today's gonna be a very simple basics video we are talking about bone broth why it's good for you and how to make it at home [Music] it's absolutely crazy nowadays when you go to any health store how bone broth is marketed absolutely everywhere you find it in liquid form you find it in powdered form and it is absolutely expensive it is so pricey I can understand why because you know bones are used in so many preparations and kitchens so it's something that isn't high demand but it's something that you can also make at home quite easily we all know about stocks and broths and now we have bone broths when all these kind of terms are quite confusing because for me a bone broth I would actually call more of a bone stock because a broth the way I look at a broth is something that usually has water obviously some vegetables and more meat than it does bones and it's something that's used in soups and stuff like that the stock is something that is a bit more intense a bit more concentrated that uses more bones than anything else and maybe a little bit of meat and some aromatics and vegetables some spices and stuff that's used mostly in like sauces gravies you know wherever you want to use it in a lot of kitchens especially professional kitchens you'll find the use of stocks quite heavy because sauces are kind of like the basics of cooking in general so when this term bone broth came out it sounds really good and I think that's why people use it but I actually think it's more of a bone stock and the way people make it different is that this new bone broth as they're marketing it is mostly just bones and water and you're cooking it for a long period of time a broth is something you'll cook down for maybe 45 minutes to three hours a stock is something you can cook down from 6 to 8 hours and I feel like these bone broths that they're selling are being cooked for 10 to 12 hours to really bring out all the nutrients that are found in bones the process is quite simple you're going to start off with a bunch of chicken bones using some chicken feet and some chicken wings so I have some skins a little bit of meat attached to it and just lots and lots of bones if you want a clear milky broth a really important step is to parboil everything at first so basically you take all your trimmings you place that in a pot fill up with water bring it up to a boil let it boil for about five minutes once it's boiled strain out all the liquid bring out each piece of chicken individually and then clean that under running water so what you're doing here is basically removing the scum removing the coagulated blood in the cookin blood which would make your broth kind of like not as creamy and as milky as you'd want it to be so why is bone broth so healthy and why has it become the next big thing in health products it's very simple animal bones are filled with micro nutrients such as calcium magnesium and all the good things that your body needs the glucosamine found in between the cartilages and between the joints of the bones and the animal bones are actually really great also for your joint health once you've done that very simple the way I do it is I bring back all those bones and trimmings into a pot I fill that with water and put about 240 milliliters or rice wine or sake you can use vinegar and stuff also it really is up to you and I add absolutely nothing else I'm going to season it once I'm done and depending on the preparations I'm going to use with it that my friends has to cook down for about 10 to 12 hours make sure to keep an eye on it the last thing you want to do is to leave your house and let your fire running because that's very dangerous but you have to cook it down for that long to really draw out everything between the joints everything that's in the bones all that collagen and all those good nutrients it is so key and important and you can't put it in a pressure cooker and make this faster this is slow cooking at its most basic and finally marrow kind of like the superpower of all bones it's filled with zinc iron vitamin A vitamin k2 so all these micronutrients that your body really could use more of because we don't usually get enough of it in our daily diets and that's why we're all poppin vitamins like candy to try to supplement those [Music] once that's done 10 to 12 hours later you strain the whole thing so this is the next day so I basically transferred it from the stove onto an induction plate here simply because it was safer but obviously you were watching it to make sure nothing happened so make sure you just keep an eye on it if you're gonna be boiling for a long time this has been going on for 12 hours now and I'm about to show you the inside and you'll see that the liquid reduced by almost 1/2 which is what I think you want to aim for to losing half of that water that you initially put in all I'm gonna do now is strain everything so I've got some cheesecloth over here a strainer and then we're gonna go ahead and slowly pour the broth in once that's completely strained and free of any impurities then you're basically good to go at this point it actually doesn't taste like much it has a little bit of the sweetness from the rice wine but that's about it so what I'm gonna do now is basically just cover this and then put this in the fridge until it becomes very like gelatinous [Music] collagen is a word that's used in the beauty industry over and over again it's set to make your skin better your joints better and it makes you apparently younger these are all things that we know to it and this is why when you make a chicken broth like we're making today you're actually getting all that collagen from that chicken as it seeps out into the water and when you put it into the fridge you'll realize it becomes kind of like gelatinous and gelatin is known to actually be really good again for joint health moment of truth time to check on our broth so this was left in the fridge overnight so it is a terribly long process to make your own bone broth at home but trust me it's worth every kind of like effort you put into it because this is much cheaper than if you were to buy the jarred version or the powdered version so let's scoop out one area this should be perfect we gelatinize at this point I try to get a time-lapse of this in the fridge and it was absolutely terrible because the texture didn't change but obviously when you pull it out here it's completely different and that's exactly what we're looking for so again in terms of all the ingredients all that gelatin just came from what's good break just the chicken bones the fat and everything that was in there so how do you use this broth honestly you can put in a pot just cook it down until it gets liquid again add a bit of seasoning remember we only added some rice wine to this and nothing else so here I'm gonna make like a little soup that I like to do at home so I got some peanut oil and I'm gonna go ahead and Brown some shitake mushrooms I have some noodles that I'm boiling also they're pretty much ready all this should make a lot of sense to a lot of people because what do you do when you're sick at country in the world has their own form of chicken soup and the reason why is because you're getting a lot of water and usually a lot of times when you're sick you're dehydrated you really need that quick hydration but also because you're getting all those nutrients from the chicken bones that are made into that stock or into that broth that was used for that chicken noodle soup everything I'm saying right now may sound new to you but it's something you've been doing for a long long time already just a little bit of color on the shiitakes the season these would pepper after two minutes these are absolutely beautiful keep that to the side we're then gonna take our chicken broth automatically you see it becomes liquid right away it's a really really quick process to that I'm gonna add our noodles some coconut milk some good fats if you don't want to have it in soup you actually don't have to you can actually just drink this in a cup or really fill you up trust me some fish sauce this is basically the only seasoning we'll be adding wait for that to get nice and high so if you're overweight or trying to lose fat if you were to drink a cup or two of broth before any meal you'll find that you won't be as hungry anymore and you'll consume less calories but you're gonna be getting so much more nutrients in exchange as well let me taste it that's gorgeous that flavor that chicken flavor is so deep live and more fish sauce all that gets transferred into a bowl and all we gotta do now is top it with some aromatics this gets topped off with our shiitake mushrooms you can place them a little bit everywhere some lime segments some fresh basil some fresh dill this is like a really kind of healthy hearty soup really good for your body just low in calories and absolutely filling finally some coriander some flat leaf parsley it's really up to you and you've got this beautiful bowl of just simple goodness all your hard work comes down to this [Applause] [Music] this to me is what cooking is all about just simple and fresh ingredients good for the soul and good for the body this broth is something else seriously mixed in with that coconut milk just makes it really extremely creamy its fatty without being overpowering Li fatty let's try it with the noodles just so fresh and that hit and lime that little acidity that you add to the end is kind of like that that missing note that you were craving for and it really does help complement the whole dish there you have it so if you want to make your bone Brocklin home I highly suggest you do this is
