You can add a little bit of water or, if you are going to add like those from a can, a little bit of the can's juice, you blend them and this way you get the puré and then you're going to finely chop an onion. Here it is important that you cut it very small and then you will use 1 or 2 garlic cloves and you will cut them very, very, very small if you want. You can macerate and it will be much easier to incorporate it into the preparation. Now you're going to use bacon, you're going to use three sheets of bacon or ham but remember that this is going to be optional. Now that my frying pan is preheated, what I'm going to do is to put the bacon, remember that if you are not using any type of bacon or ham in this preparation, which is valid, you can skip this process. While we left the bacon on the pan I'm going to cut a quarter of the paprika. I think that it gives a very delicious taste as well ss two branches, the greenest that you can have, from a scallion or a spring onion because that also will enhance the taste of the sauce that we are going to do. Once we have here the crackling well fried, our bacon, we're going to take it out and we will immediately incorporate the onion and garlic. I used 2 cloves of garlic because I like it very much, if you don't like it, you can use only one, you add it and you will mix it. We're going to wait for this to cook a bit, about 2 to 3 minutes. You are going to incorporate the paprika and the ham, Now we're going to let the paprika also begin to cook a little bit more and now while this happens, we are going to add all the condiments that we are going to put to it. I'll put a lot of pepper which I love, a a little bit of dry basil but if you have fresh basil, please add the fresh, incorporate very well and then you're going to put a little bit of salt once this time has passed and you have incorporated all these ingredients, you see that the paprika is a little bit more withered then it is the time to put the bacon that we have already fried. Initially we incorporated it so that it will have much more flavor and then you will incorporate all the mashed tomatoes, this is super simple, this recipe and it is super important that you mix very well and pay close attention to this sauce which is going to give you an exqisite and extraordinary taste to these eggs, then here we mix very well and then let's put a little bit of the spring onion that we had cut. We incorporate and wee continue mixing and now let's lower the heat to medium-low or even low and you're going to leave it from 5 to 7 minutes covered preferably. Once this time has passed, as you can see, the sauce changes its color, it has taken much more taste with all the ingredients as they have released their flavors and this sauce tastes unbelievable at this time. Now that it is so, what I'm going to do is to put it or to distribute it very well all over the frying pan and then I'm going to open 3 little holes inside the frying pan we are going to put the eggs with a little bit more of the chopped onion. And now we are going to put the eggs in the holes that we opened on the frying pan. If it is necessary you can open it a little bit more and then you're going to leave it. Simple like this, this recipe is made. The next step is at the discretion of each person and I like to add it a little bit of Parmesan cheese, I think it gives an extraordinary taste. If you want it, you can put it. If not, then don't put it. Then I put a little bit of salt in each part of the egg and now you're going to leave them at the term that you prefer. If you like them them soft then put a lid and leave them for about two minutes, if you like them drier, as to me, leave them from four to five minutes more or less.
