Hey guys, this is me the
Bombay Chef Varun Inamdar, And welcome to 'Get Curried'. Well today's recipe is an absolute
wonderful recipe, This is a chicken starter. The flavours of which literally
blow your mind. And the name rightly is
'Chicken Dynamite'. Let's begin. I'm going to divide this
recipe in four parts. Well this classically just to
make you understand... ...is a fried Chicken Nugget. Which eventually get enveloped
in a sauce... ...which is made with Mayonnaise,
something spicy something sweet. It's a combination of all of that. And eventually, it is served in literally
a glass bowl with some Lettuce. Now, if you get everything right... It's going to be fantastic. And all you need to is follow
this recipe to the T. The first step is marinating
the chicken. For which, I'm going to use
Chicken breast boneless, Cut into thick slices. To this, I'm going to add in
a Whole Egg. Followed by paste of Garlic. Again, I personally like using
light Soy Sauce, Because I like more flavour in this
than the colour of the Soy. To make it nice and spicy,
I'm going to add in Red Chilli Powder. Again the sauce also has
Chilli Powder and Chilli sauce both. So, you can use it with caution. Dried Oregano. Or Oregano, depending on
which part of the world you are in. And salt as required. Mix all of this well. And this need to be kept aside
for at least 15 minutes. While the chicken is getting marinated, Let's move on to making
this chilled sauce. And that is actually a
Mayonnaise-based sauce. So the first thing that goes in
a large bowl is Mayonnaise. Now you can choose, Veg Mayonnaise
which is made up of Soy Milk. Or you can use Mayonnaise
which is made of Egg. Choice is again completely yours. To this, to sweeten it of course,
I'm going to add in Tomato Ketchup. Well by any chance, if you do
not have Tomato Ketchup at home, All you can add is Tomato Paste. Now Tomato paste is very simple, You take tomatoes,
you run them in a blender, You cook them lightly
and add it to this. And along with that, you need
to add either powdered sugar or honey. Remember that. To spike this, I'm going to add in
Chilli paste or Chilli Sauce, Again, whichever is available with you. In this case I'm using Chilli Sauce. Just to accentuate that a little,
I'm adding in a little bit of Chilli Powder. Remember I said, I am going
to add it a little later. So this is that. Well in case, you want to bring a
little smoky element to this recipe, You can add in smoke Paprika,
choice is again yours. And along with this
Black Pepper Powder. And a touch of Salt. Now salt in this recipe,
you need to be very careful about. Because Salt is in every component, It's there in the Mayonnaise,
it's there in the Ketchup, It's there in the Chilli sauce, It's also in the chicken which
is getting marinated. So very carefully. Give this a good mix. The sauce is done and ready. This goes straight in the refrigerator. And I'm also going to bring back
the chicken which is marinated. And a pot of oil. Let's give this one good mix. And let's add in
2 very critical ingredients. The first one is refined flour. This one is to get that
binding in place, Because like I said, we're literally
making a fritter out of this. And to make it nice and crisp, I'm
going to add in Corn Starch or Corn Flour. And while I'm doing all of this,
you would have realized, The oil is also heating up in a Kadhai. Let's mix this well. Once the corn flour and the
refined flour is added, Do not wait for anybody or anything, Because the next step is
to fry this directly. Let's lower the flame lightly. And add in these Nuggets of Chicken. Once these nuggets go in oil,
we increase the flame. And allow this to cook till its nice,
crisp and golden brown in colour, And well cooked. Once these are fried and ready, These need to be drawn out of the oil. And transferred on an
absorbent tissue paper. The Chicken Nuggets are
fried and ready. Let's transfer these in a bowl. And along with this,
let's add in our chilled sauce. Let's mix this well. The next step is to transfer these
in these chilled lettuce cups. Now imagine this recipe, Chilled Lettuce cups, hot nuggets of
chicken and a chilled sauce, Bursting with flavours in your mouth. Dynamite for sure. So that's the first cup. You add a little bit of these
spring Greens. And start assembling this
entire platter. With this our platter of
