Paris France capital of the culinary world and the city where I spent my formative years as a chef having lived here for three years just so happy to be back in Paris the French are nation of meat lovers each eating an average of 90 kilos of the stuff every year a vegetarian restaurant in Paris in the heart of the Mary Juana Paris's premier neighborhoods for gastronomic delights Pickler Teatro a tiny vegetarian restaurant from my Scott Rachael McNally is struggling to survive it's nice to be your own boss if you like but it's also very stressful you know I think if the restaurant was doing well you didn't have all the dates that it had then I would probably have been a lot better millions of hungry Persians and tourists flock past everyday but only a few choosen to eat a pickle oh and those that do wish they hadn't since Rachel took over the business she's been losing nearly five and a half grand every month the debts are spiraling out of control and if things don't pick up she'll be closed in three months this is a first I spent three years working my butt off in a prison kitchen and I know just how tough it can be good to see you too now how does people Scott find herself a middle of Paris running a vegetarian restaurant heard a dump in Paris the French man originally I'm vegetarian Robson so I can remember so I was attracted to this restaurant I'm dying to get in the quicker I can get in the quicker and get out is minut Rachel runs the place with the help of a best friend Stephanie her only waitress you've been friends since four yeah amazing there are just two chefs Tommy chef Fiona only works three mornings a week Daniel is the head chef and resident philosopher my to do me Paula she's perfect yeah the sukhsayar pathology fair I make a move Bonjour Mon Ami who's that responsible Oh Mon feel accusing you see hopefully you'll agree oh thank you where's the kitchen Priscilla okay what dish was like to recommend for lunch yes absolutely delicious it's not on the menu at the moment this is normal yes welcome to the madhouse so we've got a pistachio nut walnut now Brazilian nut classic there's a couple here the other day who had just got engaged that D right in the origins of who missing they said it was the best they've ever had in their lives yeah so you might want to try I cannot believe inside here in the middle of Paris with my chef mr. G sebuah enjoyable Sean could see me now they would beat the crap outta me never to start the famous hummus salad topped with raisins and dried onions get off there I love hummus disgusting so how would you describe the food not particularly spectacularly exceptional is this girl for real next up terra gratin which if done properly should have a gorgeous bubbling cheese crust okay so that's the great on there yeah Appetit it's almost a bit of an insult it's and vegetto fine they don't mean but they deserve some form of respect in terms of cooking vegetables properly you got two minutes please yep time for this bunch of jokers to face the music the joking and the fun and the singing and all that crap that's fine when you've got a success the food was [ __ ] it wasn't nearly there it was a mess most of the customers that come here do actually leave satisfied and do enjoy the food okay I'm deeply concerned because I got to get him in the right frame of mind and standing out being a vegetarian roaster in the middle of Paris is a [ __ ] hard task okay thank you bad food and bad attitude this is gonna be tough there's a lot riding on piccolo succeeding Rachel's got a young son to support and her dad has invested at least fifty thousand pounds in the business [Music] she needs to spill the beans it's gonna take a lot of hard work to pull piccolo back from the brink seriously how bad you want to save the business of course I do is I don't have anything else here you know it's my illness my language piccolo clearly needs a massive shake-up but before I make any changes I need to see how Daniel runs the kitchen it's Saturday night but at 7:00 p.m. with the first table already seated Rachel seems agitated he's not really what's it been doing for Daniel's first order is for to garden salads well no one this shows is a voiceover video [Music] [Music] almost 20 minutes later he's still fiddling with the salads for the amputee participate see to play mahjong this is how it normally function every season but subbu Zettler don't see more focal oh oh it's multiple Yossi oh no I did it come away oh this is a joke I've never seen like this this Brazilian nut has lost his marbles it's burning right the pan here burning I'm trying to change the pan there are now eight people in the restaurant and barely anyone is getting served I mean I've seen some bad kitchens in my time but not quite as disorganized and [ __ ] chaotic as this Daniel is clearly hard to handle but Rachel is the boss right no I'm not alright really [ __ ] pissed off in three [ __ ] hours it could have made a [ __ ] disre - and he's [ __ ] doing it on purpose machine killing your business this is so sad you know it needs to get his [ __ ] act and go and he needs to do something because we're gonna [ __ ] fall like big time anyway I'm going to save my money on me we should wha the nerve agents betray Trista just cause I'm bald echo 2/3 large on safari galore Daniel's like a respect is disgusting get him out send him home and [ __ ] salvage something get some money in the till this is happening now last weekend as well we've asked nicely well it wasn't a very good experience the was entertaining dinner theater with the weights crashing around in the background our food wasn't very good and put it politely couscous was crunchy the tart was completely burnt to a crisp it looks like I have to take Daniel to the nuthouse myself [ __ ] shame outside you know you think I know [ __ ] let's start again we could not have continued with that we can't and I can't take him back now after that because that's just talking on experience completely disrespectful to me how much do we take crude 50 euros [ __ ] disaster it's you may have lost a chef but [ __ ] me you've got your restaurant back I spent three years working in Paris in my early twenties so coming back should have been a dream come true but last night vegetarian restaurant Pickler teatro hit rock bottom I called a crisis meeting with the remaining staff yes Santi how are you today good and you are the bureau can't work evenings so rachel is on the lookout for a new head chef in the meantime I'll need Stephanie to help out in the kitchen during service what I'm trying to say to you when you say how easy it is you'll be amazed I can help for a while we were cooking at this level doesn't have to be difficult any of us could do it I've only got four days to turn things around so there needs to be a big change in attitude around here I know it's nice to have a little sort of cozy restaurant the middle and I but we've got to start thinking about some form of discipline I think you Daniel is exceptional and just one thing it's very complicated working for a friend it's very complicated for her and it's very complicated for me friendship whatever so nothing to do with it it's a business first yes and the quicker we start getting our minds around to turning it into a business every else follows suit but before do anything yeah and I mean seriously before you do anything this place needs a good [ __ ] clean yeah Rachel opens for lunch at weekends but there's no way we can serve lunch today where do you start [Music] watch out there's a lasagna coming don't touch it it bites [Applause] [Music] this is food which garden was destroyed it was it had a wash I'll be perfectly fine you can see why don't you eat anything from the fridge it's got cinnamon in it it's a blessing in disguise that meat hasn't been cooked in this kitchen you know with hygiene standards this low they would have been weeding out the customers by the coffin load Rachel used to be the waitress here and what's crystal-clear is that she's still acting like one doctor take responsibility this is your money here ah rotten and fresh food store together none of this is safe to eat but oh no wait I start winning again now I've got to work out how on earth do you make a vegetarian restaurant in Paris successful fewer than 2% of the French population are vegetarian but 27 million tourists flock to Paris every year surely some of them are veggies are you a vegetarian I like meat have you ever been to a vegetarian restaurant no no no are you vegetarians know finding a vegetarian in Paris yeah it's like looking for a needle in a haystack are you vegetarians no why not because I like meat are you vegetarian yes I am vegetarian the only way Pickler will survive is by serving veggie food that even meat-eaters will love all the food comes out of a small kitchen it's time to get started on Piccolo's drop-dead delicious new menu until Rachel finds a new head chef I'm relying on part-time commie chef Fiona a [Music] rich spicy to bean chili should have the veggies and carnivores chomping at the bit there's also a very cheesy tomato and aubergine gratin to replace that tasteless slop Oh served yesterday vegetarian French chicken stew season things I know their food is bland in general but you can still seizing it yes [Music] [Laughter] viewers weren't a few extra hours today and is that sort of commitment this business needs 5:30 go pick up your daughter missing wanna bid on the karush this one very good day I'm happy stephanie has agreed to cook tonight but at 6 o'clock neither she nor Rachel are anywhere to be seen if they think I'm their new head chef they can go spin earlier Rachel might have to feed her pregnant cats Stephanie had to go sleep because she wasn't feeling very well and look one hour away from opening and there's not one [ __ ] in here by myself so yep if you're gonna open a restaurant [ __ ] don't plant it work at it no sign of steak here don't call oh yeah I'll give her a ring no kittens yet Rachel's up to her neck in debt the business is on its knees and yet it all seems a big joke to her I'm starting to feel like they're taking the mickey out of me I need to know you know are you seriously interested in turn this around I don't get the feeling and I just like what the [ __ ] am I doing here busting my ass off in your establishment to help turn this around he went home and you said this morning be back at 3:00 to give birth I had no choice and I had to have a shower I thought we're gonna be doing some stuff in the kitchen together so you didn't okay are we gonna get serious or because you know today I feel I'd rather [ __ ] off home that's how I feel because I don't feel any formal commitment I think is an incredibly admirable enterprise what you're doing I think let's get a little bit real that I'm not I just don't get I think you're fake I don't I don't get any [ __ ] not I'm not asking you what a real lay down a red carpet all kiss my arse I just I want commitment and I don't feel that that's all well you're not gonna get that you tell people they're a fake what you've just arrived yes and I'm just gonna leave I'm really committed to a talk but I'm not I just can't elders refused to be harassed and insulted insulted yes harassed and insulted [ __ ] me take a good look at yourself we're now down to one member of staff and I just don't know if she committed to saving her business I've had enough Rachel can sort out their staff crisis herself yeah Lord Ram's is gonna [ __ ] leave Matt panic trying to find somebody to work it was about 10 [ __ ] minutes to go so I just swim to the Scottish part when they said to come over here and one of the girls in there for somebody and I found somebody so just coming at ten minutes it's gonna be in the restaurant in ten minutes I think I'm just I've just been so many crisis's that I'm just dying to get sort of a stressed about it you know leaving Rachel alone is the best thing I could have done she's found a temporary waitress and has decided to go into the kitchen herself okay so I'm actually gonna be in the kitchen because normally my friend was supposed to be the kitchen but she's so I'm giving Rachel one last chance to prove she really wants to save this restaurant thankfully these new dishes are foolproof the Chili's ready to go and the gratins simply need heating Alice's the first of Pickler's new hearty dishes are already hitting the spot for minutes now for the main course was India coming to do some work a whole magic Rachel's dad has a financial stake in piccolo and has been looking for a new head chef and she's a chef so she's coming over tomorrow with my dad rachel has just been thrown a lifeline it started off as a disaster I felt a success after noon that I really wanted to get to [ __ ] out later bill mr. Powe no substance no commitment and two sort of disease playing at running restaurants so Stephanie [ __ ] off our attitude stinks and Rachel's finally woken up and glad she started to sweat because that's what it's like running a restaurant and if she really wants us to succeed then get used to working like this because it's a business phenomenal possibility of a great success here but it needs a commitment and that doesn't mean a commitment from a waitress and he's a commitment from a boss somebody's running the place so you know you proved tonight that you can do it so [ __ ] well done okay now things are finally looking up it's time to deal with one of Rachel's biggest mistakes not opening for weekday lunch [Music] hordes of hungry toys swarms to Mary looking for a quick cheap lunch and many head for the snack bar at the end of Rachael Street she should be working hard to grab a slice of the action but doesn't think it's worth it they opened at lunchtime for about a month and it was a complete waste of time really there's just nobody here there's no customers we had maybe two three sometimes paying someone in the kitchen someone in the saying event because you're doing start to make or so a lot of washing off let's go get some business I'll prove that by offering a quick good value lunch Rachel good earn some much-needed cash madam madam madam madam madam so do some better gawrsh see you all madam do some that to doís i gosh nice to see you all but I know this stubborn Scott will take some convincing so unbeknownst to her I'll be opening the restaurant for lunch myself always dreamt of having my own restaurant in Paris and finally it's here Xinhua a parry unfortunately it's a [ __ ] vegetarian restaurant so yeah soup on a roll it's a soups good I'll be back for dinner they've all sat down at the same time now I'm in the [ __ ] there's boasted by tomato soup with cheese on toast for a bargain price of 6 euros and you don't have to be veggie to enjoy that service [Music] bingo bingo Rachel better appreciate this I don't even work this hard in my own restaurant [Music] not opening for lunch from such a prime location is either madness or laziness this was fabulous for us terms of price 20 past - I feel like a pig in [ __ ] [ __ ] marvelous now all I've got to do is show Rachel what her laziness is costing her mommy oh I'm all right a bit tired that's fantastic I'm Katherine we got there's only two luckily we policy if someone opened my restaurant without telling me believe me I've noticed immediately good do you make this [ __ ] I did make this to get a better [ __ ] billion more you'll see the science I don't know what we've taken I'm not [ __ ] around by any means all that was on six euros a head I swear to God I am NOT [ __ ] around I swear to God they were standing up there and there's a queue and they were coming in and coming out I cooked and I served on with my jacket right - that's 430 clearly money talks seriously as an eye opener that it worked for 150 euros really it's really exciting we could do that every day then the whole business turn around just just from lunchtime alone I'm nearing the end of my week in Paris where I'm trying to say vegetarian restaurant piccolo Teatro and rescue a damsel in distress she does not have the support of all your family and different friends and you know quite often I will for my mom and my dad they don't in the fall you know it's been disaster after disaster [Music] but the cavalry has just strolled into town hearing of Rachel's crisis her father Brian who is invested in piccolo has flown in from Scotland bringing 23 year old chef India Brian nice to see you welcome I'm white pleased to see you I like Brian already and I need to bring him up to speed really secures what you're doing right I'll be more enthusiastic a little bit if there's money coming in what do you think long with the business well I think I bit more has to be put into a bit more commitment from Rachel I think I think her weaknesses are running a business just take charge okay I knew they'd be here for the next three months right thank God for Brian no all I hope is that India's got what it takes my work and my family first time abroad on my own and be very hard and but I'm sure I'll do I'll do get no pictures good fit [Music] I know Paris is an exciting place for a young chef I was the same age as India when I came to live here and there is 83 booths Rockette 20 meters squared flat soon my new it's amazing let's just sit there with the windows open I just have this amazing baguettes yeah cafe creme and just sit there and think about recipes ideas and then walk up and down the street go inside boulangerie patisserie and then come up with dessert ideas run back and started writing them down Paris is an inspiring City I want to start India off on the right foot by showing the incredible produce shall be using if she stays here - something sexy vibrant and pure indulgence while India fills the savory tart with a tasty herb goat cheese call me chef Fiona and I are making a very naughty chocolate mousse to fill the sweet ones that will give any French tart a run for his money don't worry about the calories okay Ronny doing a grand job vegetarian food is no longer boring lovely [Music] it's time to put piccolo on the gastronomic map of Paris to make sure no more commissars we've enlisted the help of a few of Paris's finest tarts if the enthusiasm of these punters is anything to go by it's gonna be busy for tonight's launch [Music] Piccolo's future looks so much rosier but it depends on whether india is ready to trade her settle life in Edinburgh for this head chefs job in Paris I've sponsor each oh yeah I'll take the position there's on the shoe that's great news it's nothing great or a start working hard on their own team as soon as you go away it bit or not no no keep up you've got to stand strong on that yep yep good you're 10 years younger than the owner but you're 10 years more mature and don't fall in love I want to make sure Brian's gonna keep the pressure on as I'm still worried about Rachel's attitude they're gonna have to seriously run it as a business and make money we're still every chance of doing I hope finally she's she gets the message but you need to make sure that she stays discipline on it that's one big ask from you well I still like this is try yep I can only do so much yeah anyone know yourself for anyone who meets me listen to nice can only do so much it's done to her thank you in just a few hours we're launching Pickler's new sexy budgetary menu and India's decided about one of our own dishes got cheese mixed salad in the duration is chive basil and olive well so we can do that as a starter nice wish I can taste all of the dishes on the new menu are indulgent rich and filling like this toffee apple tarte tatin so when we cut through the apples he's got this really nice dark caramel yeah and creamy pea and courgette cheese tart goat cheese darling little block like that as it comes to just mouse across there after all the disasters tonight's launch needs to mark a new beginning for piccolo and for Rachel you are the boss and what you say goes and they're all going to follow suit if they see you not giving a fig and you you know over relax and over comfortable everybody else does it and you've got such an amazing chance here as a boss yes and the pupils if anyone that's employing it's not gonna listen to me they're making a new menu new chef new attitude Rachel's talking the talk but opening time she's still not ready right I need some bread who's gonna get the bread [Music] this time I'll be fine Jill don't chill yep you're always choke on Rachel's also left it to the last minute to get an extra waitress she's gonna short out hmm her constant careless an unprofessional attitude is really depressing me and may we have a ticket for the desserts tonight please necessary no taking our food a toss of what their magic and the restaurant is filling up quickly [Music] Pickler's new menu is a million miles from the bland brown slop they were serving just a few days ago [Music] think with me two types of it okay okay we both think about them we don't forget them okay there's also a beautiful creamy chilled melon soup and India's beetroot salad is an instant hit [Music] what it was ready for and just four seven seven the only problem is the rather charmless service at least the food is keeping everyone happy make sure they save room for dessert the ashes are it beautiful the mushroom vegetarian cooking has changed rabbit food is out sexy indulgent vegetarian cuisine is in tonight proves that piccolo has the potential to be a success but I'm still very worried about the future I'm not 100% convinced that rachel has the right attitude to run a business and if his doesn't work and she doesn't make money in this place unfortunately she doesn't got yourself to blame okay I'm so far now making yours yes by the end of the night piccolo took a record-breaking 1,000 euros ten times more than the first night I arrived you're not the head waitress you're the boss okay yeah right okay keep your doing okay it's not I'll come back I'm on it I'd love to have my rest in Paris you know that good luck see you soon yes everything about the restaurant is I think that's gonna change thanks to us experience there's just one last thing I've been dying to do before I leave Paris - Jude I'm back in Paris and there's bad news [Music] piccolo Teatro has closed for good when I left six weeks ago the place had huge potential a great new menu and a talented young chef in the kitchen I want to know why it all went so wrong [Music] and the first person I've arranged to meet is India nice to see what a shame that we're meeting here yeah I hope you'd be back in the Maui seen you in the kitchen damn what happened you have to go home pick up your stuff acceptance and right back in Paris it was a shambles complete shambles there's a mess or as flies mace but when when you came back yeah but where was Rachel - it was mean our Father we opened up and we done a lunch service and up with answer yep just made a beautiful menu up I don't know your all your dishes and I added some more dishes on and we've done a great lunch service but then Brian just says nope that's it for the night well sure I'm so sad not to be here I love it so much yeah and I love the food yeah sushi Rachel's laziness has cost India her job I want to make sure her career doesn't suffer let's look at getting some work experience in London if she's not gonna you know take full advantage of your level excitement then [ __ ] it I will okay okay I just can't believe how irresponsible and selfish Rachel's been she's agreed to meet me today and I want to hear what she's got to say for herself she's me yeah where's Madame not coming oh come on surely she can face the music at least have a word I lost her I'm just asked to ask ridiculous tea minutes ago ah foods to come Godin I have no control over my daughter Rachel's immaturity is incredible Brian's been propping up her business for years and now that the mailed has hit the fan she's leading him to it I'm more sorry for you well these things happen gone we left with a setup well I didn't leave it in a in a [ __ ] condition home Rachel didn't try it I mean you know did no no from Mendes point of view ended little best he came over and frankly she didn't get her backup Hindi didn't get a backup something I felt well I probably didn't get her back up by herself I couldn't see it going on in an attempt to salvage something from the mess and recoup his investment Brian is selling the business what about the debt and your amazing guy you've bailed her out 40 minutes late Rachel decides to show her face they see how huh when India came back excited and motivated to come and support your business and she walked into a [ __ ] there was why the police was as it was when you leave you're lazy you put nothing into it and you deserve a kick up the [ __ ] ass Missy and I'm amazed I really am the point is that I have been stressed out and not enjoying the I've been stressed out and since I closed decided to cause I feel a big weight is lifted off my shoulders I'm sleeping for the first time in 3 years you had every possibility Rachele of making this successful I've made and I'm feeling really happy about it and it's fascinating to watch you in a very cocky way I'm not being cocky let's see your father's money and abuse it you're very lucky I had enough of your abuse I don't need this interrogation I don't need it sorry right here abuse I don't need it what I say God what I'm saying play now again thanks for coming in them questions close easily especially when the owners aren't committed 110 percent to put it back on track the only saving grace my weaker piccolo is that I discovered India I've offered her work experience and my London restaurant box would she be joining a brigade of a teen chefs led by head chef Stuart Gillis it's me young tenacious talented yeah and dying to learn and you love food that's a starting qualification for me love food there's no way I'm gonna let a talented young girl like India forget her dream I think she'll be at home and she can shine if Rachel can't spot the talent in India then I definitely can this girl's got a great you
