[Music] hey what's up y'all this Charlie on today's episode I'm going to be showing you how to make my delicious Dutch chocolate and vanilla pound cake from scratch now this recipe combines the chocolate cake which is made with Dutch processed cocoa and a homemade vanilla cake in one once the cake is made we assemble it and add it into a bunp pan and bake it to Perfection after the cake is baked we top it with a chocolate and vanilla icing this recipe you can get about 18 to 20 or possible more servings depending on how you slice it it's absolutely delicious so without further Ado let's get started all right here's all you need to make your Dutch chocolate and vanilla pound cake let's get started with our ingredients you'll need some allpurpose flour you can also use cake flour as well sugar salt baking powder now this is where the cake gets its name we're going to be using some Hershey's unsweetened cocoa powder special dog version which is a Dutch processed cocoa and you will also need some instant decaf coffee unsalted butter at room temperature G eggs at room temperature whole milk at room temperature sour cream at room temperature vanilla extract butter extract chocolate extract well dark chocolate extract and lastly you will need some confectioner sugar and for your tools you will need some Baker's Joy non-stick baking spre and to bake your cake you will need a Nordic wear anniversary bunt pan now this is a 15 cup in capacity bunt pan and there we have it all right let's get straight to it so in this medium siiz bowl with a mesh strainer you can also use a cake sifter as well add 3 cups of allpurpose flour or cake flour 2 tpoon of baking powder and 1/4 teaspoon of salt sift all the ingredients into this mediumsized bowl stir all your ingredients together okay let's get started with our wet ingredients so in a separate mediumsized Bowl add 2/3 cup of whole milk at room temperature 2/3 cup of sour cream at room temperature 2 tpoon of vanilla extract and a half a teaspoon of butter extract I'm going to take my whisk and stir all the ingredients together until combined all right let's get started with the preparation of our cake batter so in our stand mixer Bowl fit it with a paddle attachment you can also use a hand mixer as well add three sticks of unsalted butter at room temperature and 3 cups of sugar start your mixer on a medium low speed just to get that butter and sugar Incorporated turn your mix up to the highest setting and mix this on high speed for 6 minutes at some point during those 6 minutes go ahead and stop your mixer and scrape down the sides of your bowl continue mixing that in all right scrape down the sides of your bow start your mixer on a medium speed and add five large eggs in at room temperature one at a time all right scrape down the sides of your bowl now I'm going to alternate the allpurpose flour or cake flour mixture and the vanilla cream mixture into the batter add the first amount of the allpurpose flour or cake flour mixture and the first amount of the vanilla cream mixture mix this on a medium low speed for about 15 to 20 seconds or until combined all right scrape down the sides of your bowl add the second amount of the allpurpose flour or cake flour mixture and the second amount of the vanilla cream mixture mix this on a medium low speed for about 15 to 20 seconds or until combined all right scrape down the sides of your bowl add the third amount of the allpurpose flour or cake flour mixture and the third amount of the vanilla cream mixture mix this on a medium low speed for about 15 to 20 seconds or until combined all right scrape down the sides of your bowl okay let's get started with dividing and flavoring our cake batters as you can see here I've divided the cake batter into two separate Bowls the weight of each cake batter is 2 lb each now if you cannot weigh a batter just divide the batter into two separate bowls as best as you can now the bowl to my right Bowl one is going to be for the chocolate cake batter and Bowl two to my left is going going to be for the vanilla cake batter so let's get started with Bowl One the chocolate cake batter all right so in the small glass bowl I've added 1 tbspoon of hot water and to that I'm going to add a half a teaspoon of instant decaf coffee and 1 teaspoon of the chocolate extract stir all your ingredients together and from there I'm going to add it into the cake batter next I'm going to add two to three tablespoons of the Hershey's unsweetened cocoa powder special dark version I'm going to take a whisk and stir all the ingredients together until combined and that is it for Bowl one now for Bowl two next I'm going to add one teaspoon of vanilla extract I'm going to take my spatula and give this a quick stir and from there our chocolate and vanilla cake batters are now ready spray your bunt pan with the baker's Joy non-stick baking spre all right now I'm going to go ahead and pre my oven to 325° add your prepared cake batter we're going to start with adding Bowl One the chocolate cake batter into the bun pan now you can switch it up you can add Bowl to the vanilla cake batter first if you like I'm going to take a spatula and spread the cake batter around the bunt pan as evenly as possible next I'm going to shake the baking pan to make the batter more even and tap the bottom of the baking pan with my hand carefully pour Bowl two which is the vanilla cake batter you're going to carefully add that on top of the chocolate cake batter next I'm going to take a spatula and I'm just going to spread the vanilla cake batter around my bunt pan as evenly as possible and to make the batter more even I'm going to gently Shake My Pan and tap the bottom of my bunt pan with my hand now it is ready to be baked place this into a preheated 325° oven I'm going to place my pan one rack above the bottom rack bake this for 1 hour and 10 minutes all right it's been about 1 hour and 10 minutes now for our cake let's remove the cake out of the oven topick inserted into the cake should come out clean let this cool for about 3 to 4 hours before removing it out of the pan all right the cake has cooled now here I have a little pizza pan I'm just going to flip the cake over onto the pan and voila all right let's get started with making our chocolate and vanilla icing so in this small bowl I've added 1 and 1/4 cups of confectioner sugar and to that I'm going to add two and 1/2 tablespoons of warm whole milk now of course the half a table spoon is 1 teaspoon plus a half a teaspoon 3 tblspoon of melted unsalted butter a half a teaspoon of vanilla extract 1/4 teaspoon of butter extract and here I have just a little sprinkle of salt I'm going to add that in there as well I'm going to take my whisk and stir all the ingredients together until that icing is creamy and smooth with no visible lumps next I'm going to take my icing and I'm going to pour it on half of the bun cake now as you can see how I reserve some of some of the icing so I'm going set this on the side and we're going to begin the chocolate icing now add 1/4 teaspoon of unsweetened cocoa powder special dark version and 1/4 teaspoon of our dark chocolate extract going to take a spatula and stir all the ingredients together until combined next you're going to take your chocolate icing and pour it on the other half of the cake let this set for about 15 to 30 minutes and after that the cake is ready to be served and there you have it ladies and gentlemen Dutch chocolate and vanilla pound cake made
