Covering a Cake: Chocolate Ganache Tutorial

hey y'all it's Robert and today at the sweet imp pack I'm going to be showing you all how to cover a cake with chocolate [Music] ganache I use ganache all the time whenever I'm covering a cake with fonding or modeling chocolate and there's a few tools that we'll need in order to do this so you're going to need some plastic wrap you're going to need a cake leveler this is really really important you need a cake comb an offset spatula and another cake board so the first thing we're going to do is cover this cake board with the plastic wrap [Music] we have our cakeboard now covered in the plastic wrap this is really important because we're going to place this on top of the ganach and this is what's going to prevent this from sticking so we can easily remove it but I'll show you that when we get there so the first thing that we're going to do is we have our choc ganache here this is a 3:1 ratio that I have and if you want to know a little more about this you can check out the video I made about how to make chocolate ganache and I go a little more in depth about how to actually make it and different ways that you can use it so I'm going to add this chocolate ganache right on top of this [Music] cake and I'm not going to add a lot we only need a just a decent layer on the very top now I'm taking that offset spatula and just going to go around the cake making a very even layer and it's really important to make sure that you use this turntable for you you don't have to go around the cake just spin it and it to even itself out okay so we have the top completely smooth and it's okay if there's anything that may be uneven right now because now this is the part where we add our cakeboard so we're going to place set on top now we're going to take our cake conb and we're going to make sure that we have this even all the way around so this is basically using this top cake board as a guide you can also use acrylic disc if you have them but I find that cake Combs are just as easy um and I I found them to be a lot easier to remove so once you have that even all the way around we're want to make sure that this is going to be level because if we're going to stack cakes on top of this we don't want to make sure that it's leaning so we take our cake leveler just going to place it on top and while this ganache is really soft we can push down on it to make sure that the cake is going to be even [Music] okay so I have that level now so now I can start adding the ganache on the sides of the cake I'm going to take a Piping Bag to do this so I'm just going to place that in a cup make it a lot easier for me to add the ganache to it [Music] okay we have our ganache in our Piping Bag now I'm just going to snip off the end of [Music] this and now I'm just going to add this around the cake I'm going to start right at the top first because I want to make sure that there won't be any gaps so just going to squeeze and spin the cake as I do this [Music] now that I have that I'm just going to Mo move down to the very bottom of the cake and do the same exact thing now I have the first layer of ganache added to the cake so I'm just going to take my cake conb going to push right against the guide which is our top board we also have another guide at the very bottom going to make sure that that's even and I'm just going going to go around the [Music] CATE okay so anywhere that I still see gaps I know that I need to fill in so I'm going to take the rest of my ganach and I'm just going to fill those gaps in and then smooth it out again [Music] I know have the cake out covered with the ganache and it's smooth on the sides but I do have the cake board that's a little dirty as well as the top so I'm just going to clean that up so I'm just going to take that offset spatula I'm just going to take out some of that excess this is really important because if it sets and you try to do this later you're kind of get a mess everywhere so it's best to do all of this now so the same thing with the cakeboard just going to take the cake cone going to go towards the cake and just pull away and that's going to help clean it [Music] up okay so the cakeboard is now all clean and I just have to wait for this ganache to set and you can let it sit at room temperature for about 30 minutes to an hour but I'm going to speed it up by putting it in the [Music] freezer a few moments later okay so this is this cake is now set so now I'm going to remove the cake board so with this plastic wrap I'm just going to peel up on the edges and pull it [Music] off and at this point if you realizes that it's getting stuck at all just take a knife and then run it right underneath the board to separate the ganach and that should allow it to easily peel up [Music] there we go and you see how it doesn't really stick to this at all and you can always take this off and reuse the cboard cuz it's clean okay so now the last thing we need to do is clean up the top because there are just a few little spaces in this cake that need to be filled so I'm just going to add a little more of the ganache that we have to fill that in clean it up and that'll be the cake complete okay so I'm just going to add some ganache right on the [Music] top and then take my offset spatula and then smooth that out and that'll fill in all the [Music] gaps all right so now I'm going to take a bench scraper I'm just going to gently place it on the side I just clean up any of the ganach that spilled over to the the sides of it then I'm just going to clean this off and then clean up the top of it so I'm just going to keep this flat and go around the [Music] cake okay so now I'm going to clean off the edges so taking my offset just going to start on the outside and pull in [Music] if you want the edges of this cake to be even sharper allow this cake to sit a little bit more then take a knife and go across the top of it and then I make a really sharp edge so here we have our complete ganach cake we have really smooth size and a level top and the more that you practice this the easier that it gets so I hope you all like this video and make sure that you subscribe multi-person Silling wrap what do I call that what is this called San wrap press wrap plastic wrap okay okay plastic okay this is really really important you're going to need a measuring tape because we sweet no I don't need this I don't need that so we're going to take this plastic wrap and cover this cake board and this is [Music] [Laughter] what's [Music] ah if you want to let if you want to let this no what am I trying to say so here we have our completed cake it's completely ganached we have really smooth sides in a in a flat in a even in a in a level top and it's pretty simple to do it may take you a little bit of practice but uh so so here sorry
