hi guys it's me Jordan and today I am cooking my favorite dish ever which is a prawn potato curry udon dong style first which is important some lovely plump medium-sized prawns potatoes scotch bonnet peppers onions garlic oil curry powder green seasoning salt cumin seeds fascinate your eyes coriander coconut milk okay so now I wanna start marinating my prawns they're ready deveined and he shelled now green seasoning is like a staple in the Caribbean kitchen a tablespoon of curry powder with prawns you can only just need 10 minutes because if you leave it longer with prawns they're gonna start cooking so we just want it to be nice and I'm now going to chop up my onions and garlic to be close I'm cooking for my good friend Nene and to be fair she's actually the worst person to cook for cuz she's very very standard and basic I don't even know she likes prawns but I love her my first memory of cooking is growing up in a Jamaican household spending a lot of time at my grandma's house and Sunday was always do chicken and rice and peas and a cup of tea because you have a cup of tea with everything and then it'll be like my grandma seasoning it okay I need a minute I'm not cranking my grandma crow caws the ideas I am just chopping up my potatoes on the same size so they can all cook evenly these are my favorite peppers in the world scotch bonnet peppers people are very scared of this pepper and now I'm gonna fry the cumin seeds I'm not really good with like tablespoons and all of that you just - it in when you've been cooking like since you're young you just kind of know the measurements without really knowing the measurements if that makes sense our cumin seeds the garlic this is where you're building up the flavors the scotch bonnet okay so next I'm gonna do now I was gonna take my potatoes and I'm gonna fling it in and I'm gonna just coat my potatoes so it's nice and coated so I'm gonna put a lid on it for 25 minutes in the meantime I'm gonna make my rice I think that was like 2 cups like free think so and I'm gonna rinse off my rice it's just about covering my hand I know that's enough water put this on and once the water has halfway evaporate if we're going to turn it down put the lid on and let that cook for about 15 15 minutes I check on the curry if it's a bit too watery I just mash down a bit of the potato so it thickens the curry all right so now we're gonna add the prawns into this as soon as I start seeing it turning color that's when I know it's done rice is done take it off the heat [Music] [Music] little bit more green in there we go improve hair laughs Chuck doesn't work but his fingers even someone says actually that they will expect it to be bad thank you [Music]
