Family makes and eats a Smoked Watermelon (Reactions are great!!)

welcome back everyone to the two guys intercooler channel and today we got a special episode for you we begin a lot of requests to smoke a watermelon like they did at ducks eatery and so that's what we're gonna do in today's episode be sure to stick around to the end because my youngest son and daughter both try this thing as well as myself and my wife and it was kind of ridiculous the first thing we did is we peeled that watermelon and we went ahead and set it to the side I had some oak wood so I charged that up to make some oak ash and here's the profile that we used I particularly like this blend of spices the cinnamon the coriander the red pepper flakes I added a little more red pepper flakes that I normally would to make it a little bit spicier but I'm gonna post the recipe below so you could take a look at it and really when it comes to you know a cure for this watermelon it's really whatever you want the flavor that you add into it now is gonna come out a little more subtly later on but all I'm gonna do here is kind it up and as you can see there is this everything's now a powder and we're gonna go ahead and put that in a bowl with some hot water to dissolve everything and in the video if you've watched the ducks eatery they talked about adding wood ash oak ash to their spice blend that gives it that outer skin which is gonna help mimic like a country ham oven roasted ham and so that's what we're gonna do I'm gonna put it in a sous vide bag and now that my brine is chilled and it's ready to go I'm gonna go ahead and pour my brine in that Suvi bag now they didn't talk about doing this step so this is gonna be a little bit different I'm gonna compress this watermelon and compressing the watermelon is basically taking all the air out of the bag and in essence it changes the texture the color the flavor of the watermelon are basically any fruit that you do it with it's got a lot of air so once we do that we refrigerate it for three days three days have gone by and now I'm gonna go ahead and clean them off notice also did a pineapple and so all I'm doing is I'm rinsing it off and I'm putting it on a tray so that it can air dry so it's been in the fridge for three days in the brine I'm now removing it from the fridge cleaning off the spices and I'm gonna put it back in the fridge for one more day to air dry this is the same exact technique that we would use when doing like sausages or hands or anything prepared to smoke and now let's go ahead and give the smoke already I'm gonna use Applewood smoke for this particular smoke and I'm gonna just do a basically a low and slow I got my heat at about a hundred and thirty degrees I'm gonna smoke it for eight or nine hours and there it is eight or nine hours later and it definitely created a skin like outer structure for this particular fruit which is kind of interesting and now what we're gonna do is we're gonna go ahead and score it so that we can throw it on a cast-iron skillet and put a little bit of put a little bit of color to it and and add a couple other elements of flavor and so at this point all we're gonna do is put it in a cast iron skillet what I've done here is I put some balsamic vinegar a little bit of olive oil and I'm just gonna slowly reduce that down a little bit now they didn't talk about doing this in the recipe but I mean in the video but that's what we're doing and so we're kind of making our own I'm gonna go ahead and add that watermelon juice to that balsamic and olive oil and let that cook a tiny little bit also added a little bit of honey and then we're gonna put in some fresh rosemary that we picked from the garden and what I'm gonna do right here as this is reducing as this is heating up I'm just gonna baste that watermelon with that reduction sauce and so we're just notice I was adding a little bit of color it's definitely gonna add some flavor after a few minutes of doing that or so I'm gonna take it off the heat and I'm gonna add a little bit of flour to this reduce it a little bit more and make myself a watermelon gravy that's basically balsamic honey infused with that rosemary and we're gonna put it on that watermelon and so here we go this is what it looks like as I'm about to serve it up gravy on the Left we're gonna go ahead and cut this thing up look at that smoke dois look at the smoke rings on it you can definitely tell like in the outer inch of the watermelon where that smoke penetration happened okay now I want you guys to cut a piece off and taste it and tell me what you think [Music] this is really really like the spicy [Laughter] nothing like it just seemed like me yeah but way more juice it's like a really it's like a jelly filled with like it's just super crunchy it's crunchy and also like not clutched at the same time when your body is crunchy just watching your mouth it moves around my jelly and we well are you bite now is it fun after this you're gonna come out for steak Aidan would you pay $75 for a whole one of these probably not would you ever eat it again I would if I will we wouldn't need to use it's really high that's not really a nice label and it takes you by surprise let me give you the flavor the flavor power right now this is like the good old yes that seemed like watermelon it seemed like me follower please the sped up mouthful of smoke that's really high just it just it goes like jelly in your mouth and it's plenty does it remind you of me the only thing that reminds me of me in this is actually how I can't chew it off all right so this is this is it and I'm gonna put some gravy on there it actually smells really good just it smells very festive very seasonal Rebecca fall wow what a interesting texture just cutting it yeah do you have a knife let me see that knife please here we go oh that's a baby piece I mean a little baby it was hard to chew it I want to pee okay [Music] very juicy [Music] that actually is really crunchy it is [Laughter] yeah it's like did you say Apple it is kind of reminiscent of that that that crunch bamako juiciness mm-hmm really juicy that piece wasn't hard to chew it might he must mean these like so I think it's you as you go into the middle let's try with a middle section I don't know if I could eat more than just like a tiny slice of it oh the outsides to intent all right here we go I'm gonna go for right right in the very middle this is the this to be like the heart it doesn't remind me of me it seems like a weird watermelon does it remind you of watermelon [Music] I like the grave I don't know about that No so it is definitely strange weird I think that's $75 for smoked watermelon maybe a little crazy even in New York City but if you're in New York and you want to try it from the place that that invented it go to ducks and and you'll be able to get a $75 smoked watermelon I'm kind of sick of it yeah I feel like a slice or two okay so there you have it smoked watermelon it does look like me it does look like a roasted ham but outside of it being a novelty food and it may be the cure to veganism good point and actually I didn't even think about that here's my thoughts I like watermelon because it's refreshing yeah and it's crispy and it's cold and it's sweet and you sort of take all of those elements away when you do this too and so you definitely change it I'm just not sure in a good one yeah and they're in the wrong direction guys if you guys are curious honestly it's really easy to make a watermelon cost like five or six bucks and I'm gonna put my recipe here at the bottom on how we did it and if you have a smoker you know I wouldn't necessarily recommend you do it but if you're really curious give it a shot all right give it a thumbs up and be sure to
