hey friends how are you my name is christine and welcome to today's video and episode of vlogist i thought i would hang out with you for a second take a little drink with you my friends if you're new around here i am inching very very close to 40 every single day i am mom to four kids including two crazy teenagers i have one teenager that is driving right now so i'm pretty sure my wrinkle count on my face increases by five wrinkles every day and i have at least 20 new gray hairs pop up on my head as well not only that i am youtube besties with the amazing jen chapin who i am collaborating with on today's video once you are done checking out my video meals that we are doing from our pantry today basically these are meals created from things we found in our freezer in our refrigerators and our pantry that we didn't necessarily meal plan but we wanted to use some things up and this is what i came up with and when you're done with this video go check out jen's channel and you can see what homes this week and if you like what you see maybe consider subscribing hanging around a little bit more for just all around shenanigans tonight for dinner i got out one of my freezer meal lasagnas that i made a couple a couple of meal prep videos ago if i can find that i will put it down below for you and i cut up some of our sourdough bread and made really yummy toasted like butter soaked sourdough bread to go alongside our freezer melt today's freezer and fridge and blah blah clean out is going to be flat bread pizzas i'm a huge fan of pizza in general and i figured today we're just gonna do like a vegetarian style pizza so i had all these bell peppers and shallots in my fridge that i wanted to use up i chopped up all of the shallots and peppers and put them on a pan and i roasted those in the oven with salt and pepper and some like italian seasoning mostly because my kids don't like crunchy bell peppers on their pizza my eyes bye guys those shallots were so strong my eyes watered for what felt like 30 minutes here comes the oil and salt and pepper and some spices that i put on there i've been using this big chunky kosher salt in a bowl to season all of my food and and then i've also been using the pink himalayan salt which is way more salty than i'll get into that in a different video and if you want to make your flatbreads super super crispy just put them with a little bit of oil and put those in the oven as well and then i made a simple pizza sauce out of cream cheese some italian seasoning and tomato paste and water so when my flat breads came out of the oven after just being drizzled with olive oil and roasting for about five ten minutes i put on my cream cheese tomato paste water that sounds gross but it was really tasty onto my little flatbreads as the pizza crust and if you want to give a little kick some crushed red pepper flake is always a good choice i would recommend that all the time topped that with my bell pepper and shallot roasted vegetables and just a touch of mozzarella cheese on top and then back in the oven for five to ten minutes kind of depending on how crispy you like your bread and how dark you like your cheese i like my cheese a little on the dark side like kind of turning brown so that's what i prefer on mine this made eight i think flatbreads that i had just had in my freezer these were delicious i really enjoyed this dinner for our veggie side tonight i have garden veggies i have one zucchini and three full yellow squashes i just chopped them up i don't know into similar like half moons or quarters depending on how big they were i've got a little bit of oil and i'm trying out my alpine touch uh pepper blend with a little bit of pink himalayan salt this is gonna go in my airfryer for probably 10 to 15 minutes i do have a full video on airfryer veggies if you guys want to go check it out i'll leave that link down below for you so probably gonna hit i don't know like the broccoli button and i might have to go another five we'll just check it and see what it looks like i ended up having to cook these a lot longer than i thought like 25 minutes and they still don't look that brown probably because i over filled it my bad i kind of do that a lot i have some freezer meal chicken like barbecue freezer milk chicken that i had gotten from the company eating together if you guys want to check out their free one month meal plan i'll leave a link below for you so we're trying the meat masher to shred cooked chicken how's it going dave um i'm not sure not your fave maybe that'll be the right tool for the job all right well as soon as this is shredded we're gonna dump in some barbecue sauce aka sugar sauce and serve it on these honey oat and nuts toasted bread so we're gonna do like a shredded barbecue chicken sandwich with some zucchini and squash on the side and that is tonight's very very simple dinner i know it's not the best picture but it was really really yummy wow i look awful today it's another day and another dinner and today pulled this chili out of my freezer i i like to make really large batches of chili and then freeze the extras it makes such an easy dinner but instead of just like just doing chili i thought we'd do something a little different come with me come with me come with me it's a little too close look at this bowl of potatoes that really needs to be used okay a bowl of potatoes and they're trying to grow too i thought it would be so delicious to have chili cheese fries so the plan is to well take all those off give these a rinse probably peel them and throw them in my air fryer to make french fries i do need to thaw that a little bit heat it up pour it on top put a little cheese boom dinner i'm telling you sometimes the easiest meals are the most kid-friendly and most delicious here are my airfryer french fries and i put in a drizzle of the seasoned salt with a little bit of just vegetable oil and in they go and they do have a french fry button 380 for 25 minutes shake in the middle those freezer meals make an easy dinner sometimes i tell you what so this is me attempting again the barefoot contessa's blueberry muffins so they wouldn't sink in the middle so i went through and made sure my measurements were exact i mixed in my dry ingredients by hand so i didn't over mix baked them right away tweaked some of the leavening ingredients so there was a little bit more so they would rise nicely and guess what happened they still didn't rise very well they're very very flat and i did make a lemon glaze which made these muffins amazing tonight's pantry dinner is going to be one of my favorite easy go-to dinners it's because i always have hamburger in the freezer i have a couple of lone very sad carrots i had my random cabbage that showed up in my walmart grocery pickup i don't think i ordered plus green cabbage lasts forever in your refrigerator so yeah i've bought this and kept it for six weeks and it's been good a couple of green onions i want to use up we're gonna do my favorite korean rice bowls from damndelicious.net recipe down below the best thing about this dinner other than the fact that it's delicious is the hands-on time is 15 minutes and dinner's on the table so i've got my meat masher my new favorite tool to mash up my meat and garlic and i'm gonna do a cauliflower rice instead of rice rice but i did also make rice noodles so my kids could kind of pick if they wanted cauliflower rice or rice noodles i think most of them picked the rice noodles dave and i kind of did a combination of both here's the meat with the sauce mixed right in here is my cauliflower rice i just saute it in a pan with butter and salt and pepper until it's cooked and here is the completed dinner i did slice cucumber lime wedges sesame seeds and a ton of shredded carrots oh my gosh it was delicious next up i saw a recipe on alex gornicelli's instagram page so i follow her on instagram and she posts recipes sometimes of this lemony sweetened condensed milk pound cake and i'm like oh my gosh i'm pretty sure i have sweetened condensed milk in my pantry that's been there for years and i need to get rid of it i'm going to make this so i took a screenshot of the recipe sat down to mix it up on this evening so i got all of my ingredients out fortunately i had a bag of lemons that i also don't think i ordered in my walmart grocery pickup so i had to use those up and today i decided to use my kitchenaid which i am not an expert at at all i went very slowly on the measurements as to not mess them up after doing the blueberry muffin video uh like i'm more aware of being very exact in my measurements when i'm baking so if you guys haven't seen like the battle of the blueberry muffin i'll leave that video down below i creamed the butter and sugar together forever look how light and fluffy this is then i did the eggs one at a time please make sure you turn off your mixer before you add eggs because let me tell you what crunchy crunchy bread crunchy cheesecake yeah it's not really the best so i've got my eggs going in one at a time i feel like the mixing process of this took so long to do and there is my sweetened condensed milk that went in there i will say oh yeah by the way if you're new i don't measure my vanilla like ever i just don't think it's necessary if a little bit of vanilla is good more vanilla has to be better so here's what i'll say about poundcake i don't know if you guys are fans of pound cake or not but i'm generally not a pound cake lover it's too i don't know dense wet not sweet enough um too rich for me i don't know i don't really jive towards really really high fat foods and desserts in general they're just too much for me but dave loves pound cake so i thought he would really enjoy this and this does have a lemon glaze that goes on top however in the effort to clean out my refrigerator i had some leftover blueberries from the blueberry muffin battle some raspberries for my bushes outside and some frozen strawberries and so i decided to once again make my triple berry compote in the instant pot i do have a recipe for this down below isn't this beautiful it doesn't even take that much sugar honestly so you cook it in your instant pot for six minutes let it do a natural release for 10 minutes and then i add a water and cornstarch mixture and saute it like on the saute function oh look there's my smiley spoon violet and stir it until it gets really thick and bubbly which only takes a couple of minutes maybe two three minutes tops and then you're done so here is my completed pound cake and here is my lemon glaze it's just fresh lemon juice and powdered sugar spread that all over the top and let it kind of soak in um i don't know what it is about lemon glaze but i could have that stuff on anything and it would make it taste good i'm telling you i pulled it out of the pan sliced it up and put it on a pretty plate and then here's what happened when dave tasted it here is the completed pound cake with the lemon glaze and the triple berry compote i know it's not the prettiest i had a piece fall off so i decided to top it and take it to dave and see what he thought so let's go do a taste test oh are you serious for dinner i'm really you're gonna ruin your own dinner whatever you're gonna eat dinner just fine sweden condensed milk pound cake with a lemon glaze with a triple berry compote on top uh strawberries blueberries raspberries dude how's this okay it's almost like a cobbler okay does it not taste like pound cake it tastes like pound cake but it's the berries i put on that make it cuddly do i even have to have dinner you know you don't have to have dinner i'm not gonna make you eat dinner is it is it a keeper this is the last meal of this video and i had a couple of things hanging around i have these like panko bread crumbs for from one of those meal kits that i didn't end up using just hanging out in my pantry and i don't know why that one's half used like what is the matter with me an onion the never ending elbow macaroni noodles so my favorite sheep pan mac and cheese from damdalicious.net it's seriously one of my favorite websites for fresh new really delicious recipes so go check them out just in general because they're really yummy and also i did have this fresh parmesan that haley stored in these old i think they're hello fresh little glass jars they're actually the perfect little container to do sauces so the whole recipe is down below for you i have already mixed up my cheese sauce and i am pouring it onto the sheet pan which is going to go back into the oven under broil to kind of like give you that nice crispy crust on top oh my gosh it's life changing so i've made this sheep hand mac and cheese a lot it's kind of my go-to homemade mac and cheese now i feel like i get a little bit better at it every time like i tweak the seasonings a bit i know how much salt i need i know the right amount of cheese for the right amount of pasta like i can kind of feel the recipe because i've done it so many times and my kids definitely said this was the best one i have made yet like it just gets better every time so if you make it and it's bland or something your salt and pepper ratios are off here comes all of the panko bread crumbs so i was really happy to use those up and get those out of my pantry that was pretty exciting and you can serve this with anything you could do a side dish with a main meal you could serve it just as a lunch with some fruit for your kids it is so good and yes weirdly enough the leftovers do reheat really well in case you were you guys are still here there's no more recipes has it gotten awkward yet i do have a little surprise for you for those that stuck around to the end in the final final chit chat before i show it to you though have you hit the thumbs up button yet today on this video maybe give it a go uh one more time go check out jen's channel she's so awesome i don't know if if this comes across on her videos but she is incredibly intelligent and like wickedly funny her sense of humor is very sarcastic much like mine like i just find her very very funny i was watching one of her videos in bed last night i think dave was half asleep and she said something and he just like snorted and laughed out loud over something that she said so even even dave like even my husband thinks she's just like really funny we have look i don't know if this is gonna happen but there's a huge family reunion on dave's side of the family planned for 2021 summer 2021 in costa rica i've been looking through this book and trying to figure out like fun things to do what do you think about me signing all my kids up for surfing lessons i i think it would be so epic i mean it's gonna be epic anyway because it's gonna be like 35 people in costa rica like coordinating that many schedules is kind of nuts working on getting my kids passports like this week dave's parents graciously offered to pay for the lodging which is what is making it all possible at all that's the end of the video chit chat for today planning a trip to costa rica have you guys been there once again all the recipes are down below for you if i have them or videos that i've referenced where i've cooked the recipes before did that make any sense at all i don't even know why i'm talking to the camera it's it's the evening and like i'm the only one awake in the house but it's the only quiet time to film ever see you next
