[Music] daddy got a new toy a sibling for the Green Egg let's check it out this is the 29 in gny Dome gas and Woodfired Pizza Oven for your pleasure now I've long done pizzas in the Green Egg The Challenge with that is you only get about 700 for 30 to 45 minutes and then you lose the flame and then you can't reignite it and so since I do a lot of pizzas I wanted something exclusive for pizzas and if there's one thing I can say after one month of use this thing is awesome bang bang nothing else to say having said that here are my thoughts about the features of the gney and how I use it let's talk about [Music] it with this Dome there are two ways to cook gas and Wood Fired why am I doing that I got the gas on behind me now when you read the owner's manual it says the first thing you do when you get this thing is season it using the gas at lower temps for 30 minutes to an hour that's mainly what I use it for is just to season the oven so every time I want to use this I turn on the gas let it sit for 30 minutes it gets up to about 500 and then I do the wood haven't used a lot of gas for the cooking part of it except for one big gigantic disaster we'll talk about that a little later now the main reason I wanted this is because it's Woodfired Woodfired pizza ovens are a crowd pleaser it's part of the show and the fans expect it and so when you have people over that's what they love they don't want to see gas they can see that over there on your propane gas grill where you cook burgers they want to see Wood Fired ovens and for that it's unbelievably awesome now one thing I didn't realize when I first got this is that there's a specific type of wood for woodf fired ovens namely Kil dried seasoned wood so when I first got it I went down to the locals farmers market and I was going to buy fireplace wood and thank God it wouldn't fit in there cuz I would have bought it except that wouldn't work that type of wood tends to spark and create a lot of Chaos in inside of the oven which will then land on top of your pizza and that's not what you want so first things first when you are going to get one of these ovens you need to buy pizza oven wood kill and dried type of wood now what I'm using currently is this o kill and dried wood I tried another type wasn't super happy with it it was inconsistent this one tends to be very consistent 6in length and thickness very consistent so I'm happy with that I have not bought the specific gy wood you can try that if you want but this one is a good option so just make sure you're buying wood when you're going to use the woodf fired oven now when it comes to Wood there's an art to this whole thing people talk a lot about temperatures I do it at 650 I do it at 850 900 1,000 there's this whole art to it I haven't perfected it I've done it at 650 700 850 I think that I like 850 or so because you tend to get very crisp on top and then also a nice bottom and it it turns out pretty good this is all to your taste these are things you're going to have to work out it takes a while to figure out the art of actually firing the [Music] wood now I mainly bought this oven for pizzas specifically there's a lot of talk on YouTube and online about all the different things you can cook I've done Pizza and it's freaking awesome when it comes to slow smoked pork butts or briskets I hear talk about doing it in here not my thing it looks like a gigantic pain in the ass I've got a green egg for that so really what I want to do is pizzas and bread I will definitely do bread now since I've had this thing for a month I've done all types of pizzas homemade pizza dough frozen pizza from the grocery store pre-made dough from the grocery store and take and bakes and the reality of it is they're all pretty effing good you heard that saying that no pizza sucks it's all just degrees of good and honestly they're all pretty good my favorite is the homemade stuff but I've made some pretty good stuff from the the store-bought dough can't complain um if I was going to have a large crowd of people where I had to have 10 or 12 Pizza doughs I would definitely do the store-bought stuff but when it comes to doing 3 to six I will definitely always do it homemade because it's light and crispy and just that's the one I like the most I mentioned earlier that I did try to use the gas to cook a pizza and that was a take and bake because I wasn't sure how it was going to work that was a freaking disaster if you've ever brought home a taken bake there's a little paper plate on the bottom and it's hard to get the dough off it so I was trying to get the pizza pill under there and it was a nightmare and it stretched out past the peel but yet I tried to jam it into the oven oh and it coiled up into a little ball and then I want to take a sledgehammer to the oven because it is infuriating when you put it into a little ball in the middle now that was my fault I've since learned how to do that you got to get two pills flip it over pull off the plate flip it back over and then slide it into the oven I will definitely do that next time but it was frustrating to learn that lesson [Music] the other thing I will do in this oven quite frequently is bread whether it's sourdough which I do a lot of or baguett I've done it once in this oven and it turned out pretty damn awesome the oven spring was unlike anything I've ever seen except that the temperatures fall pretty quickly so I didn't get that caramelized color on top which was kind of frustrating but I've read that you need to start at a higher temperature knowing that the temps will fall lesson learned so we'll see how that works out in the future but it was an unbelievable loaf here's what it looked [Music] like [Music] now when it comes to accessories here's the ones I have and here's my thoughts on those number one the large gny pizza pill absolutely essential it's metal you don't get much stickage on that thing it's got a long handle perfect for doing it my wood peel doesn't really fit into the opening and it tends to stick more on the wood than it does on that I would absolutely get that here's the smaller peel for rotating the pizza once it's inside of the oven it's got a slide handle that's so you can put it in and out of the oven this is absolutely essential you have to have one of these if you're going to do pizzas in the gy I immediately got the Shelf not knowing EX exactly why I would want it but it was available at the store so I got it here's what it looks like this fits into the front of the oven sits here in the front I'm 50/50 on this thing I think it's useful if you're going to do some pan fried cooking it gives you an extra 6 in of ledge to set stuff on if you're doing potatoes or other things inside of a cast iron skillet when you're doing pizzas or breads I don't really see the benefit I'm not sure moving forward how often I'm going to put it in it looks good as a shelf but I don't really know honestly what I need it for if I'm just going to do pizzas and bread kind of figure out what you want to cook and then make a choice accordingly I'm a bread guy so this Choice was easy this is the steam injector when you're for when you're cooking bread and also the door to keep the heat in when you're cooking bread those are Essentials for me because I will continuously do sourdough or baguettes and these are an absolute necessity for that purpose so those are the accessories I have that's my thoughts on those um like I said I'm a month in freaking love this thing had a few disasters had a decent amount of successes I'm all in on this the fans love it when you have people over fire up the wood oven for pizzas they're going to love it you'll be the hit of the party so I'm going to keep working on this thing do a lot more pizzas I'll report back in a little bit all right get out there do your thing if you're into pizzas freaking awesome [Music] cheers
