[Music] hello everybody this is Chris Sussman otherwise known as the BBQ Buddha and today we're talking about double smoked ham with a bourbon glaze this is an awesome recipe that I'm going to share with you I'm doing it right before Easter time so you got a chance to plan your Easter meal but this is also a great holiday meal for any time we are doing a bourbon glaze because I live in Kentucky I love a good stiff bourbon and we are gonna pour that all over this wonderful ham now the great thing about smoking a ham is this is they're too cooked so really what we're doing is warming it up we're adding a little bit of smoked flavor from the big green egg as we bring this up to temperature that's why it's called a double smoked ham this happens to be a curb butoh ham from Snake River farms Kerr butoh is to pork what why do is to beef some of the most decadent delicious and fatty pork you will have on the market but if you don't have a curb root Oh Snake River farms ham any spiral ham will do what we're talking about here is technique and follow along to get yourself to the promised land all right we have this beautiful curb butoh ham out of the packaging right now you can take a big slice off of this and take a bite and you'd be happy it's just like perfect ham for your sandwiches but we're not making sandwiches we're making a holiday meal and apply a just a teeny bit of a yellow mustard slab because the glaze is gonna have so much sugar in it and it will be caramelizing as you cook I don't want to burn the outside I don't want to give it an acrid flavor so I'm going to use the BBQ Buddha pork rub [Music] we're going to set the hand to the side now I've got my roasting pan and I'm going to put 3 cups of apple juice in the bottom of the roasting pan this will act as a drip pan that'll catch the drippings from the pork as it comes off because the pork is very fatty and as it slowly roast the fat will render and drip into that pan you want to catch that so you can add some flavour back into the pork later with a base or a braise or simply just use this as pan drippings to make a gravy of some sorts but it also is going to act as a steam element we're gonna cover the hand halfway through the cook and we're gonna let that apple juice steam the ham and get it a little bit more flavorful and aromatic another thing that I'm going to do is I'm gonna add in another aromatic I'm just gonna chop an onion later and place that into the app juice in the bottle [Music] and you're gonna have all of this flavor come together and steam back on to the ham itself I'm going to put the rack inside here take this beautiful ham place the ham right on top let's go set up the big green egg get ready for the smoke get this baby on and then we'll glazier you're gonna have an awesome holiday meal stay tuned yes all right people this is the setup for the ham I'm going to use the egg genius to control the temperature and I also have another video on how I set this up the low and slow but I wanted to explain to you how I have the wood chunks distributed through the lump charcoal as you can see there's wood chunks towards the top but they're three total ones buried back there that one's sort of buried and that's half buried I like to just have a little kiss of that smoke flavor that burns slowly over a long cook like this [Music] the Hammonds been on for two hours we just wrapped it it's going for another hour and then final 30 minutes we're going to use this glaze this bourbon maple glaze to cover that double smoked ham and bring it home to such deliciousness and awesome flavor that you will be the star of your holiday meal [Music] [Music] once this is mixed through we're going to bring this to a low boil then we're going to reduce the heat to a simmer and let it reduce down until it becomes a nice thick glaze of what they would put over the team [Music] [Music] [Music] all right everybody it's been three and a half hours that's right two hours unwrapped an hour wrapped then since the last time we spoke I finished the glaze and I started glazing the ham in the last 30 minutes were at 140 degrees it just came off the Big Green Egg and what I'm gonna do is I'm just gonna pour a little bit of this glaze look at that oh the thick bourbon maple pineapple glaze all over this lovely ham it's got a wonderful smoky flavor I used Hickory for this cook it's got a beautiful bark look at that dark color this is a very beautiful centerpiece for your holiday table Easter is coming up but if you view this in the future this can take part of any holiday table there's bone right here in the middle so I'm gonna just do nice gentle slices right across the front [Music] double smoke glazed ham barbecue Buddhist style think I'll try a
