[Music] i'm making a traditional dish a filipino adobo i can smell the spice though there's some chicken thigh in a bag very this is very important some low sodium soy sauce always buy the low sodium oh always uh very inexpensive white vinegar hey okay the stuff you clean your silverware with jeff you know what all the all the top all the all the top silverware some brown sugar some black pepper a good amount of black pepper oh yeah that's a lot habanero habanero habanero okay and we're gonna mix this together massage it you went for it with that habanero by the way massage it and put it in the in the refrigerator i like overnight it really it gets better okay we're gonna take it out and we're gonna strain the manure we're gonna reserve the marinade we're gonna keep this it's a lot of flavor here then we're gonna take a beautiful dutch oven we're gonna sear it skin side down get a really good color you can see the color that's happening here it just looks fantastic all right there's just so much flavor so when they get nicely crusted we're gonna take them out put them on a dish and here what's happening here is the magic and we don't to lose the magic look at all that look at that crust in the bottom of the pan and you want to keep that spin on it you need it it was beautiful about that skin it creates like a flavor protector an insulator from there so to this this fat you keep here some onion some garlic a little salt and pepper not too much because we have the soy even though it's low sodium and we're gonna stir that just to pick up the flavor it doesn't have to get very brown because this is gonna simmer for about 30 minutes okay to this see that it's not really it's cooked i just gathered all that stuff i'm gonna do another gathering by deglazing with the marinade okay very important in filipino cooking with adobo is bay leaves two bay leaves which might seem like a lot it's very strong but you really need the flavor and just plain old-fashioned water no stock huh oh stock okay you're gonna put that chicken skin side up back in okay and we're gonna cook this oh i smell soy oh it's great no it's great it's great it's great yeah i'm totally making this okay you go i think you're gonna love this katie because it's so simple and you can make this and basically start to finish about 45 minutes and this don't forget this [Music] stuff but after you get this [Applause] i have rice warm white rice with no seasoning very important because it has all all the seasoning you need here right i want to see you react to the habanero hey the habanero is in there go oh yeah two thighs sometimes always have a few thighs a little that beautiful sauce on top that looks pretty darn good oh and you need that rice to soak up all the juices rice some parsley i was always served for me with lemon really really nice touch okay thank you oh slips right through can smell it [Music] perfect amount of spice in there you
