick I absolutely unload this I'm going to put just a tiny bit more flour on it cuz you just roll it up and put it away when you're done using it so I'm rubbing it into the cloth I'm going to take out one of my freezer dough or my fridge dough's put it on the clock my rolling pin I'm gonna put flour on it and sprinkle it on the top so I'm now going to roll out my dough so you want to roll it it's a little hard because it was in the fridge you might want to let it set for five minutes or so that's perfectly fine there we go you gotta be careful not to rip it like I just did more flour because it's sticking and it's alright that it's on the dough itself I just gotta fix that I just pinched it together only out nicely now that it's warm and with this you just fold it over it doesn't stick and I have just a regular pie plate put your dough on it and you're going to flip it over mine seems to be a little crumbly I'm not supposed to do that so push it in this is the bottom of the pie and I'm now going to squeeze all around it if you need a little more room to get it up to the top just push it from the bottom taking off the extra pieces as I'm going around because I don't need them for later some people like to take that and cook it I'm not going to do that you can put it in the oven put some butter cinnamons sprinkle it down on it you can put a couple of apples in there if you'd like that a little work and make just a small tree poke some holes in the bottom just for the air to escape and I'm now going to add the filling so I'm going to give it another stir and at this point I'm going to taste it oh that's nice I taste a little bit of the sugar I can taste the cinnamon and I really get the flavor of the Apple mmm you don't have to put as many apples in as I did but we like it to be nice and full I did use six and I'm now going to kind of push them around in the dish I'm just going to arrange them you don't want to push it down because you want air to be in between that's my little grandson in the background you can't wait for the pie okay that part is done and now we're just gonna make the lid I'll set this aside get rid of the extra I don't put some more flour up just rub it in I have my oven preheated at 375 once I'm ready to cook the pie and I'm going to put it in I will turn it down to 350 I will cook it for 50 minutes and have a look at it it should at that point be a nice golden brown I always put a baking sheet under it because out the pies spit a lot now the fact that we put the flour in there will help to thicken it and stop it from spinning this doesn't want pepper with me today normally I don't have so many issues good for building muscles lips up like that I know you need more flour you need to make this big enough to go over the top of your pie and because I have a lot of apples in there I need to make it a little bigger than most people would looks like it's betting it up flip it over again put it on that crack in there is fine because you're gonna have air escaping anyway so I'm pinching up the sides yeah okay so we're going all the way around and pinching it together and I'm just brushing off the sides pinch these together here that's not my father always did this it takes a pinch up white sugar sprinkles it around we take the cinnamon and we'll sprinkle it over top as well really it's just for looks there's your pie I'm now going to place it in the oven and let her cook for 50 minutes let's read it another turn it down and it should be ready in 50 minutes thank you
