[Music] hi this is cooking up everyone knows this very famous taiwanese restaurant called thing tai phong and they are very famous if they are egg fried rice so today i'm going to show you how i can i will try to make my version of ding tai phongs egg fried racks okay it will not be exactly the same because i need to change it a little bit to cater to homeless style namely because we don't have that kind of skill we also don't have the kind of fire that they have in the kitchen okay now so so i will be giving you a few tips later uh first of all it is fried rice with a lot of eggy flavor and prawn so it's actually a sharon taofan it's actually a egg and prawn fried rice now let's talk a little bit on prawns i'm using a slightly bigger prawn today uh usually they won't use this size but this is i so happen to have this so i'm using this so what i do is i you have to peel off the head and the shelf and also the the tail the so basically you're peeling off all the just take out all the meat and the next thing you do is to devein it so you cut use a knife to kind the middle here to clean the uh the wind now there's one thing to take note here did you see this the green color one you will only see this usually in a slightly larger prawn you won't see if you are using the smaller one if you are using the smaller one then only you are going the only thing you are going to see is this part this thing this thing this is actually the vein that you want to remove which is the black color but do not remove the green powder part green color this one will be the egg okay so after it is good actually it will actually become yellow color so you will only see this in the bigger prawns so if you are a normal medium prawn all you need just to devein a bigger prone you may want to devein but keep the the a a prone a um for smaller prawns sometimes i don't even bother to debate because it's just very small okay so and don't throw away the prawn shell keep it you can actually you can put in the fridge uh freezer freeze it up and you can use it to make prawn broth all right so uh and then of course we have some jasmine rice here of course in taiwan they are using the short grain in malaysia we use long grain long green is actually easier to stir fry if you really ask me and because it's not as sticky as the short grain rice but there is certain techniques that we can even make it even easier for us to stir fry in the wok later which is to add some seasoned oil into it i'm going to add some garlic oil but this is totally optional if you really don't have it it's okay apa always got homemade garlic oil and onion oil at home so what we're going to do is i'm going to add the garlic oil inside into the rice and mix it well okay this will going to help with the cooking process later and you are going to need some spring onion chopped and to make it even more fragrant i'll be adding some fried garlic towards the end remember to click subscribe and notification button for more our buzz video so first thing first i'm going to add about approximately a one tablespoon of fried garlic oil and mix it up so once there are actually two purpose to this uh the first is later the the rice can actually become easier for you to stir-fry number two you have actually pre-flavored the rice with garlic so the garlic the rice now even before stir frying is already infused with nice garlic flavor you can also use henna alright about 1 tbsp slightly more also can [Music] right second tip to do this fried rice choose a wok that is non-stick it can be a non-stick wok like this like what i'm using right now or a seasoned wok which is already becoming non-stick okay so there is a reason why i'm going to show you shortly so we are going to put a good amount of oil here because we are going to start with making the fried egg good amount of oil later the oil is going to soak up all the egg actually i'm sorry the egg is going to soak up all the oil let it heat up a bit okay so always beat another tips always beat the egg into a bowl before don't beat the egg directly into the wok because sometimes it can have some bad eggs put the egg inside here you want to do this keep on doing this until it is like uh half cook see hit on doing this and then you want to put in the prawn and half of the spring onion fry it up then you can now put in the rice everything happened very fast wow it's already very fragrant because like i say i already pre-flavored the rice just now of course the um the what we call the the professional chef will now do a lot of flipping walk apart doesn't know how to flip my wok [Laughter] ah this is already super fragrant and you can see the the texture of the egg is exactly the same as the one you get from ting tai fong that's how they did it i just showed you just now okay a lot of oil and then i put put the egg [Music] inside and mix it keep on stirring stirring until it is half cooked okay basically the prawn will take about 3 3 or 4 minutes to cook wow super beautiful so now make sure the grain the rice grain is actually very uh individual okay they don't they don't crumb up together beautiful and golden color right now so right now i can actually put in some seasoning while we are well we want to put in the seasoning what we can do is off the fire first actually even the chef professional will also do this so that when we are putting in while we are putting in the seasoning it will not overcook or burn the dish so i'm going to put in some salt now one thing about salt is that try not to use try to use fine salt so that it can dissolve easily a little bit just a little bit of sugar and this is very important one round of light soya sauce at the side go at the side okay so that the fruit you can really bring out the fragrance now we can actually raise the heat again we have some fried garlic like i mentioned this is optional give me few more stories basically done actually my the prawn i'm using today is a bit larger so i have to stir fry a slightly longer uh if you're using a normal smaller prawn definitely this is actually the time when your fried rice is fully cooked oh my daughter is back from nursery alright basically done okay because of my thicker prawn i'm just going to let it simmer for a while while i off the heat but normal situation you don't need this step
