welcome to sift up recipes today we're making my favorite team Sun shrimp dumplings we call it hog out in Cantonese is one of the top ten must try things on dishes so let's get started first let's make the filling I got 10 ounces of shrink here we are peeled and deveined I'm going to use half of it first use your cleaver press it down to make it into sort of paste just like that then roughly minced it you can use a food processor to grind it but in this way the texture of the filling will come out better put this in a mixing bowl add an 8 ounces of ground pork cracking 1 egg egg will help to keep the filling moist 1 teaspoon of grated ginger 1 teaspoon of grated garlic 2 TSP of sesame oil 1 TSP of sugar 1 tablespoon of soy sauce 1/4 cup of water 1/2 teaspoon of salt turn on the mixer let around for about 5 minutes on medium high speed you can see that as the Machine spins the meat starts pulling away from the side of the bowl that means the protein in the meat are being developed which will make your filling turn out with a better texture personally I think this is an important step to create a juicy filling if you don't have a standard mixer you can also do this by your hand you just mixing within one direction for 8 to 10 minutes until you get a consistency like this now we can add the rest of the ingredient 1/2 cup of minced baby bamboo shoot' 1/2 cup of minced carrot and the other half of the shrimp mix it until well combined our filling is done put this in the fridge and we will move on to the dumpling skin for this recipe it is important to make the filling first because the dumpling wrapper needs to be super fresh we need 6 ounces of wheat starch not with flour they have totally different texture which starch is the key to make the beautiful transparent wrapper 1.5 ounces of corn starch 1/4 teaspoon of salt give that a mix and then slowly adding six point five ounces of hot water in batches as hot as possible in the same time use chopsticks to stir it try to mix it evenly then cover it with a plastic film immediately let it sit for five minutes five minutes later you can start kneading it usually there is some starch attached to the bowl you might want to scrape it off so it would be easier to work with it will take few minutes to make it into a smooth dough it's pure white looks very beautiful adding one teaspoon of vegetable oil and knead it until the oil is evenly mixed adding oil will help to keep the dough moist and make it pliable this dough is made from wheat starch so it is very easy to work with cover into four pieces we will work with one piece of no first and cover the rest with plastic film so they don't get dry shave it into long even piece you white this into small those make it into a bath shape and then flatten it roll it into a thin wrapper because it is a starch dough so it is not very stretchy and not easy to make it perfectly round it will be helpful to use a mode like this this size is about six centimeter across by the way it is a lot of work to make these transparent dumpling skins it is totally okay to use regular dumpling skins but it will look the friend and taste a little different too just be aware with that putting about 1 tbsp of filling make sure there is at least one piece of shrimp in it fold the wrapper in half pinch the middle to stick together start from one side to make fleet but then do the other side it is pretty easy and that looks lovely put it on top of a piece of carrot to prevent sticky now that the dumpling is freshly made put the steamer above boiling water steam it a high heat for 5 minutes and you're done normally in tin some Chi house shrimp dumpling doesn't come with any sauce which makes sense because nothing is better than enjoying the natural sweet fresh shrimp right but if you ask me for dipping sauce I do have 1 1 tbsp of soy sauce 1 TSP of black vinegar and 2 TSP of spicy chili oil yep that's it it goes perfect with dumplings hey so good I just love even things on if you watched my other videos you probably know that I already made a lot of things on recipes if you're interested I'll put a playlist link right there perhaps you can make a decent feast for your family one day as always the recipe is going to be in the description you can check that out if you like Chinese food subscribe to my channel and hit the notification bell so you don't miss any episode if you want to learn more about me or support me check out my patreon link right there and I'll see you next time bye
