foreign [Music] hi everybody today on Rachel cooks with love I'm going to show you how I make my delicious corn casserole now this is an old recipe that goes back in many years it's an oldie but a goodie and today I'm also going to share some ideas and tips on how you can make it your own let's get started so I've got all my ingredients ready to go I'm going to start out with my butter I have a whole stick of butter here and it's melted so I'm going to add my butter into this big bowl now you can use less butter if you want but it works best when you use a whole stick now I'm going to add one whole can of cream corn this is 14.5 ounces now if you don't have creamed corn you can just get your regular whole kernel corn and you can put it in the blender and you can just whip it up a little or you can put it into your food processor and pulse it two three times so you can have half and half now I'm going to add my can of whole kernel sweet corn this is 15.25 ounces now I have drained it you want to make sure that you drain it you don't want a lot of liquid in here now I'm going to add my egg now traditionally the recipe asks for two eggs but I don't like it very eggy so I'm only gonna add one but you can add two eggs try it out and see how that works for you I'm gonna give it a little beading like this and I'm gonna add it in here now I'm gonna add one cup of sour cream if you don't have sour cream you can add yogurt you can add mayonnaise and it works just fine but there's something about the flavor it just really works out really really well now I'm going to add some onions I have about a fourth of a cup of chopped green onions the green part and the white part and I'm going to add it in here you know you don't have to add green onions you can add yellow onions red onions or just not add any onions at all but I do like sweet and savory and I think that the onions in here with a sweet works out so well if you want a little heat in here you can finely dice a jalapeno you can put a little cayenne pepper you can use some red pepper flakes now I'm going to add half a teaspoon of sugar now I'm going to be adding some cheese and since I'm adding the onions I do want to you know kind of just balance it out a little bit so I find that just a little bit of sugar does really well in here now I'm going to add some pepper now we are going to be sharing this with someone who doesn't like any heat at all and I think that a lot of you know that we like a little kick today I'm only going to make it pretty simple with just the green onions and the cheese but you can take it from here let this be the foundation and then you can add whatever you like now I'm going to put in one small box of Jiffy corn muffin mix now if you don't have Jiffy corn muffin mix where you live because I'm sure some of you can say I can't find that in my stores that's fine then you can mix your own with cornmeal and a little flour and you know what you use to make regular cornbread you can use that just make sure that you have 8.5 ounces because that's how much this is just like that and then I'm going to mix it up really good you can make your own muffin mix but why would you want to do that when you can find these for about 50 cents or 75 cents just depends where you get it and it's just ready to go and that's what it's all about so now that I have it mixed really well I'm gonna get my dish ready I'm going to be using this dish right here and I'm going to spray it with some non-stick spray you can use butter you can rub butter in there if you want this is really easy and it works really well and that's good now when you prepare this recipe you want to use an eight by eight size dish this is not an eight by eight this is a seven by ten and it works just fine so as long as it's about an eight by eight so now I'm gonna pour my mixture in here I'm gonna put it into my oven that's preheated at 350 degrees for about 45 minutes I'm gonna take it out about 12 minutes before the 45 minutes and I'm gonna top it with some more onions and some cheese you can use any kind of cheese that you want you can use sharp cheddar you can use monterey jack mozzarella any kind of cheese that you like I think they're all good so I'm going to put it into the oven for about 45 minutes and then I'll see you then so I've got about 15 minutes to go until my time is up see how pretty that looks it's at this time that I'm gonna add my topper just gonna add them on top like this see and I've got my cheese right here and I think that's going to be perfect so now I'm going to put it into the oven for the remainder of the time so my corn casserole is ready now I gave it about six seven minutes to cool down a little bit I can already hold on to it you see that beautiful oh look at this oh see how pretty that is now it's time for the taste test thank you absolutely out of this world delicious it's real creamy I can pick up a little bit on the onions and the cheese and then the sweetness of the corn casserole this is a perfect side dish for Thanksgiving Christmas time or any time of the year so this is my delicious corn casserole if you like my video
